One salad I remember fondly was just thinly sliced cabbage with pineapple chunks and pecans. Momma made dressing with mayonnaise, vinegar and a little sugar.

1/2 cabbage head
1 can(s) pineapple chunks 8.25 oz.
1/2 c pecans
2 Tbsp sour cream
1/4 c mayonnaise
1/2 lemon, squeezed
1 Tbsp sugar

Steps:

  • 1. Slice the cabbage thin and place in bowl
  • 2. Drain juice, then scatter chunks of pineapple over cabbage
  • 3. Toss in chopped pecans
  • 4. Make a dressing with sour cream, mayonnaise, lemon juice, and sugar to taste
  • 5. Toss with dressing just before serving

1 fresh pineapple - peeled, cored, and cut into small pieces
4 green onions, chopped
1 bell pepper, chopped
⅓ cup white vinegar
¼ cup mayonnaise
1 tablespoon white sugar
1 teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Mix cabbage, pineapple, green onions, and bell pepper together in a large bowl.
  • Whisk vinegar, mayonnaise, sugar, salt, and pepper together in a separate bowl; drizzle over cabbage mixture and toss to coat.
  • Cover bowl with plastic wrap and refrigerate at least 2 hours before serving.

1 cup curds (dahi)
1 tbsp fresh cream
2 tbsp milk
1/4 tsp mustard (rai / sarson) powder , readily available in the market
1 tbsp dill leaves (shepu / suva bhaji)
1/2 tbsp sugar
1 1/2 cups shredded cabbage
1 cup pineapple , cut into 25 mm. (1") cubes and refrigerated for at least an hour
2 tbsp finely chopped celery stalks
1/2 cup finely chopped capsicum

Steps:

  • For the dressingCombine all the ingredients in a bowl and mix well. Refrigerate for at least an hour.
  • How to proceedImmerse the cabbage, celery and capsicum in ice-cold water for 30 minutes and drain well. This will make them crisp.Just before serving,combine the cabbage, celery, capsicum and pineapple, add the dressing and toss well.Serve chilled.

oil (for frying)
12 ounces peeled fresh pineapple, cored and cut into chuncks
1 onion, chopped into wedges
3 -4 teaspoons fresh rosemary or 3 -4 teaspoons thyme, chopped
2 tablespoons roasted peanuts
1 teaspoon honey (only necessary if the pineapple is too tart)
12 ounces green cabbage, chopped
salt and pepper

Steps:

  • Heat about a tablespoon of oil in a large skillet. Add the pineapple chunks to the hot oil, stirring so they don't burn ( you do want the pineapple to brown slightly).
  • Add the onion, herbs and peanuts and fry for 2 more minutes. Taste the pineapple and add the honey if you need to at this time.
  • Toss in the cabbage and sprinkle on a little salt and pepper. Stir for about 4-6 minutes until the cabbage is linghtly cooked. Then serve with rice.

¼ cup red wine
½ teaspoon apple cider vinegar

Steps:
