Steps:

1/2 cup butter, softened
1 cup packed brown sugar
2 eggs
1 cup applesauce
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup raisins
2 cups (12 ounces) butterscotch chips
1/3 cup sugar
3/4 cup chopped pecans

Steps:

  • In a bowl, cream the butter and brown sugar. Add eggs and applesauce; mix well. Combine flour, baking soda, salt and cinnamon; add to creamed mixture. Stir in raisins. Spread in a greased 13x9-in. baking pan. Sprinkle with chips, sugar and pecans. Bake at 375° for 25 minutes or until a toothpick inserted in the center comes out clean.

2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
¾ cup white sugar
¾ cup brown sugar
2 eggs
1 ½ cups quick-cooking rolled oats
2 cups butterscotch chips, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
  • In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, mash the butter, white sugar, and brown sugar together until smooth and creamy, and beat in the eggs to make a creamy mixture. Gradually beat in the flour mixture, rolled oats, and 1 1/2 cup of butterscotch chips.
  • Press the dough into the prepared baking dish, and sprinkle the top with remaining 1/2 cup of butterscotch chips.
  • Bake in the preheated oven until the top is golden brown, 30 to 35 minutes. Allow to cool in the pan before cutting into bars and serving.

I ran across this recipe a few weeks ago in one of my cooking magazines and wanted to post them. You can either use the chunky applesauce or the regular applesauce in this recipe. It tastes great with both. PS. I made these this weekend for my son who just loves these, I made these with Splenda.

2 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup butter or 1/2 cup margarine, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups applesauce
1 cup chopped pecans or 1 cup walnuts
1 cup raisins
powdered sugar, sifted

Steps:

  • In a bowl or other container, mix flour with baking soda, cinnamon, and nutmeg.
  • In a large mixing bowl, cream butter with sugar until light and fluffy.
  • Add eggs and vanilla; beat well.
  • Stir in flour mixture.
  • Add applesauce, pecans and raisins and stir until blended.
  • Pour into a greased and floured 15x10x1-inch jelly roll pan.
  • Bake in preheated 350° oven 25 minutes, or until done.
  • Cool applesauce bars on rack then cut in 2-1/2 x 1-inch bars and sprinkle with sifted powdered sugar.

3 cups vanilla wafers
1/2 cup raisins
1 cup butterscotch chips
1/4 cup wheat germ
2 cups applesauce
1/2 cup chopped nuts or 1/2 cup sunflower seeds

Steps:

  • Spray the bottom of an 8x8 or 9x9 pan with cooking spray.
  • Crush the wafers into large chunks. Place half the wafers in the pan.
  • In a bowl, mix the raisins, butterscotch bits, wheat germ and applesauce. Add the nuts or sunflowers seeds is desired.
  • Spread over the wafers in the pan.
  • Press the rest of the wafers over the applesauce mixture.
  • Cook on high in the microwave for 8 minutes.
  • Let cool for at least 15 minutes before cutting into bars.
  • Store in the refrigerator.

140g butter , plus extra for the tin
2 large eggs
350g light muscovado sugar
2 tsp vanilla extract
250g self-raising flour
100g bar milk chocolate (we used Green & Black's), cut in big chunks
100g macadamia or pecan nuts, coarsely chopped
icing sugar for dusting

Steps:

  • Preheat the oven to fan 160C/conventional 180C/gas 4. Melt the butter in a small bowl and leave to cool. Butter a shallow tin about 20 x 24cm. In another bowl, beat the eggs. Melt the butter, then add to eggs with the sugar and vanilla. Tip in the flour and stir in with the chocolate and three-quarters of the nuts. Don't over-beat.
  • Spread the mixture in the tin, scatter over the rest of the nuts and bake for 25-30 minutes, then cut into 12 bars. Dust with icing sugar.

1 cup butter-flavored shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup old-fashioned oats
1/2 teaspoon baking soda
1 package (10 ounces) butterscotch chips
1 cup chopped pecans
FILLING:
3 ounces cream cheese, softened
2 tablespoons butter, softened
1/4 cup sugar
1 large egg
1 tablespoon all-purpose flour

Steps:

  • In a large bowl, cream the shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, oats and baking soda; gradually add to the creamed mixture. Stir in chips and pecans. Reserve 2 cups. Spread remaining dough into a greased 13x9-in. baking pan. , In a small bowl, combine filling ingredients; beat until smooth. Spread evenly over crust. 2 ½ cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
1.3 cups packed brown sugar
10 tablespoons butter, softened
1 egg
⅔ cup apple juice
2 cups butterscotch chips
¾ cup grated apple
¾ cup chopped walnuts
2 tablespoons butter
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
  • Mix together flour, cinnamon, baking soda and salt in medium bowl.
  • Beat brown sugar and 1/2 cup butter in large mixer bowl until creamy. Beat in egg. Gradually beat in flour mixture alternately with apple juice. Stir in 1 1/2 cups butterscotch chips, apple and 1/2 cup walnuts. Drop by slightly rounded tablespoon onto lightly greased cookie sheets.
  • Bake for 10 to 12 minutes, until lightly browned. Let stand 2 minutes; cool on wire racks.
  • While the cookies cool make the butterscotch glaze: Melt remaining butterscotch chips and 2 tablespoons butter in small, heavy saucepan over lowest possible heat.
  • When the butter and chips have melted remove the pan from heat and stir in 1 cup confectioners' sugar and 1 1/2 tablespoon apple juice until the glaze is smooth. Spread the glaze on the cooled cookies and sprinkle with remaining walnuts.
