Super simple meatless butterbeans that are tender and sweet. Vegetarian or vegan recipe (depending on the butter you choose).

Steps:
- Place beans, water, black pepper, butter, and bay leaf in IP. Lock lid, close vent, and set manual time for 7 minutes on high pressure.
- Once cook time is complete, quick-release the pressure.
- Open lid and add salt. Mix well, then allow to sit for at least 10 minutes on warm setting.
- Serve and enjoy!

Steps:
- Place butter beans in the Instant Pot, add onion, garlic, celery, red bell pepper, thyme, smoked paprika, cayenne pepper.
- Add water or vegetable broth, vegan bouillon cube, Bragg's Liquid Aminos, and hickory liquid smoke.
- Turn your Instant Pot on. Place lid on the Instant Pot and close the lid. Turn the knob to the sealing position.
- Press Manual setting and cook on High Pressure for 25 minutes.
- Allow to naturally release pressure for about 20 minutes.
- Remove the lid, if your butter beans have too much liquid.
- Turn off the Instant Pot and turn it on again, press the Saute mode, and allow to cook until it has reached the desired thickness. Mash some of the beans.

- Place beans, garlic, oil, salt, and rosemary (if using) in Instant Pot. Cover with 10 cups cold water. Seal lid and cook at high pressure 14 minutes.
- Release pressure manually. If some beans are still slightly undercooked, stir, cover, and use the Keep Warm function until cooked through.
- Do Ahead: Beans can be cooked 5 days ahead. Chill in cooking liquid in airtight containers, or freeze in cooking liquid up to 3 months.

- Turn Instant Pot on saute mode and add the vegetable oil. Add in smoked ham, red onion, and garlic, and saute for 3-5 minutes, stirring every 30 seconds to minute.
- Turn off the saute mode and add in butter, seasonings, beans, ham hocks, and liquid.
- Close the lid on Instant Pot and set the pressure valve to sealing.
- Set a high-pressure cooking time of 25 minutes, and allow for a natural pressure release of 15 minutes at the end of the cooking time, before releasing the rest of the pressure.
