It's pasta with a salad on top. A light yet creamy balsamic sauce hugs the noodles. The greens wilt, the tomatoes barely soften, and the cheese melts as the salad and pasta become one.

Number Of Ingredients 13

Balsamic Vinaigrette
1/2 c. olive oil
3 tbsp. balsamic vinegar
squirt of honey
generous pinch of kosher salt
freshly cracked pepper, to taste
Pasta
16 oz. whole wheat fetuccinni
2 large handfuls of spinach/spring mix
2 large handfuls of cherry tomatoes
1/2 c. heavy cream
kosher salt
feta or goat cheese

Steps:

  • Make vinaigrette. Combine all ingredients in a bowl. Whisk well until emulsified (oil and vinegar become one). Set aside. This can be made up to a couple days in advance and stored covered at room temperature.
  • Make pasta. Bring a large pot of water to a boil. Just before the water boils, heavily salt. Add noodles and cook according to the package.
  • Meanwhile, chiffonade (or thinly chop) greens. Half or quarter cherry tomatoes depending on their size. Set aside.
  • Strain pasta reserving a bit of the liquid in the pan (about 1/4 cup or so). I strain pasta in the pan, using a chefs knife to catch the pasta but let the water through.
  • If not already, add pasta back into the pan. Pour balsamic and heavy cream over the pasta. Salt to taste. Turn heat back on to medium high and gently stir noodles until the sauce hugs the pasta, about 2-3 minutes.
  • Plate. Top with greens, tomatoes, and feta (or goat cheese). Serve warm.

Either way, you will get the same rave reviews that I have over the years.

1 lb any type pasta, your preference
1 bunch fresh basil
4 -6 garden fresh tomatoes, diced
1 tablespoon extra virgin olive oil
3 cloves garlic, chopped
1/4 cup good balsamic vinegar
1/4 cup grated parmesan cheese
1 teaspoon sea salt
1/2 teaspoon fresh ground pepper
1 teaspoon oregano

Steps:

  • Prep the tomatoes, garlic, etc-- before boiling the pasta.
  • Boil pasta while making the rest of the dish.
  • Saute garlic in olive oil.
  • Add tomatoes and cover, simmering for 7-10 minutes with the balsamic vinegar and seasonings until tomatoes fall apart.
  • Cut basil leaves and toss all ingredients together, including Parmesan cheese.
  • Serve additional Parmesan on the side, if desired.

1/3 cup balsamic vinegar
3 tablespoons olive oil
1/4 teaspoon pepper
2 garlic cloves, minced
2 teaspoons dry basil
2 teaspoons parmesan cheese
1 1/2 cups small shell pasta, of choice uncooked
3/4 cup broccoli, chopped into small flowerettes
1 red pepper, chopped fine
1 green onion, sliced fine

Steps:

  • Whisk first 6 ingredients together to prepare the dressing mix, set aside.
  • Cook the pasta of your choice.
  • While pasta is cooking, chop broccoli and blanch for 2 minutes.
  • Combine cooked pasta, blanched broccoli, chopped red pepper and sliced green onion.
  • Pour dressing mix on top of pasta mixture; toss to coat.
  • Chill until ready to serve.
  • **Note: Preparation can be accomplished while pasta is cooking, making this a very quick dish**.

1 tablespoon butter
1 medium onion, finely chopped

1 (28 ounce) can crushed tomatoes

A delicious combination of chicken, pasta and tomatoes that can be served warm or chilled for a great meal on a warm summer day! This recipe may look a bit complicated, but I promise you--it is not. Chicken can be cooked on the stove or on a grill. It is great for large family gatherings and does not really need to be served with anything other than a good loaf of bread for sopping up the juices. I hope your family enjoys this as much as mine has.

3 cloves garlic, minced
2 ounces fresh basil leaves
½ cup olive oil
½ cup balsamic vinegar
6 skinless, boneless chicken breast halves
1 tablespoon salt
1 ½ teaspoons ground black pepper
1 pound penne pasta
2 pints grape tomatoes, halved
¼ cup olive oil
¼ cup balsamic vinegar
salt and pepper to taste

Steps:

  • Mince garlic cloves in food processor or blender. Add 1/3 of the basil leaves to the processor, and chop until fine. Pour in 1/2 cup of olive oil, and continue to process until mixture turns light yellow with flecks of basil. Add the balsamic vinegar; process just until combined.
  • Place the chicken breasts in a large zip-top storage bag along with 1 tablespoon salt, 1 1/2 teaspoons pepper, and the contents of the food processor. Squeeze air out of bag and seal. Allow chicken to marinate for 2 hours, or up to overnight, turning occasionally.
  • Preheat the oven to 300 degrees F (150 degrees C).
  • Brown chicken in a large skillet over large heat, about 4 to 5 minutes per side. Transfer chicken to a large baking dish, and place in the oven until cooked through, about 15 to 20 minutes. Remove chicken from oven, slice into 1/4 inch strips, and return to baking dish to absorb cooking juices. Keep warm.
  • While chicken is baking, bring a large pot of water to a boil over high heat. Boil the pasta until cooked through, but still firm to the bite, about 11 minutes. Drain well. Stir the chicken and the juices from the baking dish into the hot pasta.
  • Thinly slice the remaining basil leaves, and place in a large serving bowl along with the tomatoes. Stir in 1/4 cup olive oil, 1/4 cup balsamic vinegar, and salt and pepper to taste. Top basil and tomatoes with the hot pasta, sauce, and chicken; toss to combine.
