This skillet dinner has it all - pasta, sausage and squash blended in an easy meal that's ready in 45 minutes.

6 oz. (2 1/2 cups) uncooked bow tie pasta (farfalle)
12 oz. pork breakfast sausage links, cut into 1-inch pieces
3 tablespoons olive oil
1 medium butternut squash, peeled, cut into 1/2 to 3/4- inch pieces (4 cups)
1/2 cup sliced green onions (1/2-inch pieces)
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried marjoram leaves
1/4 teaspoon dry mustard

Steps:

  • Cook pasta to desired doneness as directed on package. Drain; cover to keep warm.
  • Meanwhile, in 12-inch nonstick skillet, cook sausage as directed on package. Remove sausage and drippings from skillet; discard drippings.
  • Add 2 tablespoons of the oil to same skillet. Heat over medium-low heat until hot. Add squash; cover and cook 10 minutes or until almost tender, stirring occasionally.
  • Add onions; cover and cook 3 to 5 minutes or until squash is fork-tender, stirring occasionally.
  • Add cooked sausage, cooked pasta, sugar, salt, marjoram, mustard and remaining 1 tablespoon oil; mix well. Cook 3 to 5 minutes or until thoroughly heated, stirring occasionally.

One 10-ounce box frozen butternut squash puree
1 pound rigatoni with lines
Kosher salt
1 tablespoon EVOO
1 pound bulk sweet Italian sausage
3 to 4 cloves garlic, finely chopped
1 onion, finely chopped
2 tablespoons chopped fresh thyme
1/2 cup white wine
4 tablespoons butter
3 tablespoons flour
2 1/2 cups milk
Freshly ground black pepper
Freshly grated nutmeg
2 cups sharp yellow Cheddar
1 cup shredded Pecorino Romano cheese
Flat leaf parsley, chopped
Fennel and Celery Slaw, for serving, recipe follows
2 tablespoons honey
2 tablespoons white balsamic vinegar
1 tablespoon grated shallot
Juice of 1 lemon
1/3 cup EVOO
1 cup coarsely chopped parsley tops
4 ribs celery and leafy tops, very thinly sliced
1 large or 2 medium bulbs fennel, very thinly sliced, plus a handful of fronds, chopped

Steps:

  • Defrost the squash puree in a microwave and place in a strainer to drain.
  • Cook the pasta in boiling salted water to al dente, 7 to 8 minutes.
  • Meanwhile, heat the EVOO in a large skillet over medium-high heat. Add the sausage to the skillet, crumble and brown. Add the garlic, onions and thyme and cook until tender, 5 to 6 minutes. Deglaze the pan with the white wine.
  • Preheat the broiler with a rack in the upper third of the oven.
  • Melt the butter in a medium sauce pot over medium heat. Whisk in the flour for 1 minute. Whisk in the milk and season with salt, pepper and nutmeg and thicken to coat a spoon. Stir in the butternut squash and bring the sauce back to a bubble and melt in the Cheddar.
  • Toss the pasta, sauce and sausage to combine. Top with the Pecorino Romano and parsley and broil to brown, 1 to 2 minutes. Serve with the Fennel and Celery Slaw.
  • Combine the honey, vinegar and shallot with the lemon juice and whisk in the EVOO. Add the parsley, celery and fennel and toss to coat and combine. Season with salt and pepper. Arrange on a platter and top with the toasted nuts.

1 ½ cups heavy cream
½ teaspoon salt
3 tablespoons minced fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • Heat oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly brown. Stir in onion and garlic, and cook until onion is tender. Stir in tomatoes, cream, and salt. Simmer until mixture thickens, 8 to 10 minutes.

3 tablespoons extra-virgin olive oil
1 medium red onion
1 pound spicy Italian sausage, casings removed
10 ounces frozen diced butternut squash (about 1 1/2 cups)
One 15-ounce can crushed tomatoes
Kosher salt and freshly ground black pepper
One 16-ounce tube ready-made polenta
1 tablespoon unsalted butter, cut into small pieces, plus more for greasing the dish
5 ounces fontina cheese, thinly sliced (1 1/4 cups)
1 ounce grated Parmesan (about 1/4 cup)
5 ounces baby spinach (about 6 cups)
2 teaspoons balsamic vinegar

Steps:

  • Position an oven rack about 5 inches from the broiling element, and preheat the broiler.
  • Heat 2 tablespoons of the oil in a large high-sided skillet over medium-high heat. While the pan is heating, thinly slice the onion; set aside about 1/3 cup for the salad.
  • Add the sausage to the pan, and break it up into smaller chunks with a wooden spoon. Stir periodically until it is brown all over, about 5 minutes. Add the remaining onion and the squash. Stir for a minute, then add the tomatoes, 2 tablespoons water, 3/4 teaspoon salt and a few grinds of pepper. Cover partially, and let simmer vigorously, stirring occasionally, until reduced and thick, about 10 minutes.
  • Meanwhile, slice the polenta into 1/4-inch rounds. Butter the flameproof baking dish, and shingle the rounds in one layer. Dot the polenta with the pieces of butter. Place the dish under the broiler, and broil the polenta until it is hot and soft, about 4 minutes.
  • When the sauce is ready, spread it over the broiled polenta. Top with the fontina and grated Parmesan. Return the casserole to the broiler, and broil until the top is browned and bubbly, about 3 minutes.
  • Meanwhile, toss the spinach in a large bowl with the reserved onion, the remaining 1 tablespoon olive oil, the balsamic vinegar, and salt and pepper to taste. Serve the casserole with the spinach salad on the side.

The sausage is easier to slice if you stick it in the freezer for about 20-30 minutes to firm it up a bit. Cook time includes pasta cooking time.
