BUTTERSCOTCH COOKIES

Straight from Grandma's recipe box, these old-fashioned butterscotch cookies are soft, chewy and loaded with butterscotch chips!

Number Of Ingredients 9

2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) salted butter, softened at room temperature
¾ cup light brown sugar
¾ cup granulated sugar
2 large eggs, at room temperature
1 teaspoon vanilla extract
1 (11 ounce) package butterscotch morsels

Steps:

  • In a medium bowl, whisk together flour, baking soda and salt. Set aside.
  • In the large bowl of a stand mixer, cream together butter, brown sugar and granulated sugar until light and creamy, about 3-4 minutes.
  • With the mixer on low speed, add the eggs, one at a time, mixing completely after each addition. Mix in the vanilla extract.
  • Gradually add the flour mixture, just until combined (do not over-mix). Stir in the butterscotch morsels.
  • Cover the dough and chill in the refrigerator for at least 1 hour.
  • Preheat oven to 375° F. Line baking sheets with parchment or silicone mats.
  • Drop dough by rounded tablespoons two-inches apart on the prepared baking sheets. Place the baking sheets back in the refrigerator or in the freezer for about 10 minutes to chill again.
  • Bake for 8-10 minutes, or just until light brown around the edges. The centers will still be soft. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

These soft & chewy oatmeal scotchies cookies are loaded with butterscotch chips in every bite. The centers are chewy and soft, the edges are crisp, and every bite is buttery delicious!

Number Of Ingredients 12

1 and 1/2 cups (188g) all-purpose flour (spoon & leveled)
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks; 230g) unsalted butter, softened to room temperature
1 cup (200g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
2 large eggs, at room temperature
1 Tablespoon unsulphured or dark molasses
2 teaspoons pure vanilla extract
3 cups (240g) old-fashioned whole rolled oats
2 cups (280g) butterscotch morsels

Steps:

  • Whisk the flour, cinnamon, baking soda, and salt together in a medium bowl. Set aside.
  • In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter, brown sugar, and granulated sugar together on medium-high speed until combined and creamy, about 2 minutes. Add the eggs, molasses, and vanilla and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. With the mixer running on low speed, beat in the oats and butterscotch morsels. Dough will be thick and sticky. Cover and chill the dough for at least 45 minutes in the refrigerator (and up to 4 days). If chilling for longer than a few hours, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard.
  • Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
  • Scoop cookie dough (here's the cookie scoop I love), about 3 Tablespoons of dough per cookie, and place 4 inches apart on the baking sheets. Bake for 13-14 minutes or until lightly browned on the sides. The centers will look very soft.
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. While the cookies are still warm, I like to press a few more butterscotch morsels into the tops- this is only for looks!
  • Cookies stay fresh covered at room temperature for up to 1 week.

BUTTERSCOTCH SLICE COOKIES

Butterscotch slice cookies go perfectly with hot tea or coffee, especially on a cool night. Make the dough using butter, eggs, brown sugar, vanilla, flour and baking soda. Refrigerate the dough overnight before slicing and baking.

1 cup chopped chopped nuts
3 cups sifted flour
1 teaspoon baking soda

Steps:

  • In a medium mixing bowl, sift together flour, baking soda and salt. Set aside.
  • In a large mixing bowl using a hand mixer, cream together butter, brown sugar and vanilla. Add eggs one at a time. Add flour mixture one cup at a time and mix well. Stir in chopped nuts.
  • Place dough on wax paper and form into 2-inch rolls. Refrigerate overnight.
  • Preheat oven to 375º. Slice into 1/8 inch slices and bake on an ungreased baking sheet for 5 to 6 minutes.
  • Allow to cool slightly before removing from baking sheet.
  • Notes from the Paula Deen Test Kitchen: Makes a great cookie to be served with tea or coffee. Dough freezes well. Dough is easier to cut when frozen. If using this method, allow cookies to sit 3-4 minutes on a cool baking sheet before baking.

2 2/3 c brown sugar, firmly packed
1 tsp salt
1/2 lb (one cup) soft butter
2 eggs
1 tsp vanilla extract
3 1/2 c all purpose flour
1 tsp double- acting baking powder

DECORATING GLAZE
1 1/2 c confectioners' sugar
1 egg white
1 Tbsp butter, melted
1/8 tsp salt
1/2 tsp vanilla extract

Steps:

  • 1. Mix Brown sugar, salt butter thoroughly in large mixing bowl. Beat eggs ans extract into mixture until light and fluffy. Sift together flout, baking powder and soda,and cinnamon;gradually blend into sugar ingredients. Chill well.
  • 2. Roll chilled dough 1/8 in thick on a well floured surface. cut into fancy shapes and bake on regressed cookie sheets. Bake at 350 8-10 minutes or until slightly brown around the edges ( I like then chewy so I stay closer to 8 min) remove to cooling rack, cool completely before decorating.
  • 3. for glaze, blend confectioners sugar into 1 slightly beaten egg white, add melted butter,salt and extract, beat until smooth . if too thin add more sugar. Divide glaze into several parts and tint with desired food coloring, apply glaze to cookies with decorating tubes or paint brushes, load the kids with sprinkles and take lots of pictures!
  • 4. Store in airtight containers yields 6-10 dozen cookies I always double the recipe, more fun for the kids!

1 large egg

1/4 cup English toffee bits or almond brickle chips
1/4 cup finely chopped pecans

Steps:

Combine flour, baking soda, cream of tartar and salt; gradually add to creamed mixture and mix well. Stir in toffee bits and pecans. Shape into a 10-in. roll; wrap in plastic. Refrigerate 4 hours or until firm., Preheat oven to 375°. Unwrap dough and cut into 1/2-in. slices. Place 2 in. apart on baking sheets coated with cooking spray. Bake 9-11 minutes or until lightly browned. Cool 1-2 minutes before removing from pans to wire racks. Freeze option: Place wrapped logs in resealable plastic freezer bag; freeze. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Bake as directed.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).

100g unsalted butter , softened, plus extra for the baking sheet
100g light soft brown sugar
2 tbsp golden syrup
175g self-raising flour
25g puffed rice cereal, such as Rice Krispies
dark chocolate chips, for decoration

Steps:

  • Heat oven to 160C/140C fan/gas 3. In a large bowl, beat together the butter, sugar and golden syrup until smooth.
  • Sift in the flour and mix together, then fold through the puffed rice cereal. Roll into walnut-sized balls and place, well spaced, on a lightly buttered baking sheet. Decorate each ball with a few chocolate chips.
  • Bake for 15-20 mins until golden. Leave on the baking sheet for 1 min before removing to a wire rack to cool.
