1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 large egg, lightly beaten
1 cup well-shaken buttermilk
Vegetable oil for brushing griddle

Steps:

  • Preheat oven to 200°F.
  • Whisk together flour, baking soda, salt, egg, and buttermilk until smooth.
  • Heat a griddle or a large heavy skillet over moderate heat until hot enough to make drops of water scatter over its surface, then brush with oil. Working in batches and using a 1/4-cup measure filled halfway, pour batter onto griddle and cook, turning over once, until golden, about 2 minutes per batch. Transfer to a heatproof plate and keep warm, covered, in oven.

For the roasted strawberries:
1 pound strawberries (about 4 cups), hulled, halved, quartered if large
1/4 cup sugar
Pinch of kosher salt
1 vanilla bean, split lengthwise
For the pancakes:
1 1/2 cups all-purpose flour
3 tablespoons sugar
1 teaspoon kosher salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 large eggs
1 3/4 cups buttermilk
3/4 teaspoon vanilla extract
3 tablespoons melted unsalted butter, plus more for pan and serving
1/4 cup toasted sliced almonds (optional)

Steps:

  • Roast the strawberries:
  • Preheat oven to 425°F. Place strawberries, sugar, and salt in a glass baking dish. Scrape in vanilla seeds, add pod, and stir to combine. Roast, stirring occasionally, until juices are bubbling, 15-18 minutes. Let cool slightly and discard pod.
  • Make the pancakes:
  • Whisk flour, sugar, salt, baking powder, and baking soda in a large bowl. Beat eggs, buttermilk, vanilla, and 3 Tbsp. melted butter in a medium bowl with a fork to incorporate eggs. Add egg mixture to dry ingredients and whisk to combine. Batter will be slightly lumpy.
  • Heat a large griddle or 2 cast-iron or nonstick skillets over medium; brush with butter. Drop batter by 1/4 cupfuls onto griddle. Cook until bubbles form on the surface and pop, and the underside is golden brown, 2 1/2-3 minutes. Flip and cook until lightly browned on the bottom, 2 1/2-3 minutes more. Transfer pancakes to plates or a platter and brush tops with butter. Repeat with remaining batter, brushing griddle with butter as needed.
  • Serve pancakes topped with roasted strawberries and sprinkled with almonds, if desired.

Chloe's favorite breakfast dish has become mine, too. I wouldn't trade our weekend ritual of whisking the batter together for anything.

Yield Serves 4

Number Of Ingredients 14

1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1 cup buttermilk
1 large egg
3 tablespoons unsalted butter, melted, plus more for the pan
Warm Berry Syrup (recipe follows)
Confectioners' sugar
1/4 cup sugar
2 tablespoons unsalted butter, at room temperature
1 1/2 cups hulled and quartered strawberries
1 cup blueberries
1 cup raspberries
(makes 3 cups)

Steps:

  • In a large bowl, whisk together the flour, baking soda, and salt. In a small bowl, whisk together the buttermilk and egg, then pour into the flour mixture. Whisk until just combined, then whisk in the butter until just incorporated. (The batter should be a little lumpy.) Let the batter rest at room temperature for 10 to 15 minutes.
  • When ready to cook, heat a nonstick skillet or griddle over medium heat. When hot, lightly butter the pan, then pour in a scant 1/4 cup batter. Repeat, pouring the batter a few inches apart and working in batches. Cook until bubbles pop on the surface of each pancake, 3 to 4 minutes, then flip and cook for 1 minute more.
  • Arrange the pancakes on plates, top with the syrup, dust with confectioners' sugar, and serve immediately.
  • Combine the sugar and 1/4 cup water in a large skillet. Bring the mixture to a boil over medium-high heat, stirring to dissolve the sugar. Boil, undisturbed, for 2 minutes. Stir in the butter and boil until golden and fragrant, about 3 minutes.
  • Add all of the berries to the skillet and cook, stirring gently to coat the fruit, until the caramel melts into the fruit and the berries begin to release their juices, about 3 minutes. Serve warm.

2 cups all purpose flour
3 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 cups buttermilk
3 large eggs, separated
1 1/2 teaspoons vanilla extract
Butter
Pure maple syrup

Steps:

  • Whisk flour, 2 tablespoons sugar, baking powder and salt in large bowl to blend. Add buttermilk, egg yolks and vanilla and whisk until smooth (batter will be very thick). Using electric mixer, beat whites in medium bowl to soft peaks. Add remaining 1 tablespoon sugar and beat until stiff but not dry; fold into batter.
  • Melt butter on griddle or in heavy large skillet over medium-low heat. Working in batches, pour batter by 1/4 cupfuls onto griddle. Cook until pancakes are golden brown, about 3 minutes per side. Transfer to plates. Serve with syrup.

  • In a large skillet or griddle,over medium heat, add a little vegetable oil or butter to coat the pan.
  • Pour enough batter into the skillet to make a 5-inch circle; cook the pancakes until the tops are covered with tiny bubbles, then flip them over and finish cooking.
  • Serve warm with strawberry syrup or melted butter and sifted powdered sugar.

I like maple syrup, but you can cook with chocolate chips or top with fresh or frozen fruit. Since there is no sugar in the pancakes, you can put chutney on them for a spicy taste.

1 tablespoon oil
1 cup flour
1 teaspoon baking powder

  • Add dry ingredients and stir until just mixed.
  • Heat oil on a griddle (or use no-stick spray).
  • Drop batter by large spoonfuls onto pan.

2 eggs
2 1/2 cups buttermilk
1 teaspoon baking soda
1/4 cup melted butter (for batter)
2 1/2 cups flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon salt
1 cup fresh sliced strawberry (or frozen, thawed and drained)
1/2 cup melted butter (for frying)

Steps:

  • Beat eggs.
  • Add buttermilk, baking soda and melted butter.
  • Stir in flour, sugar, baking powder and salt.
  • Fold in strawberries.
  • Use griddle large frying pan or preheat electric skillet to 350ºF.
  • Lightly, brush surface with butter.
  • Pour 2 tablespoons batter for each pancake into skillet.
  • Cool until bubbles form on the surface and edges are dry.
  • Turn and cook 1 to 2 minutes or until done.
  • Serve with syrup or strawberry puree as desired.
