The Big Easy's signature banana and caramel dessert-invented at Brennan's in the French Quarter-gets a sweet and inventive update. Wrap baby bananas, available at Asian and Latin markets, in spring roll pastry wrappers, fry, and serve over butter pecan ice cream-topping with caramel rum sauce not optional.

1 cup granulated sugar
8 (8-in.) square spring roll pastry wrappers (such as Spring Home)
1 large egg, beaten
3 qt.s vegetable oil
1 cup packed dark brown sugar
1/2 cup (4 oz.) salted butter
6 tablespoons (3 oz.) rum
2 tablespoons heavy cream
2 teaspoons black pepper
1/2 cup toasted pecan halves
Butter-pecan ice cream

Steps:

  • Prepare the bananas: Place granulated sugar in a shallow pie plate or baking dish. Toss bananas in sugar; shake off excess.
  • Place 4 spring roll wrappers on a work surface with 1 point facing you (so that they look like diamonds). Place 1 banana on each wrapper, 1 inch above bottom point. Carefully begin wrapping banana from the bottom up, keeping the roll as tight as possible. Fold in the sides of the wrapper (like a burrito). Brush 1 inch of top point with some of the beaten egg, and continue to wrap, pressing to secure roll. Repeat with remaining bananas, wrappers, and egg. Place rolls in a single layer on a sheet pan lined with a damp paper towel. Freeze 1 hour.
  • Heat oil to 325°F in a large Dutch oven. Fry banana rolls, 2 or 3 at a time, until golden brown, 6 to 7 minutes. Drain on paper towels.
  • Prepare the sauce: Cook brown sugar and butter in a skillet over medium-high, whisking constantly, until melted and bubbly, 3 to 4 minutes. Tilt pan away from you, and carefully add the rum, whisking until smooth. Remove pan from heat, and stir in cream and pepper.
  • Slice banana rolls in half diagonally. Spoon sauce over top, sprinkle with pecans, and serve with ice cream.

1 stick salted butter
1 cup packed dark brown sugar
1/2 cup heavy cream
2 bananas
1/2 cup chopped walnuts or pecans
1/2 cup dark rum
Dash cinnamon
Vanilla Ice Cream, for serving

Steps:

  • Melt the butter in a heavy skillet over a medium-high heat. Add the brown sugar. Stir together and cook for a minute or two. Pour in the cream and stir it around to combine.
  • Peel the bananas and slice them on the bias inside the peel. Drop the slices into the pan. Next, add the chopped nuts and stir them into the sauce. Then - and this is where you need to be a little careful - stir in the rum. Let it start to bubble, and then carefully use a long lighter to ignite it. (Be sure to have a lid handy in case you need to extinguish the flame.) Let the fire burn and go out (it'll only take about 30 seconds or so), and then stir in the cinnamon at the end. You may also cook the mixture without flambeing it.
  • Spoon it over a couple of scoops of vanilla ice cream and enjoy immediately.
  • Spoon bananas Foster over French toast, waffles or crepes. Substitute peaches, pears or cherries for the bananas. Of course, then it probably wouldn't be considered bananas Foster.

1/4 teaspoon ground cinnamon
Pinch kosher salt
2 large bananas, peeled and halved lengthwise
2 ounces dark or light rum
Zest of 1/2 orange
Vanilla bean ice cream, for serving

Steps:

  • Prepare a grill for medium-high heat.
  • Heat a cast-iron skillet over direct heat. Melt the butter until it begins to brown, then stir in the sugar and cinnamon until the sugar melts. Stir in the salt. Add the bananas in an even layer and cook, turning the bananas once to coat in the sauce, until lightly browned, 1 to 2 minutes per side.
  • Remove the skillet from the heat and add the rum. Light the sauce with a lighter and allow it to flame. Once the flames have extinguished, baste the bananas with the sauce. Add the orange zest. Serve warm over vanilla ice cream.
  • (Alternatively, you can cook the bananas over medium-high heat on a stovetop.)

1/3 cup brown sugar

1/4 teaspoon ground cinnamon
3 tablespoons dark rum
Vanilla ice cream, for serving

Steps:

  • Peel the bananas and slice them about 1 inch thick on a long bias. Heat the sugar, butter and cinnamon together in a medium skillet over medium heat until bubbling. Add the bananas and stir gently to coat. Add the rum and carefully ignite the alcohol with a stick lighter. Step back and let the alcohol burn off. Continue to cook, stirring gently, until the sauce has thickened a little bit and the bananas are slightly softened, 1 to 2 minutes. Divide the bananas and sauce between 2 small bowls. Top with ice cream and serve immediately.

It has a wonderful flavor and looks like you are a gourmet chef. I like the ingredients because they are things that you almost always have on-hand. You can make small ones with small flour tortillas or larger ones with the 10in tortillas.

9 tablespoons brown sugar
3 tablespoons butter
1/4 cup water
2 tablespoons dark rum
3 flour tortillas
2 large bananas
1 teaspoon cinnamon

toothpick, for securing tortilla
2 cups vegetable oil
3 cups vanilla ice cream

Steps:

  • In a small saucepan, bring 6 tablespoons of brown sugar, butter and water to a boil. Stir in liquor; simmer to blend flavors, about 1 minute. Remove from heat and set aside. Place one flour tortilla on work surface. Slice the bananas into coin shaped pieces. Divide the bananas evenly and place in the center of eat tortilla. You may find that the tortillas are easier to work with if you warm them very lighly on a gas stove. Sprinkle the bananas with brown sugar, cinnamon and nuts. Fold to form a burrito and fasten with a toothpick. Repeat until all burittos are filled. Heat oil in a large frying pan over medium heat. When oil is ready, about 5 min, then put burittos in the pan. Put only three at a time if using the small tortillas. Fry, turing once, until golden brown, about 2 minutes on each side. Transfer to a paper towel and blot the oil. Remove the toothpicks and slice in half diagonaly. To serve dish a large scoop of vanilla ice cream on a bowl or salad plate. Put the two buritto halves on each side of the ice cream. It looks nice to stand the side up a little. Spoon desired amount of sauce over the top. Sprinkle with cinnamon and powdered sugar if desired.

2 tablespoons unsalted butter
1/4 cup (1.75 ounces) dark brown sugar
1/4 teaspoon ground allspice
1/2 teaspoon freshly ground nutmeg
1 tablespoon banana liqueur
2 under ripe bananas, sliced in half lengthwise
1/4 cup dark rum
1/2 teaspoon finely grated orange zest

Steps:

  • Melt butter in a 10-inch heavy skillet over low heat. Add brown sugar, allspice and nutmeg and stir until sugar dissolves. Add banana liqueur and bring sauce to simmer. Add bananas and cook for 1 minute on each side, carefully spooning sauce over bananas as they are cooking. Remove bananas from pan to a serving dish. Bring sauce to a simmer and carefully add the rum. If the sauce is very hot, the alcohol will flame on its own. If not, using stick flame, carefully ignite and continue cooking until flame dies out, approximately 1 to 2 minutes. If sauce is too thin, cook for 1 to 2 minutes until it is syrupy in consistency. Add orange zest and stir to combine. Immediately spoon the sauce over bananas and serve. Serve with waffles, crepes, or ice cream.
