140g butter , cut into small pieces, plus extra for the tin
250g self-raising flour
2 tsp mixed spice
140g light muscovado sugar
100g raisin
3 large eggs , beaten
2 apples , peeled, cored and chopped
5 tbsp milk
1 rounded tbsp plain flour
25g butter
25g light muscovado sugar
1 rounded tbsp roughly chopped hazelnuts

Steps:

  • Heat oven to 160C/140C fan/gas 3. Butter and line the base of a 2-litre loaf tin with baking parchment. Tip the flour and spice into a food processor and add the butter. Whizz to make fine crumbs, then mix in the sugar. Tip into a mixing bowl and stir in the raisins, eggs, apples and milk. Mix well until everything is evenly combined, then spoon into the prepared tin and smooth the top.
  • To make the topping, rub the flour, butter and sugar through your fingers to make a rough crumble, then stir in the nuts. Sprinkle evenly over the cake mixture and bake for 50-55 mins, until firm to the touch and a fine skewer inserted into the centre comes out clean. Cool in the tin for 15 mins, then turn out and cool on a wire rack.

This great dessert is from The New Vegetarian Epicure. I've used it with several combinations of fruit - basically whatever I have on hand - and it's always been good. While the apple and pear combination is excellent, I've also had great results with mixed berries (strawberry, raspberry, blueberry, cherries). An easy dessert with ingredients you probably have on hand.

4 -5 tart apples
4 -5 pears (if using other mixed fruits instead, just be sure to have about 4 lbs total)
3 tablespoons lemon juice
1/2 cup sugar
1/2 cup raisins
1 dash nutmeg
1 dash cinnamon (or any other spice you love!)
2/3 cup flour
3/4 cup brown sugar
1 pinch salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
5 tablespoons butter
2 tablespoons ice water
1 cup rolled oats

Steps:

  • Prepare fruit (peel, pit, whatever it takes). If large, cut into 1/4 thick slices.
  • Toss in a bowl with lemon juice, sugar and raisins and a bit of nutmeg and cinnamon (I usually add allspice because I love it).
  • Combine the flour, sugar, salt and spices.
  • Cut in the butter and mix till mixture resembles coarse cornmeal. There should be no big chunks of butter left. (I usually do this with my hands - don't have a food processor).
  • Sprinkle in the ice water, mix till the crumble mixture holds together and forms little clumps.
  • Add the rolled oats and mix. If the mixture seems sticky, add more oats.
  • Spread fruit evenly in a large glass or ceramic baking dish.
  • Scatter topping evenly over the fruit, leaving some of it in larger chunks and some in fine crumbles.
  • Bake the Crumble at 375 for about 40-45 minutes or until the top is crisp and brown and the juice is bubbling up around the edges.
  • Serve it hot or warm, with ice cream, whipped cream, or all by itself.

4 apple, approx 500g
100g flour
50g cold butter + 1 TBSP extra
45g sugar + 1 TBSP extra
25g raisins
50g ground almonds (or walnuts), not almond flour
1 tea bag black tea
1/2 tsp ground lemon zest
1/2 tsp ground orange zest
1/2 tsp ground ginger
1 tsp vanilla extract or 1 bag of vanilla sugar

Steps:

  • Preheat oven at 180C/350F.
  • Add boiling water enough to cover the raisins and insert the tea bag in the bowl. Set aside and them soak up part of the liquid and the flavours.
  • Make the crumble. Mix flour, ground almonds, ground ginger, cold butter and sugar until all resembles wet sand. Set aside in the fridge while you prepare the apples.
  • Peel and cut apples into medium sized cubes.
  • In a pan melt the extra TBSP of butter and add the apples, soaked raisins with their liquid and the ground citrus zest. Soften the apples for 2-3 mins, until the liquid is absorbed and the ingredients are well combined. Transfer the apples to a small baking dish. I used a 24X17cm one.
  • Top the apples with the crumble and transfer to the oven. Bake until the crumble is golden brown, about 35-40 mins.
  • Serve with a nice dollop of cold yogurt.

8 medium apples (6 McIntosh, Jonathan or Gala and 2 Granny Smith), unpeeled, chopped into 3/4 inch cubes
1/3 cup raisins
2 Tbsp packed dark brown sugar
1 tsp vanilla extract
1 Tbsp cornstarch
ingersnap cookies
1 Tbsp canola oil
1/2 tsp ground cinnamon
1 Tbsp packed dark brown sugar
2 Tbsp maple syrup or honey

Steps:

  • 1. Preheat oven 350 °F (180 °C).2. In medium mixing bowl, combine apples, raisins, 2 Tbsp (30 mL) brown sugar, vanilla extract and cornstarch, toss gently, yet thoroughly until cornstarch is dissolved. Place in a 11 x 7-inch (28 x 18-cm) baking dish and set aside.3. Place gingersnaps in small plastic resealable bag. Using back of spoon or meat mallet, crush cookies to coarse texture. Place in small mixing bowl and add remaining ingredients, except syrup. Stir to blend thoroughly and sprinkle evenly over fruit.4. Bake, uncovered, 45 minutes or until fruit is bubbly. Remove from heat, drizzle syrup evenly over all and let stand 10 minutes to absorb flavors. Store cooled leftovers covered with plastic wrap in refrigerator up to two days.Tips: If smaller amount is desired, divide recipe in half and bake in loaf pan as directed.

pinch of salt
175g/6oz brown sugar
200g/7oz unsalted butter at room temperature, cubed, plus a little for greasing
450g/1lb apples, peeled, cored and cut into 1cm/½in pieces
50g/2oz brown sugar
1 tbsp plain flour
1 pinch ground cinnamon

Steps:

  • Preheat the oven to 180C/350F/Gas 4.
  • Place the flour, salt and sugar in a large bowl and mix well. Taking a few cubes of butter at a time rub into the flour mixture. Keep rubbing until the mixture resembles breadcrumbs.
  • Place the fruit in a large bowl and sprinkle over the sugar, flour and cinnamon. Stir well being careful not to break up the fruit.
  • Butter a 24cm/9in ovenproof dish. Spoon the fruit mixture into the bottom, then sprinkle the crumble mixture on top.
  • Bake in the oven for 40-45 minutes until the crumble is browned and the fruit mixture bubbling.
  • Serve with thick cream or custard.

5 Granny Smith apples, peeled and sliced
1 cup raisins
1/2 cup apple juice
3/4 cup brown sugar, I use soft dark
1 cup plain flour
1/2 cup caster sugar
1/2 cup rolled oats
75 g unsalted butter, softened

Steps:

  • Preheat the oven to 180 degrees Celsius.
  • Put apples, raisins, juice and brown sugar in a medium sized saucepan, and cook over a medium heat for about 15 mins or until the apples are soft.
  • Transfer to 6 3/4 cup ramekins or a 1.5L capacity dish.
  • Put flour, caster sugar and oats into a large bowl and stir well.
  • Add the butter and rub lightly until it resembles coarse breadcrumbs. Scatter over apple mixture.
  • Bake for 25 minutes if using ramekins, or 35-40 minutes in the dish or until golden and crisp.
  • Serve with vanilla ice cream or custard.

3/4 cup golden raisin
5 1/2 ounces pineapple chunks in juice, drained (reserve 2 T of the juice)
2 tablespoons pineapple juice
1/2 lemon, juice of
1/8 cup white sugar
1/8 cup brown sugar
1/4 teaspoon cinnamon
1 cup quick-cooking oats
1/2 cup brown sugar
1/2 cup pecan pieces
1 teaspoon cinnamon

Steps:

  • Combine the apple slices, raisins, drained pineapple and sprinkle with the lemon and pineapple juices.
  • Toss lightly with a mixture of 1/8 C each of white and brown sugar and 1/4 t of cinnamon.
  • Put into a large casserole dish and bake at 350 degrees for 15 minutes.
  • In a medium size bowl (while the apples are starting their cooking), mix the dry crumb topping ingredients together, then moisten with the melted butter.

Steps:

  • Preheat the oven to 190.C/375.F/gas 5
  • Put the apple chunks in a sauce pan on a low heat, add in the sugar, water, lemon juice and cinnamon and leave to simmer for 5-8 mins, occaisionally stir to insure all the apple chunks cook. Add the raisins lower the heat and leave for 2 mins. When done put into a large baking dish.
  • Cut the butter into small cubes.
  • For the crumble add the flour and oats into a medium/large mixing bowl.
  • Rub the butter in with fingertips until crumble mixture appears (try not to leave any big chunks of butter).
  • Place the crumble on-top of the apple mixture and smooth over.
  • Bake in the oven for 20-25 mins until golden.
  • Serve instantly or reheat 10-15 mins before serving.
