OKLAHOMA-STYLE S'MACK BURGERS WITH RANCH-FLAVORED TATER TOTS
Why go out when you can have a great burger at home in 30 minutes or less? Smashing slices of Vidalia onions into burger patties makes them juicy and delicious, while the simple sauce makes them the best version of your favorite fast food burger. Easy ranch-flavored tater tots take a frozen favorite up a notch using powdered buttermilk, dried herbs and spices.

- Gather your ingredients.
- For the sauce: Combine sauce ingredients in small bowl.
- For the burgers: Heat a large cast-iron skillet or griddle over medium-high heat.
- Peel onions and use a mandoline or large slicing blade of a box grater to shave the onions as thin as possible.
- Place beef in a bowl, season with salt and pepper and score to separate into 4 portions. Roll beef into balls.
- Drizzle oil in pan or over balls and place the meat into pan with 3 inches separating each portion. Top each ball with 1/4 of the onions and press meat into flat patties, bonding onions into meat. Cook beef 3 to 4 minutes, flip, cook and press 2 minutes. Add cheese, 2 slices per burger, and cook 2 minutes more, 7 to 8 minutes total between both sides. Put on patty bun bottoms.
- Serve with sauce, pickles, lettuce and patty bun tops with Ranch Flavored Tater Tots alongside.
- Preheat oven to 425 degrees F.
- Whisk up spices in a bowl. Store in the refrigerator in airtight plastic container.
- Bake tots to very crisp, 25 minutes. Top with ranch seasoning to your taste. Makes 3/4 cup seasoning and 6 portions of tots.
BUFFALO CHICKEN AND BLUE RANCH STATEMENT SALAD
Why limit your salads to small bowls and sidelines? This huge salad is perfect for a dinner party or big game night. Layers of lettuce and vegetables are topped with chips. Homemade blue cheese ranch dressing and spicy buffalo chicken make this more than a standard salad.

- Preheat oven to 400 degrees F.
- Gather your ingredients.
- For the blue ranch: In a bowl, whisk up sour cream, buttermilk and juice of 1 lemon. Finely chop the herbs, peel and grate in garlic and add to dressing. Add salt and pepper. Taste dressing. Crumble the smoked blue cheese if using or just add the store-bought crumbles; stir in.
- For the buffalo chicken: Remove skin from chicken, remove the chicken from bones and pull, shred or chop into bite-size pieces. Heat a skillet over medium to medium-high heat and melt butter. When it foams, grate or chop the garlic and swirl in the butter for a minute. Add hot sauce, Worcestershire sauce, chicken and stock and simmer until most of the liquids are absorbed. Remove from heat.
- For the salad: Core and chop iceberg lettuce and spread across a large cutting board. Chop romaine lettuce and scatter to combine with the iceberg lettuce. Arrange the chips on a tray and warm in oven 2 to 3 minutes. Thinly slice or cut radishes into matchsticks using a box grater or mandoline, and do the same with carrots. Thinly slice celery on bias and add all the vegetables to the salad.
- Top the salad with dressing, top the dressed greens with warm chips then with buffalo chicken and then top that with the scallions and pickled jalapenos.
SOUTHERN BUTTERMILK SALAD DRESSING
This recipe comes from a spring holiday dinner party that Mark Bittman and Sam Sifton prepared in Charleston, S.C. They used this dressing on a blend of kale, mustard greens and collards for a springtime salad.

- Combine the mayonnaise, lemon zest (grated yellow part of lemon) and lemon juice. To get the juice out of a lemon, heat it up in microwave for 10 seconds on high. Cut the lemon across in half. Squeeze the lemon halves while holding them upright over the dressing bowl so that the seeds stay with the lemon halves, not in the dressing! Add pepper to the dressing bowl, too. Whisk the dressing and pour in the extra-virgin olive oil while you whisk. If you pour in a slow, steady stream, 3 tablespoons of extra-virgin olive oil will pour out in a count to the number six. Once the oil is combined with the acid (the lemon juice) and the mayonnaise, you can switch utensils and stir in the cheese and a pinch of salt with a spoon or rubber spatula.
- Chop up the lettuce into 2-inch pieces. Place the lettuce in a salad bowl and top with the dressing when you are ready to serve dinner.

30 MINUTE CHICKEN AND DUMPLINGS
This is a Rachel Ray recipe I had in my file for quite awhile, and had to try it recently to satisfy a craving. It turned out really well. I used made from scratch biscuit recipe as I couldn't locate the jiffy mix in my area, I made about 6 biscuits. Also, I think the refrigerated biscuits would work as well. Otherwise I followed the recipe pretty much exactly.

- Dice tenders into bite size pieces and set aside.
- Wash hands.
- Place a large pot on stove over medium high heat.
- Add oil, butter, vegetables and bay leaf and cook 5 minutes, stirring frequently.
- Season mixture with salt, pepper and poultry seasoning.
- Add flour to the pan and cook 2 minutes.
- Stir broth or stock to the pot and bring to a boil.
- Add chicken to the broth and stir.
- Place biscuit mix in a bowl.
- Combine with 1/2 cup warm water and parsley.
- Drop tablespoonfuls of prepared mix into the pot, spacing dumplings evenly.
- Cover pot tightly and reduce heat to medium low.
- Steam dumplings 8 to 10 minutes.
- Remove cover and stir chicken and dumplings to thicken sauce a bit.
- Stir peas into the pan, remove chicken and dumplings from heat and serve in shallow bowls.
BUTTERMILK MASHED SWEET POTATOES (RACHAEL RAY)
I am putting together a Weight Watcher's Thanksgiving. I found this on Rachael Ray's Yum-O site. I will be using pure maple syrup as it has less sugar content than the traditional sugars used in sweet potatoes. This sounds great!

- Wash and peel the sweet potatoes, then cut them into 1 1/2-2-inch chunks. Place them into a large pot and cover them with cold water (they should be covered by two or so inches of water so that they cook evenly). Place the pot on the stove, add some salt and turn the heat on high to bring to a boil.
- Once boiling, cook the potatoes for about 8 minutes, until they are tender but not falling apart. Drain the potatoes thoroughly, then pop them back into the pot and place them over medium heat to dry them out a bit. Add the buttermilk, pepper and some salt, to taste.
- Using a potato masher, mash up the sweet potatoes until smooth add syrup and serve them.
BUTTERMILK DRESSING- RACHEL RAY
I saw this recipe on the Rachel Ray show and made with iceberg wedges for our last dinner party. My guest said it was the best "ranch" dressing she had ever had, and couldn't believe I made it myself.....too easy!!!
