1 cup chopped yellow onion
1/2 cup chopped celery
1/2 cup chopped green bell pepper

1 1/2 pounds ground beef
1/2 pound ground pork
1/2 pound ground veal
2 eggs
1/2 cup heavy cream
1/4 cup ketchup
2 teaspoons Baby Bam, recipe follows
1 1/2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
2/3 cup fine dried bread crumbs
1/2 cup ketchup
2 tablespoons light brown sugar
1 teaspoon Worcestershire sauce
1/4 teaspoon Emeril's Hot Sauce or other red hot sauce, optional
2 teaspoons garlic powder
1 teaspoon ground black pepper
1 teaspoon dried oregano
3 tablespoons paprika
1 teaspoon dried basil
2 tablespoons salt
1 teaspoon dried thyme
2 tablespoons dried parsley
1/2 teaspoon celery salt
2 teaspoons onion powder

Steps:

  • Position rack in center of oven and preheat the oven to 350 degrees F.
  • Heat the vegetable oil in a skillet over medium heat. Add the onion, celery, bell pepper, garlic, salt, basil, thyme, and black pepper. Cook, stirring, until the onions are soft and lightly golden, about 6 minutes. Remove from the heat and set aside to cool.
  • In a large mixing bowl, combine the ground beef, pork, and veal with a wooden spoon or with clean hands. Be sure to wash up afterward.
  • In a medium mixing bowl, combine the eggs, heavy cream, ketchup, Baby Bam, Dijon mustard, and Worcestershire sauce, and whisk to combine. Add the egg mixture to the meat mixture along with the cooled vegetables and bread crumbs. Mix with your hands or a wooden spoon until thoroughly combined.
  • Transfer the mixture to a 9 by 5 by 3-inch loaf pan. Using your fingers or the back of the wooden spoon, smooth the top into a rounded loaf shape. Wash hands again.
  • To make the glaze, combine the ketchup, brown sugar, Worcestershire, and hot sauce, if desired, in a small bowl. Stir to blend. Spread the mixture evenly over the top of the meatloaf. Bake the meatloaf for 1 hour and 15 minutes.
  • Using oven mitts or pot holders, carefully tilt the pan away from you and drain off the excess grease from the pan, An adult should help you here. Be careful, hot grease can really burn. Slice to serve.
  • Place all the ingredients in a mixing bowl. Stir well to combine, using a wooden spoon.
  • Store in an airtight container for up to 3 months.

85g pack sage & onion stuffing mix
1 beef stock cube
8 rashers smoked streaky bacon
500g pack beef mince (avoid very cheap packs; use one with less than 20% fat)

Steps:

  • Heat oven to 180C/160C fan/gas 4 and oil the inside of a 900g loaf tin. Tip the stuffing mix into a bowl, crumble in the stock cube and pour over 300ml boiling water. Give it a good stir, then set aside.
  • Stretch the bacon rashers a little by running the back of a spoon along their length, then use 6-7 to line the base and longest sides of the tin. Chop the rest.
  • Mix the chopped bacon and mince into the stuffing with some black pepper, then press into the bacon-lined tin and bake for 40 mins until firm. Turn out and serve sliced.

Steps:

  • Adjust oven rack to center position. Preheat oven to 325 degrees. Line a rimmed baking sheet with parchment paper. Set aside.
  • Combine the croutons, black pepper, cayenne pepper, chili powder and thyme in the bowl of food processor. Pulse until the mixture is a fine crumb. Pour crumb mixture into a mixing bowl. Add onion, carrot, garlic and red pepper to food processor and pulse until the vegetables are finely chopped (Don't over-pulse-since we don't want to go as far as puree). Add the chopped vegetables, chuck, sirloin and salt to the breadcrumbs and combine. Mix in the egg and combine thoroughly, but don't squeeze the meat.

  • Meanwhile, make the topping by combining ingredients in a small mixing bowl. After meatloaf has baked 10 minutes, remove it from oven and brush the ketchup mixture over top and sides. Place back in oven and bake until cooked through, about 55-65 minutes, or internal temperature reaches 155 degrees. Cool for 10 minutes before serving.

We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

1/3 cup milk
3 tablespoons Worcestershire sauce
Kosher salt
1/4 cup olive oil
1 large onion, chopped

2 pounds 80/20 ground beef chuck
1/2 cup panko

Steps:

  • Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
  • Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
  • Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
  • Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
  • Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.

1/3 cup ketchup
1 tablespoon Worcestershire sauce
2 teaspoons salt

3 tablespoons unsalted butter
1/4 medium white onion, finely chopped (about 1/2 cup)

1 1/4 cups beef or chicken stock
1/2 cup heavy cream

Steps:

  • Preheat the oven to 350°F. Line a baking sheet with aluminum foil and set aside.
  • Transfer breadcrumbs to a small bowl and stir in the milk. Set aside for about 5 minutes.
  • In a separate large bowl, combine the beef, pork, onion, garlic, egg, ketchup, Worcestershire sauce, salt, and pepper with your hands.

  • Reduce the heat to low and stir in the cream. Cook for another 2 to 5 minutes to slightly thicken the mixture.
  • Season with the remaining salt and black pepper, and serve with the meatloaf.
