CABBAGE LOVER'S CABBAGE QUICKIE
I'm doing the nutrisystem diet, and since cabbage is listed as a "salad vegetable" and the amount is unlimited, this has become my saving grace. It truly is delicious. I made this up in desperation and it's wonderful.

Steps:
- Spray a heavy skillet with the nonstick spray.
- Put the whole bag of shredded cabbage in the skillet and sprinkle with generous amount salt and pepper.
- Stir and toss until wilted and just beginning to brown a bit.
- Serve hot.

Steps:
- Preheat oven to 350.
- Cook cabbage 5 minutes, then drain.
- Place half of cabbage in a greased 2 quart casserole and sprinkle with flour.
- Add layer of ham and cover with remaining cabbage.
- Pour milk over top and cover with the cheese.
- Cover and bake for 30 minutes.
- Uncover for the last 5 minutes.

SENCILLAS -- PURSLANE SAUTE
Purslane/verdolagas is an invasive weed in many gardens. It's saving grace is that the best way to control it is to eat it. It is a vegetable green used in many Latin American countries. It is also popular as a salad green in France and other European countries. It is similar in taste and consistency to watercress. Verdolaga is also valued in Latin America for its medicinal properties. Serve with Recipe #67923 or Recipe #279702 for a zingy kick.

Steps:
- Cut cleaned purslane into pieces about 1" long.
- In a large frying pan, add oil; heat to medium high.
- Sauté onion until translucent, add garlic and continue 30 seconds more.
- Add the greens and sauté about ten minutes, or until tender.
- Lower heat and allow any accumulated liquid to evaporate.
- Salt & pepper to taste.
