20 whole chicken wings (4 pounds)
2 cups whole wheat flour
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon paprika
1/4 teaspoon cayenne pepper
Oil for deep-fat frying
SAUCE:
1-1/2 cups butter, cubed
1/3 cup hot pepper sauce
3 tablespoons brown sugar
2 tablespoons chili sauce
2 tablespoons honey
1 tablespoon balsamic vinegar
3/4 teaspoon salt
3/4 teaspoon paprika
1/4 to 1/2 teaspoon cayenne pepper

Steps:

  • Cut chicken wings into three sections; discard wing tip sections. In a large resealable plastic bag, combine the flours, salt, paprika and cayenne. Add wings, a few at a time, and shake to coat., In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry six to eight wings at a time for 3-4 minutes on each side or until juices run clear, adding more oil as necessary. Drain on paper towels. Transfer wings to a large bowl and keep warm. , In a large saucepan, combine the sauce ingredients. Cook and stir over medium heat for 10 minutes or until butter is melted. Pour over chicken wings and toss to coat. Serve immediately.

24 chicken wing parts (12 wings separated into 2 pieces)
One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
1 stick butter
Several dashes Worcestershire sauce
Several dashes hot sauce, such as Tabasco
Blue cheese dip, for serving
Celery sticks, for serving

Steps:

  • Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
  • Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
  • Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.

20 whole chicken wings, washed well and patted dry
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon freshly ground pepper
1 teaspoon cayenne pepper
1 recipe Sunny's Sauce, recipe follows
Blue Cheese Dipping Sauce, recipe follows, for serving
1 cup hot sauce (recommended: Frank's Red Hot original cayenne pepper sauce)
1 cup (2 sticks) melted butter, at room temperature
1 teaspoon freshly squeezed lemon juice
2 teaspoons dried basil leaves
1 cup crumbled blue cheese
1/4 cup sour cream
1/4 cup mayonnaise
1/2 cup buttermilk
1 teaspoon fresh lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon salt
Freshly ground black pepper

Steps:

  • Separate the chicken wings into drummettes and wings, discarding the wing tip joint. Place chicken wings and drummettes into a large, zip-top plastic bag or large brown paper bag. In a small bowl, combine the flour, salt, pepper, and cayenne. Add the seasoned flour to the plastic bag and toss to coat well.
  • Pour the chicken pieces and excess flour onto a baking sheet and spread evenly. Allow the chicken to sit on the floured baking sheet to dry out for about 1 hour.
  • Preheat fryer or a large stockpot filled halfway with vegetable oil to 350 degrees F.
  • Add chicken to hot oil and fry until cooked through and crispy, about 10 to 13 minutes.
  • Place the wings in a large bowl and drizzle with half of Sunny's Sauce. Toss to coat well. Serve hot with the remaining Sunny's Sauce and Blue Cheese Dipping Sauce.
  • Combine all ingredients in a large bowl and set aside until ready to use.
  • Combine all ingredients in a small bowl and stir to combine. Serve immediately or store, covered and refrigerated, for up to 1 week before serving.

1 tablespoon cayenne pepper
1 tablespoon mustard powder
1 tablespoon freshly cracked black pepper
1/2 teaspoon ground white pepper

4 pounds chicken wings, tips removed
For the sauce:
2 tablespoons extra-virgin olive oil
1 tablespoon minced garlic (about 2 cloves)
1 jalapeno pepper, minced (remove seeds for less heat)
1 12-ounce bottle hot pepper sauce
4 tablespoons unsalted butter
1 tablespoon white vinegar
1 tablespoon fresh lime juice

Steps:

  • Prepare the wings: In a large bowl, combine the granulated garlic, cayenne pepper, mustard powder, black pepper, white pepper and cumin. Remove and reserve 2 tablespoons of the spice mixture for the sauce.
  • Rinse the wings and pat dry. Add to the bowl with the remaining spice mixture and toss to coat well. Lay the wings on a baking sheet, loosely cover and refrigerate 1 to 2 hours.
  • Preheat a grill to medium high with direct and indirect heat (on a gas grill, turn off the burners on one side; on a charcoal grill, bank the coals to one side). Cook the wings over direct heat, turning, until they are good and crispy on both sides, 20 to 25 minutes. Transfer to the cooler side of the grill and cook, turning frequently, until cooked through, 8 to 10 more minutes.
  • Meanwhile, make the sauce: In a medium saucepan over medium-high heat, combine the olive oil, garlic and jalapeno. Saute 1 minute, stirring constantly. Add the reserved 2 tablespoons spice mixture and the hot sauce. Bring to a simmer, then add the butter, vinegar and lime juice and stir until the butter melts. Keep warm until ready to serve. Put the wings in a large bowl, pour in the sauce and toss.

½ cup butter
2 tablespoons distilled white vinegar

  • Preheat oven to 400 degrees F (200 degrees C). Arrange frozen chicken wings in a single layer in a shallow baking dish.
  • Bake in the preheated oven for 25 minutes, then flip wings. Continue baking until the skin is crispy and meat is no longer pink at the bone, about 20 minutes more.

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).

2 (5/8 ounce) packets dried Italian salad dressing mix
1 (8 ounce) bottle louisiana hot sauce

Steps:

  • Thaw and deep fry chicken wings in oil.
  • I usually cook 10-12 at a time in large skillet.
  • Place on paper towels to absorb excess oil.
  • Set cooked wings aside to cool to room temperature.
  • Melt butter.
  • Add lemon juice, Italian seasoning and hot sauce.
  • Cool to room temperature.
  • Place cooled wings in gallon ziplock bags and add sauce.
  • Seal and marinate for 1/2 hour.
  • Place wings on baking sheets and cook at 325°F for 15-20 minutes.
  • You may reuse the leftover sauce for dipping if you reheat it to the boiling point.

6 ounces franks buffalo wing sauce
