BUTTER TOFFEE BARS
Steps:
- Heat oven to 325°F.
- Combine sugar and butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg yolk; continue beating until well mixed. Add flour; beat at low speed until well mixed.
- Press evenly onto bottom of ungreased 15x10x1-inch baking pan. Bake 22- 25 minutes or until lightly browned. (Bars will be soft.)
- Sprinkle immediately with chocolate chips; let stand 3 minutes. Swirl chips slightly with table knife or back of spoon. Sprinkle with toffee bits.
- Cool 1 hour; cut into bars with sharp knife while slightly warm.

Family and kids first, on Christmas Eve my sister was talking about them and said she had the recipe, so I figured holidays, family, neighbors, great time to bring back some old memories and I made them. Well they came out...

Steps:
- 1. Crust. Cream butter; add brown sugar & cream well. Add flour to creamed mixture and work it into a dough with your hands. Pat into an ungreased 9" sq. pand and bake 10 mins. in oven at 350.
- 2. Topping. Beat egg whites until light, then stir in brown sugar & mix well. Add vanilla. Set aside. Sift flour, baking powder & salt together and stir into the brown sugar mixture. Beat until smooth. Add nuts & coconut, mix well. Spread evenly over slightly cooled baked bottom layer in the pan. Bake 25 mins. in oven at 350. Cool & cut into squares.
- 3. Can double & bake on a cookie sheet about 1 1/2 inch deep. This is how I make them...
TOFFEE NUT BARS, A VINTAGE RECIPE
A great bar cookie recipe, not gooey or chewy. There is a chopped nut base, then a crumb layer, then a thin spongy spicy cake-y layer. The amounts of spices can be adjusted to your taste. These work pretty well for me. From the archives in my collection. My daughter requested these, reminding me that I used to make them a lot. Things do get mislaid, though. And/or forgotten. Naaahhhh, who forgets anything at my age?!

Steps:
- Mix together as for pie crust: the sugar, brown sugar, flour and butter.
- Sprinkle bottom of 11 x 15 pan ungreased with 1 cup chopped nuts, then with 2 cups of above mixture.
- Beat together the remaining ingredients.
- Stir into flour mix. Pour over mix in pan, spreading gently and evenly.
- Bake in a 350 oven 35-40 minute.
- Cut into as many bars as desired.

TOFFEE BARS
My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

- Preheat the oven to 350 degrees F.
- In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
- Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.

SWEET AND SALTY DOUBLE NUT TOFFEE BROWNIE BARS
Steps:
- Preheat oven to 350 degrees F. Line an 8-inch square metal cake pan with parchment.
- In large bowl, whisk together 4 tablespoons melted butter and the melted chocolate. Blend in granulated sugar, 1/4 cup brown sugar, and vanilla. Whisk in egg. Then stir in flour. Spread in pan and bake for 15 minutes, remove and leave oven on.
- Heat 1/2 cup butter and 3/4 cup of the brown sugar in a medium saucepan over medium-high heat. Boil for 2 minutes. Pour over brownie base and bake 7 minutes more. Remove from oven and sprinkle with milk chocolate, let sit 5 minutes, and spread to cover the top. Dust with ground almonds and then pecans. Sprinkle with salt. Press down pecans. Cool, then freeze 30 minutes before cutting. Serve at room temperature.

- Preheat oven to 375°. Line a 13x9-in. baking pan with foil, letting ends extend over sides by 1 in. Grease foil with 1 tablespoon butter., In a large bowl, whisk flour, sugar, baking powder and salt. Cut in the remaining butter until mixture resembles coarse crumbs. A wonderful, graham cracker based chocolate toffee bar that will delight your taste buds! I'm still trying to discover who brought these to our office Cookie Swap party! They were kind enough to share the recipe, so I'm sharing it as well. The version I had was with nuts, so I don't even know if there was any toffee in it!

- Preheat oven to 400 degrees F.
- LIne a 10x15-inch baking pan with foil.
- Arrange graham crackers in a single layer in the prepared pan.
- Combine the butter and brown sugar in a saucepan. Bring to a boil.
- Boil for exactly 3 minutes, stirring occasionally. Drizzle over the graham crackers.
- Bake in preheated oven for exactly 5 minutes. Remove from the oven. Sprinkle with the chocolate chips. After 1 minute, spread with a buttered spatula. Sprinkle with the toffee chips.

- Preheat oven to 375°.
- Butter a 13x9 baking pan.
- Arrange saltines right side up in a single layer in pan.
- Melt butter and sugar over medium heat.
- Bring to boil, boil 3 minutes stirring occasionally.
- Remove from heat.
- Stir in vanilla.
- Pour over crackers, spread evenly with spatula.
- Bake for 5 minutes, if crackers move, rearrange with a fork.
- Cool for about 10 minutes.
- Sprinkle chocolate morsels over top.
- Let stand about 5 minutes the evenly spread over top.
- Cool completely, then cut in 2x1 inch bars.
- Place a pecan half over each piece.
- Store in refrigerator.
DELICIOUSLY EASY TOFFEE-NUT BARS
I found this in a Hershey's cook book and decided to try it not knowing if i really liked toffee- they were amazing. I was so suprised how easy this recipe was. My dad told me that i wasn't allowed to make them anymore because they were so good. =] I used a half cup of walnuts and a half cup of pecan and it turned out great!
