1 pound sliced fresh mushrooms
1 tablespoon olive oil
1 tablespoon water
1 tablespoon Dijon mustard
4 whole wheat hamburger buns, split
1/4 cup mayonnaise
4 romaine leaves
1 medium tomato, sliced

Steps:

  • Shape beef into 8 thin patties. Combine the cream cheese, blue cheese and bacon bits; spoon onto the center of 4 patties. Top with remaining patties and press edges firmly to seal. Combine the salt, garlic powder and pepper; sprinkle over patties., Grill burgers, covered, over medium heat or broil 4 in. from the heat on each side until a thermometer reads 160° and juices run clear, 5-7 minutes. , Meanwhile, in a large skillet, saute mushrooms in oil until tender. 2 tablespoons bleu cheese crumbles (recommended: Treasure Cave)
1 1/2 pounds lean ground beef
1/2 cup bleu cheese crumbles (recommended: Treasure Cave)
1/4 cup real bacon pieces (recommended: Hormel)
1 tablespoon Montreal steak seasoning (recommended: McCormick Grill Mates)
Salt and freshly ground black pepper
4 onion rolls, toasted
Lettuce, tomato, onion
Sliced avocado, optional

Steps:

  • For bleu cheese butter:
  • In a small bowl with a fork, smash together butter and 2 tablespoons bleu cheese crumbles; set aside.
  • In a mixing bowl, stir to combine ground beef, 1/3 cup bleu cheese crumbles, bacon pieces, and steak seasoning. Wet your hands to prevent sticking and shape into 4 patties slightly larger than the buns. Cover with plastic and set aside in refrigerator.
  • Set up grill for direct cooking over high heat. Brush and oil grate before cooking. Salt and pepper burgers and place on hot grill. Cook for 4 to 5 minutes per side for medium. Serve hot on toasted onion roll. Spread with bleu cheese butter, lettuce, tomato, onion, and sliced avocado, if using.

1/2 cup shredded Monterey jack
4 slices cooked bacon, chopped
1 pound ground chuck
Kosher salt and freshly ground black pepper
4 large hamburger buns, split
Ketchup, mayonnaise, and mustard, for serving

Steps:

  • Combine the jack cheese and chopped bacon in a bowl. Put the beef in another bowl and season with salt and pepper; use a rubber spatula to mix it in. Flatten 1/4 of the meat mixture in the palm of your hand. Squeeze together about a tablespoon of the cheese and bacon mixture to make a little nugget; put it in the center of the ground beef. Bring up the sides of the patty over the filling, making sure the cheese is completely covered by the meat. Flatten slightly for a nice patty shape. Set them side by side on a platter in the refrigerator while preparing the grill.
  • Place a large grill pan on 2 burners over medium-high heat or preheat an outdoor gas or charcoal barbecue and get it very hot. Brush the grates with oil to keep the burgers from sticking. Grill the burgers for 8 minutes per side for medium. (The USDA recommends cooking ground beef until it is no longer pink and the internal temperature is 160 degrees F.) Remove the burgers to a clean side plate while you toast the buns.
  • Rub the grill rack with more oil and place the buns cut-side down, toast for 1 minute. Serve the burgers with your favorite condiment and any garnish you like, such as lettuce, sliced tomato, onion, and/or avocado.

½ teaspoon ground black pepper
3 tablespoons barbeque sauce
½ teaspoon garlic powder
½ pound bacon, cut into 1/4 inch pieces
1 medium onion, finely chopped
¾ cup shredded Cheddar cheese
6 hamburger buns, split

Steps:

  • In a large mixing bowl, mix together the ground beef, salt, black pepper, barbeque sauce and garlic powder using your hands. Taking a small handful at a time (approximately 1/4 pound), shape into 12 patties. Lay patties out on a cookie sheet and cover with plastic wrap; place patties in the refrigerator.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown, about 5 minutes. Remove bacon from skillet with a slotted spoon and drain on paper towels. 8 slices apple-smoked bacon
2 lbs ground chuck
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
2 teaspoons dried thyme
1 teaspoon crumbled dried sage
1/2 cup crumbled blue cheese
1 fuji apple
4 sesame seed rolls, split and toasted

Steps:

  • Wipe the grate of your grill or your skillet with olive oil before heating over a medium-high flame.
  • Cook the bacon in a dry skillet over medium heat; when done to your like, place on paper towels to drain and set aside.
  • In a medium bowl, combine the ground beef, salt, pepper, thyme and sage; mix well using your hands and form into 8 thin patties; form small craters in the center of half of the patties, leaving an edge of about a quarter inch all the way around and place a scant 2 tablespoons of blue cheese in the center; top each with another patty, pinching the seams together, making sure the stuffing is completely covered.
