2 ½ cups all-purpose flour
1 cup granulated sugar
1 ¼ teaspoon baking soda
1 teaspoon salt
1 tablespoon ground cinnamon
1 ½ teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 cup buttermilk (low-fat ok)
1 cup pumpkin puree
1/4 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup chopped pecans (optional)

Steps:

  • Preheat oven to 350F. Grease and flour a 9x5-inch baking dish. Set aside.
  • In a medium bowl, whisk together flour, sugar, baking soda, salt, and spices. Set aside.
  • In a large bowl, stir together buttermilk, pumpkin puree, and oil until combined.
  • Stir in eggs and vanilla until incorporated.
  • Add dry ingredients, and stir until just combined.
  • Stir in nuts if using.
  • Pour batter into prepared pan.
  • Bake for 55-65 minutes, or until a wooden toothpick inserted in the center comes out clean. If the bread starts to brown too quickly, tent with foil.
  • Remove from oven, and let cool in pan for 10 minutes.
  • Remove from pan and finish cooling on wire rack.

1 2/3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 cup pumpkin puree
3/4 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup vegetable oil
1/4 cup buttermilk
2 large eggs
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350°F and spray a loaf pan with non-stick cooking spray or line with parchment paper and set aside.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves until combined, then set aside.
  • In a separate large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, oil, buttermilk, eggs, and vanilla until fully combined.
  • Add the dry ingredients to the wet ingredients and mix until just combined.
  • Pour the batter into the prepared lof pan, and spread into an even layer.
  • Bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
  • Cool on a wire rack for 20 minutes before removing it from the pan and letting it cool completely.

2-1/4 cups sugar
2 cups all-purpose flour
1-1/3 cups cake flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking powder
3/4 teaspoon ground cloves
1/2 teaspoon ground nutmeg
4 eggs
1 can (15 ounces) solid-pack pumpkin
1 cup buttermilk
1/2 cup unsweetened applesauce
1/3 cup canola oil

Steps:

  • In a large bowl, combine the first nine ingredients. In another bowl, whisk the eggs, pumpkin, buttermilk, applesauce and oil. Stir into dry ingredients just until moistened., Transfer to two 9x5-in. loaf pans coated with cooking spray. Bake at 350° for 45-55 minutes or until golden brown and a toothpick inserted in the center comes out with moist crumbs. Cool for 10 minutes before removing from pans to wire racks.
