TENDER AND EASY BUTTERMILK WAFFLES

Tender and Easy Buttermilk Waffles image

An easy waffle recipe that results in a nice crisp outside, and tender middle waffle. I love the results this gives while not having to separate the eggs and take time to whip egg whites! These will also reheat in the toaster for a quick work day breakfast.

BUTTERMILK & BROWN BUTTER WAFFLES

Buttermilk & Brown Butter Waffles image

This waffle recipe gets a deep and delicious flavour from first browning the butter. The recipe is from chow.com. I think it might work for pancakes too. TIP: To make these even fluffier, separate the yolks and whites. Put the yolks in as normal. When all other ingredients are combined, beat the whites until fluffy and fold into the batter.

Time 25m

Yield 8 large (5-ounce) waffles

Number Of Ingredients 11

12 tablespoons unsalted butter (1 1/2 sticks)
3 cups all-purpose flour
1/4 cup packed light brown sugar
1 tablespoon baking powder
2 teaspoons kosher salt or 1 teaspoon table salt
6 large eggs
3 1/2 cups well-shaken low-fat buttermilk
1 tablespoon vanilla extract
melted butter or canola oil, for brushing the griddle
maple syrup, for serving
plain yogurt, for serving

Steps:

  • Melt butter in a medium frying pan over medium-low heat and cook until it browns and emits a toasted smell (the butter should be golden brown but not burnt), about 5 minutes. Remove butter from the pan and let cool to room temperature.
  • Whisk together flour, brown sugar, baking powder, and salt in a large bowl to aerate and break up any lumps; set aside. Whisk together cooled brown butter, eggs, buttermilk, and vanilla extract in a separate bowl until evenly combined. Pour buttermilk mixture into flour mixture and stir until dry ingredients are just moistened through.
  • Heat the waffle iron to medium according to the manufacturer's instructions. Once heated, brush the iron with butter or oil, fill it with batter, close the lid, and cook until waffles are golden brown, about 4 minutes for Belgian style. Serve immediately with maple syrup and a dollop of plain yogurt.

THE BEST BUTTERMILK WAFFLES

The Best Buttermilk Waffles image

In creating this recipe, we tried out many different methods-folding in egg whites, milk versus buttermilk, a yeasted batter. But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. Finally, we kept the sugar to a minimum, making these the perfect foil for sweet toppings like maple syrup, berries or jam.

Time 40m

Yield about 6 waffles

Number Of Ingredients 11

1 3/4 cup all-purpose flour (see Cook's Note)
2 tablespoons granulated sugar
1 3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 3/4 cup well-shaken buttermilk
2 large eggs
2 teaspoons vanilla extract
1 stick unsalted butter, melted and slightly cooled
Nonstick cooking spray
Maple syrup, jam, berries or yogurt, for serving

Steps:

  • Preheat a waffle iron to medium-high.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
  • In a medium bowl, whisk together the buttermilk, eggs and vanilla. Whisk the buttermilk mixture into the flour mixture until a batter is formed. Whisk in the butter until incorporated, being careful not to overmix the batter.
  • Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. (Take into consideration that the batter will spread once the lid is closed.) Close the iron and cook until the waffles are a deep golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron has a well-seasoned or nonstick surface, it may not be necessary to spray it between each batch.)
  • Serve the waffles immediately with butter, syrup, jam, berries or yogurt.

BUTTERMILK-BROWN SUGAR WAFFLES

Buttermilk-Brown Sugar Waffles image

This recipe first appeared in The Times in a 2006 article Julia Moskin wrote about wedding registries and what items couples should (and shouldn't) include on theirs. A cookware set? No. Better to buy pieces individually according to a couple's needs. A waffle iron? Why yes, if there's any chance of children. These waffles are light, crisp and easy to throw together, like traditional waffles, but the buttermilk lends tang and the brown sugar an earthy sweetness. The secret ingredient here is wheat germ. It provides a lovely toothsome texture and crunch.

Time 10m

Yield About 8 waffles

Number Of Ingredients 9

2 eggs
1 3/4 cups buttermilk
1 stick butter, melted and cooled to room temperature
1 3/4 cups all-purpose flour or 1 1/2 cups flour and 1/4 cup wheat germ
2 tablespoons light brown sugar or 1 tablespoon each white and dark brown sugars
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
Nonstick cooking spray or butter

Steps:

  • Whisk eggs, buttermilk and melted butter in a large bowl. In another bowl stir dry ingredients together, then add to egg mixture and whisk just until smooth. Let batter rest briefly.
  • Heat a waffle iron and butter lightly or spray with nonstick cooking spray (even nonstick waffle irons require this step). Ladle batter onto iron (about 1/4 cup for an 8-inch round iron), close, and cook just until light golden brown. Serve immediately.
