CAJUN CRAB DIP
I was looking for a recipe similar to the dip we purchase at the grocery store. This is fairly close. Be careful your Cajun Seasoning is not too salty.

Steps:
- Mix cream cheese, sour cream, hot sauce, Worcestershire Sauce, Cajun Seasoning, garlic and Italian Seasoning in processor or with electric mixer.
- Gently fold in cheddar cheese, onions and crab.
- Refrigerate at least 2 hours and adjust seasonings as desired.
CAJUN CRAB SPREAD (USING IMITATION CRAB)
This is one of my favorite snacks. It can be served with crackers, or I like to eat it with the big corn chips (Scoops) or serve it in jumbo pasta shells. It's easily doubled if you want to use a whole brick of cream cheese and a pound of imitation crabmeat. This is fairly chunky; if you want it to be more spreadable, increase the amount of cream cheese/mayonnaise. Cook time is chill time.

- In a small mixing bowl, beat cream cheese, mayonnaise, paprika, black pepper, garlic powder and ground red pepper with an electric mixer on medium speed till well combined.
- Stir in the imitation crab, chopped tomato and green onions.
- Cover and chill for 3-24 hours.

Steps:
- In a saucepan, melt butter over medium heat; add in scallions, celery, bell pepper, and garlic; cook/stir until vegetables are just tender.
- Remove pan from heat; add 2 1/2 tablespoons mayonnaise, mustard, parsley, Worcestershire sauce, salt, cayenne, and Tabasco; stir until blended.
- Add in the egg; whisk until the mixture is smooth.
- Add the crabmeat; toss gently; scrape mixture into a greased 1 1/2 quart casserole dish.
- Pour the cream over the mixture; spread the remaining mayonnaise evenly over the top; sprinkle with paprika.
- Bake in a 350° oven for about 20 minutes or until bubbly and golden brown.
- Serve immediately.

- Microwave on HIGH 30 seconds or until softened.
- Add mayonnaise and shisk until smooth.

- In a large bowl, mix very well all ingredients except the crab meat.
- Slowly fold in crab meat, to prevent it from shredding.
- Transfer mixture to shallow baking dish. Heat at 350 degrees F for about 20 minutes, or until hot. (You may skip this step and serve the dip cold, if desired.).
- Serve with crackers, toasted pita points, or crostini.

- Dice 12-ounces of cream cheese, place in food processor and allow to soften for about 15 minutes before adding other ingredients.

- Using a plastic spatula scrape mixture from the food processor into a large glass dish, add ½of a cup of minced celery, ¼ of a cup of minced red bell peppers, and 3 chopped spring onions. Fold all ingredients in till evenly combined.
