1 lb ground beef
1/4 cup raw long grain rice
1 egg, beaten
1 onion, grated
1 carrot, grated
1 teaspoon salt
fresh ground pepper
6 slices bacon, minced
12 wilted cabbage leaves, thick veins trimmed to thin
1/2 cup brown sugar
1/4 cup lemon juice
1 cup tomato sauce

Steps:

  • Mix together meat, rice, egg, onion, carrot, salt, pepper and bacon.
  • Spoon mixture into the center of each of the 12 cabbage leaves.
  • Roll up, tucking in sides to completely enfold meat.
  • Place folded side down in a greased baking dish.
  • Mix together brown sugar, lemon juice and tomato sauce.
  • Pour over rolls, cover tightly and bake at 375°F for 1 hour.
  • Uncover and bake 20 minutes longer.

1/2 pound uncooked ground beef
1/2 pound uncooked ground pork
1 can (15 ounces) tomato sauce, divided

1/2 teaspoon snipped fresh dill or dill weed

Steps:

  • Cook cabbage in boiling water just until outer leaves pull away easily from head. Set aside 12 large leaves for rolls. In a small bowl, combine the beef, pork, 1/2 cup tomato sauce, onion, rice, parsley, salt, dill and cayenne; mix well., Cut out the thick vein from the bottom of each leaf, making a V-shaped cut. Place about 1/4 cup meat mixture on a cabbage leaf; overlap cut ends of leaf. Fold in sides. Beginning from the cut end, roll up. Repeat., Slice the remaining cabbage; place in a Dutch oven. Arrange the cabbage rolls seam side down over sliced cabbage. Combine the tomatoes, sugar and remaining tomato sauce; pour over the rolls. Cover and bake at 350° until cabbage rolls are tender, 1-1/2 hours.

2 cloves garlic, minced
28 oz crushed tomato, 1 can
1 tablespoon paprika
1 ½ teaspoons chili powder
1 teaspoon ground cumin

1 lb ground beef

black pepper, to taste
1 teaspoon chili powder
1 teaspoon ground cumin
2 teaspoons dried oregano
½ cup white rice, uncooked medium grain
1 green cabbage, core removed
sour cream, for serving
fresh cilantro, for garnish

Steps:

  • In a medium pan over medium heat, heat the olive oil until shimmering, then cook the garlic until fragrant, for 1-2 minutes.
  • Stir in the crushed tomato, paprika, chili powder, ground cumin, salt, and pepper. Reduce the heat to medium-low and simmer for 10 minutes. Set aside to cool.
  • In a medium bowl, combine the ground beef, salt, pepper, chili powder, cumin, oregano, rice, and 1 cup (260 G) of tomato sauce. Mix until combined. Refrigerate until ready to use.
  • Bring a large pot of water to a boil over high heat. Add the cabbage, cut side down. Cover with a lid, reduce the heat to medium, and simmer for 15 minutes.
  • Preheat the oven to 350°F (180°C) for 45 minutes.
  • Transfer the cabbage to a cutting board, cut side up, and let cool until it reaches room temperature.
  • Peel off a layer of the cabbage. With the stem facing upwards, use a paring knife to trim the thicker stem, which will make the leaf easier to roll. With the stem side pointed towards you, place a few tablespoons of filling at the base of the leaf.
  • Roll upwards so the filling is covered by a single layer of the cabbage. Fold both sides in, then roll all the way up.
  • Place the cabbage roll seam side down in a 9x13-inch (23x33 -cm) baking dish and repeat with the remaining filling.
  • Spoon the remaining tomato sauce over the cabbage rolls.
  • Cover the dish tightly with foil and bake for 45 minutes.

2 tablespoons extra-virgin olive oil
2 garlic cloves, smashed
1 1/2 quarts crushed tomatoes
2 tablespoons white wine vinegar
1 tablespoon sugar
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 yellow onion, chopped
2 garlic cloves, minced
2 tablespoons tomato paste
Splash dry red wine
2 tablespoons chopped fresh flat-leaf parsley
1 pound ground beef
1 pound ground pork
1 large egg
1 1/2 cups steamed white rice
Kosher salt and freshly ground black pepper
2 large heads green cabbage, about 3 pounds each

Steps:

  • To make the sauce:
  • Coat a 3-quart saucepan with the oil and place over medium heat. Add the garlic and saute for 1 minute. Add the tomatoes and cook, stirring occasionally, for 5 minutes. Add the vinegar and sugar; simmer, until the sauce thickens, about 5 minutes. Season with salt and pepper and remove from the heat.
  • Place a skillet over medium heat and coat with 2 tablespoons of the olive oil. Sauté the onion and garlic for about 5 minutes, until soft. Stir in the tomato paste, a splash of wine, parsley, and 1/2 cup of the prepared sweet and sour tomato sauce, mix to incorporate and then take it off the heat. Combine the ground meat in a large mixing bowl. Add the egg, the cooked rice, and the sauteed onion mixture. Toss the filling together with your hands to combine, season with a generous amount of salt and pepper.
  • Bring a large pot of salted water to a boil. Remove the large, damaged outer leaves from the cabbages and set aside. Cut out the cores of the cabbages with a sharp knife and carefully pull off all the rest of the leaves, keeping them whole and as undamaged as possible, (get rid of all the small leaves and use them for coleslaw or whatever.) Blanch the cabbage leaves in the pot of boiling water for 5 minutes, or until pliable. Run the leaves under cool water then lay them out so you can assess just how many blankets you have to wrap up the filling. Next, carefully cut out the center vein from the leaves so they will be easier to roll up. Take the reserved big outer leaves and lay them on the bottom of a casserole pan, let part of the leaves hang out the sides of the pan. This insulation will prevent the cabbage rolls from burning on the bottom when baked. Use all the good looking leaves to make the cabbage rolls. Put about 1/2 cup of the meat filling in the center of the cabbage and starting at what was the stem-end, fold the sides in and roll up the cabbage to enclose the filling. Place the cabbage rolls side by side in rows, seam-side down, in a casserole pan.
  • Preheat the oven to 350 degrees F.
  • Pour the remaining sweet and sour tomato sauce over the cabbage rolls. Fold the hanging leaves over the top to enclose and keep the moisture in. Drizzle the top with the remaining 2 tablespoons of olive oil. Bake for 1 hour until the meat is cooked.

2 cups uncooked long-grain rice
4 cups water
2 large heads savoy cabbage
1 cup water
2 onions, chopped
3 tablespoons butter
¾ cup uncooked long-grain rice
1 pound extra-lean ground beef
½ pound pork sausage
4 cloves garlic, minced
2 teaspoons dried dill weed
¾ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon white sugar
1 (26 ounce) can condensed tomato soup
1 (28 ounce) can whole peeled tomatoes, with liquid
8 bay leaves

Steps:

  • Wash rice thoroughly. In a medium saucepan, combine 2 cups rice and 4 cups water. Bring to boil; reduce heat, cover and simmer for 20 minutes or until all of the water is absorbed.
  • In the meantime, remove the core from the cabbages using a thin, long knife. Place 1 cabbage in a microwave proof container with a lid with core side down. Pour 1/2 cup water into the container with the cabbage, cover and microwave on HIGH (full power) for 10 minutes. Carefully turn cabbage over and cook covered for an additional 10 minutes. When cabbage is cooked, let sit until it is cool enough to handle. Separate leaves carefully, removing any tough ribs. Cook the second cabbage in the same manner.
  • Divide chopped onions in half. Saute one half of the onions in 3 tablespoons butter; cook just until translucent (do not brown). In a large mixing bowl, mix together both the cooked and uncooked rice, cooked and uncooked onions, ground beef, pork sausage, garlic, dill weed, salt, black pepper and sugar and mix well to blend.
  • Spoon about 2 tablespoons of mixture onto each cabbage leaf. Bring one end of cabbage leaf over mixture, roll and tuck ends in to prevent any filling from falling out.
  • Preheat oven to 350 degrees F (175 degrees C). Prepare two 9x13 inch casserole dishes by placing some left over cabbage leaves in bottom of each. Arrange cabbage rolls in a single layer tight against each other.
  • In a food processor or blender, process condensed tomato soup and tomatoes. Pour tomato mixture over the cabbage rolls until just covered. Place 4 bay leaves on top of sauce in each dish. Cover each dish tightly with aluminum foil.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 2 hours. Once cooked, remove the dishes from the oven and let cool for 15 minutes before removing aluminum foil. Serve hot.

Japanese Style Cabbage Rolls is one of the popular dishes originating from Western cuisine. Pork and beef mince (ground meat) is stuffed in cabbage leaves and cooked in chicken stock with a few bacon pieces.

4 large cabbage leaves ((note 1))
30g/1.1oz bacon (, cut into short 1cm/⅜" wide strips)
250ml/0.5pt chicken stock ((salt reduced) (note 2))
50ml/1.7oz water
Salt to adjust flavour
1 onion (, minced)
½ tbsp oil
½ tbsp butter
200g/0.5lb pork mince
200g/0.5lb beef mince
1 egg
1 tbsp cornflour/corn starch
A large pinch of ground nutmeg
½ tsp salt
Pepper
Parsley finely chopped

Steps:

  • Heat oil and butter in a frying pan over medium heat and sauté the onion for about 3 minutes until some onion pieces start browning around the edges. Turn the heat off and let it cool.
  • Trim the thick vein from the core-end of the leaf so that the thickness of the vein becomes similar to the rest of the leaf.
  • Bring a large pot of water to a boil with a pinch of salt. Add the cabbage leaves to the boiling water and cook for about 3 minutes until the leaves become soft. (note 6)
  • Transfer the leaves to a bowl of cold water to cool them down quickly, then pat dry with paper towels.
  • Put the cooked onion and the rest of the Filling ingredients in a bowl and mix well.
  • Divide the filling into 4 equal portions and shape them into a barrel shape.
  • Spread a cabbage leaf on a cooking bench with the core-end pointing to you (note 3) and place one of the fillings in the middle closer to the vein end (see the step-by-step photo in the post).
  • From the core-end, roll the leaf up tightly. When the core-end reaches to the other side of the filling covering the filling completely, fold each side of the cabbage leaf over to the centre so that the width of the unrolled cabbage leaf becomes the same as the filling.
  • Continue rolling the filling with the leaf until the end. If the side of the roll is sticking out, gently push it in to the centre and shape the roll into a fat log shape.
  • Place the cabbage rolls, the end of roll facing down, into a deep medium size frying pan that can snuggly fit the cabbage in.
  • Spread the bacon strips over the cabbage rolls. Pour the chicken stock as well as water over them and bring to a boil over medium high heat.
  • When it starts boiling, reduce the heat to low and cook for 30-40 minutes with a lid on until the broth reduces to less than half (note 4).
  • Transfer the cabbage rolls to serving plates and pour over the broth. Garnish with parsley if using. Serve while hot.

Set aside., In a large nonstick skillet, cook the ground beef and onion over medium heat until meat is no longer pink; drain. Stir in tomatoes and water; bring to a boil. Stir in rice; return to a boil. Reduce heat; cover and simmer for 5 minutes. , Place about 1/3 cup beef mixture on each reserved cabbage leaf; overlap cut ends of leaf. Fold in sides, beginning from the cut end. Roll up completely to enclose filling., In a bowl, combine the tomato sauce, Worcestershire sauce, basil, thyme and sugar. 1 large head of cabbage (about 3 lbs.) - or use 2 smaller heads
1 Tablespoon olive oil
1 cup diced onion
2 cloves garlic, minced
2 large mushrooms, finely diced - 1 1/2 cups (optional)
1 pound ground sirloin
3/4 cup uncooked long grain rice (brown or white)
1/4 cup chopped parsley
1 cup Pomi strained tomatoes or canned tomato puree
1 1/2 teaspoons salt
pepper to taste
3/4 cup liquid (beef stock, cabbage water, or combine with some leftover tomato for 3/4 cup)

Steps:

  • Bring a large pot of water to boil. Cut center core out of cabbage and place, core side down, in boiling water. Cover and simmer for 10 minutes.
  • While cabbage simmers, heat oil in pan over med-high heat and sauté onion and garlic 3-5 minutes until browned. Add mushrooms and cook another 2 minutes. Transfer mixture to a large bowl to cool.
  • Remove cabbage to a rimmed baking sheet, keeping water in the pot. Gently remove leaves from cabbage, cutting away from the core with a small knife. Set aside the best 16 unbroken leaves and cut off the thick spine in the center for easier rolling. Set all remaining broken or small cabbage leaves aside. (If the core is too firm, return it to boiling water for a few minutes to soften)
  • Preheat oven to 350° F.
  • To cooled onion mixture, add meat, uncooked rice, parsley, tomato, salt & pepper. Combine well.
  • Place about 1/4 cup of filling in each leaf, roll, and place seam side down in a 13 by 9-inch pan. Pour liquid over rolls and lay some leftover leaves on top. Cover pan tightly with foil, and bake for 1 1/2 hours. (Place pan on a cookie sheet in case it drips)
  • Remove from oven and let rest 30 minutes or better still, let cool and refrigerate overnight. (They freeze well.)

3 lbs ground chuck
2 eggs, beaten
2 cups cooked rice
3 teaspoons salt

1 large onion, cut into pieces
6 garlic cloves
1/4 cup water
1 (28 ounce) can tomato puree
8 -12 ounces water (depends on how thick you like the sauce)
2 tablespoons dry basil
3 tablespoons dried parsley

Steps:

  • Preheat oven to 350º F.
  • Take a knife and cut a square around the core of the cabbage. If it is too difficult, you don't have to take the core out. You are just making deep slices on each side of the core so you can peel off the leaves. Boil head of cabbage in large pot until it's soft and pliable - about 10-15 minutes. Lift the cabbage out of the hot water, allow it to drain a bit. Start peeling off the tender leaves. If there are leaves that aren't as tender, place the head of cabbage back in the boiling water to cook a little longer. You want your leaves to be tender enough to roll but not too soft and mushy that they will be broken when you fill them with the filling.
  • Cut up the onion in large chunks and peel the garlic. Place the garlic and onion in a blender with a small amount of water and puree them. Transfer pureed onion and garlic to a large saucepan and add the tomato puree, water, basil, parsley, oregano, salt and pepper. Mix well and set aside.
  • In another bowl, combine the beef, eggs, rice, paprika, chopped onion, garlic powder and salt & pepper well with your hands.
  • Place a golf ball size of the meat mixture almost in the middle of a cabbage leaf. Roll until filling is just covered, then fold left end over towards middle, roll once more and then tuck the right side into the middle, inserting the leave into the meat mixture with your finger. Secure with a toothpick, if needed.
  • Cover the bottom of a large roasting pan with a thick layer of the sauce, place rolls on top and then more sauce over the rolls.
  • Bake at 350 for 2 hours. Baste the sauce over the cabbe rolls during the baking time every 30 minutes to avoid dried out rolls.
  • Serve with sour cream.

450g minced pork (or chicken/shrimp)
1 tbsp light soy sauce
1 tbsp oyster sauce
1 tsp minced ginger
2 tsp minced garlic
1 tbsp rice wine (optional)
1 tsp salt
1 tsp sugar
1/2 tsp ground white pepper
5 medium-sized dried shiitake mushrooms
3 stalks scallion, thinly sliced
1 small onion (about 80g)
1 tbsp light soy sauce
1 tsp sesame oil
2 tsp cornstarch (mix with 1 tbsp water)
Water soaking the mushrooms
Liquid release from the cabbage rolls after steaming
1 tbsp scallion, thinly sliced

Steps:

  • Mix the minced meat with all the ingredients in (A). Mix well until it becomes a sticky paste.
  • Remove the core of the round cabbage.
  • Blanch the cabbage in boiling water until the leaves loosen from the core. Remove and drain.
  • Trim the thick veins of the leaves so that it is pliable when folding.
  • Divide the stuffing into twelve equal portions. Place a portion of the stuffing on a piece of cabbage. Fold and wrap to encase the stuffing.

1/2 pound rice
1 head fresh cabbage, approximately 3 pounds
1 small onion, chopped fine
1 teaspoon oil
1 teaspoon vegetable bouillon
1/2 pound ground pork
Salt
Pepper
2 carrots, chopped
2 stalks celery, chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Steam the rice and cabbage head separately. Set the steamed rice aside. Peel off the cabbage leaves to have individual leaves.
  • Add chopped onion, oil, bouillon, and the steamed rice to the ground pork meat. Mix together. Season with salt and pepper. Roll the ground pork mixture into golf ball-sized balls. Wrap each pork ball in a cabbage leaf.
  • Add carrots and celery into the baking pan (vegetables prevent the cabbage from burning onto the bottom of the pan, and also adds an aroma to the rolls) and arrange the cabbage rolls on top.
  • Place the pan into the oven and cook for about 1 1/2 hours. Check if it is thoroughly cooked before removing from the oven.

Hearty and filling, cabbage rolls are classic comfort food. Made with ground beef, rice, cabbage, and tomatoes, this cozy dinner will soon be a family favorite.

1 can diced tomatoes (14.5 ounce, undrained)
1 can tomato sauce (8 ounce)
2 tablespoons brown sugar
1 tablespoon white vinegar
¼ cup water
1 pound ground beef
½ cup onion (chopped fine)
1 tablespoon dried parsley
1 teaspoon oregano
1 teaspoon salt
½ teaspoon pepper
½ teaspoon dill
2 teaspoons minced garlic
1 cup rice (cooked)
1 egg
¼ cup sauce (that has been mixed together)
1 head cabbage (green)

Steps:

  • Prepare the cabbage leaves by cutting off ¼ inch from the bottom of the cabbage head. Place the whole cabbage head into a big pot of boiling water and boil for two minutes. Using long tongs gently peel off the outer cabbage leaves from the cabbage head inside the pot. Using the tongs you can roll the cabbage head around in the hot water and gently lift the leaves. After several layers have been removed you may have to use a knife to disconnect the leaf next to the core. Set aside the removed leaves to cool while you prepare the sauce and filling.
  • Preheat oven to 350 degrees.
  • In a medium bowl mix all of the sauce ingredients together.
  • Spread a thin layer of the sauce in the bottom of a 9x13 baking dish.
  • Remove ¼ cup of sauce to be added to the meat filling.
  • In a skillet brown the ground beef cooking along with the onions, parsley, oregano, salt, pepper, and dill over medium heat until no pink remains and onions are tender.
  • Stir in the garlic and cook another minute.
  • Remove from heat and add the cooked rice, ¼ cup mixed tomato sauce, and egg. Mix well. Set aside.
  • Remove the thick stem of the cabbage leaves (cutting a V at the bottom of each leaf to notch out the thick part and this also helps it lay flatter).
  • Lay the leaf flat and place 1/3 cup of filling toward the middle bottom of the leaf. Fold burrito style by folding in the sides onto the filling and rolling the leaf up. If your leaves have torn that's okay, just fold the torn side in first and cover it up with the other side before rolling.
  • Place the roll seam side down in the prepared baking dish. Repeat the process until all the leaves are filled and the dish is filled.
  • Pour the remaining sauce over the rolls and cover tightly with foil. Bake for 1 hour and 30 minutes.
  • Let cabbage rolls sit for 10-15 minutes before serving
