BRISKET 'N' BEAN BURRITOS



Brisket 'n' Bean Burritos image

This easy recipe is stuffed with not one, but two kinds of meat: smoky bacon and tender beef brisket. -Ruth Weatherford, Huntington Beach, California

2 pounds fresh beef brisket
1 cup chopped onion
3 bacon strips, diced
1 can (8 ounces) tomato sauce
3/4 teaspoon pepper
1/4 teaspoon salt
1 can (16 ounces) refried beans
1/2 cup salsa
1 can (4 ounces) chopped green chilies
1-1/2 cups shredded Monterey Jack cheese
10 flour tortillas (10 inches), warmed

Steps:

  • Place brisket in a 5-qt. slow cooker; top with onion and bacon. Combine tomato sauce, pepper and salt; pour over meat. Cook, covered, on low until meat is tender, 4-1/2 to 5 hours. , In a microwave-safe bowl, combine refried beans, salsa and chilies. Microwave, covered, on high until heated through, 2-3 minutes., Remove meat from slow cooker; when cool enough to handle, shred with 2 forks. Layer bean mixture, meat and cheese off-center on each tortilla. Fold bottom and sides of tortilla over filling and roll up. Serve immediately., Freeze option: Individually wrap burritos in foil and freeze in freezer container. To use, partially thaw overnight in refrigerator. Preheat oven to 350°. Bake foil-wrapped burritos on a baking sheet until heated through. To reheat one burrito, remove foil and rewrap in damp paper towel; microwave on high until heated through, turning once. Let stand 15 seconds. May be frozen up to 2 months.

1 large baking potato
2 tablespoons vegetable oil, such as safflower
3/4 pound ground beef
1 onion, chopped
1 jalapeno chile, finely chopped
1 can (14 ounces) chopped tomatoes with juice
1 1/2 teaspoons ground cumin
2 teaspoons paprika
Coarse salt
4 flour tortillas (10-inch)
1/4 cup sour cream
1/2 head iceberg lettuce, shredded
1/4 cup grated Monterey Jack
1/4 cup fresh cilantro (optional)
1 lime, plus wedges for garnish

Steps:

  • Peel potatoes; cut into 1/2-inch dice. In a large saucepan, heat oil over medium heat. Add potato; cook, stirring occasionally, until golden brown, about 6 minutes.
  • Add beef, onion, and jalapeno; cook, breaking up meat with a spoon, until beef is thoroughly browned, about 4 minutes. Add tomatoes and juice, cumin, paprika, and 1 teaspoon salt; cook until liquid has evaporated, about 6 minutes.
  • Heat tortillas, one at a time, in a dry skillet over medium-high heat, turning once, until lightly browned, about 10 seconds.
  • Leaving space on bottom and sides, layer tortillas with sour cream, lettuce, beef mixture, cheese, and cilantro, if using; squeeze lime juice on top. Fold bottom upward, covering filling by 2 inches. Fold each side to overlap, leaving the top end open. Serve garnished with lime wedges.

6 tablespoons olive oil
2 potatoes, cut into 1/2-inch cubes
1 onion, sliced
4 flour tortillas
1/2 cup salsa
1/4 cup ranch dressing
3 ounces cheddar cheese, thinly sliced

Steps:

  • Slowly cook the onions in 3 T of oil on medium-low heat until they are soft and brown, about 20 minutes.
  • Microwave the potatoes on high for 2 minutes to soften.
  • Heat the remaining 3 T of oil over medium-high heat. Cook the potatoes in batches so they are in a single layer, about 10 minutes each, or until they are slightly browned, flipping frequently. Sprinkle with salt and pepper.
  • Put slices of cheese on a tortilla and microwave for 20 seconds, or until cheese is melted. Top with 1/4 of the onions, potatoes, salsa, and ranch dressing. Add guacamole and/or sour cream if desired. Roll up into a burrito and enjoy. Repeat for other tortillas. But don't eat them all yourself; you'll die. A good death, but still death. Suit yourself. 5 pounds boneless beef chuck roast, cut into 4 pieces
1/2 cup beef broth
2 tablespoons canola oil
1 medium onion, finely chopped
2 jalapeno peppers, seeded and finely chopped
2 garlic cloves, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1/8 teaspoon salt
1 can (28 ounces) crushed tomatoes in puree
1 jar (16 ounces) salsa verde
Optional: Tortillas, shredded cheddar cheese, sour cream, guacamole, salsa and fresh cilantro leaves

Steps:

  • In a 6-qt. slow cooker, combine beef and broth. Cook, covered, on low until meat is tender, 6-8 hours. Remove meat; discard juices. When cool enough to handle, shred with two forks. There was once a time when I had 3 adult roommates, in addition to my husband and daughter, to feed each day. I turned to OAMC in desperation, and this is one of the recipes I came up with. It makes a fantastic lunch and freezes beautifully.

2 lbs ground beef
1/4 cup chili powder (more or less to taste)
2 tablespoons garlic powder
1 onion, chopped
2 1/2 cups frozen southern style hash brown potatoes (the kind that look like cubes)
2 cups shredded cheese
2 cups salsa
1/4 cup TABASCO® brand Chipotle Pepper Sauce (or other hot sauce)
10 large flour tortillas

Steps:

  • Mix ground beef, chili powder, garlic powder, and onion together until fully combined. Cook over medium high heat until thoroughly browned, drain. At this point, you can cool and freeze this mixture to put the burritos together another day, or use for tacos or enchiladas, or whatever.
  • Bake hash browns at 350 degrees for one hour.
  • Combine meat mix, hashbrowns, cheese, salsa, and tabasco in a large bowl.
  • Warm tortillas in microwave slightly until pliable.
  • For each burrito, place one cup of mixture on tortilla, roll up and wrap in aluminum foil if you plan on freezing.
  • To reheat, remove foil and microwave for 3 minutes on high.
