CASTLE BURGER BITES
I found this recipe in a Pillsbury Appetizer Cookbook. It is a great addition to casual get-togethers. Kids and adults really enjoy the tiny bites of burger.

Steps:
- Heat oven to 375F.
- Seperate dough into 12 breadsticks.
- Cut each breadstick into 4 pieces; place on ungreased cookie sheet.
- Bake at 375F for 10 to 12 minutes or until lightly browned.
- Immediately remove from cookie sheet; place on wire racks.
- Cool 5 minutes or until slightly cooled.
- Split each in half, keeping tops and bottoms together to form miniature buns.
- Reduce oven temp to 350F.
- Beat egg in medium bowl; add onion, milk, Worcestershire sauce, salt and pepper.
- Stir in bread crumbs.
- Add ground beef; mix well.
- Press ground beef mixture into thin layer in bottom of ungreased 13x9 inch pan.
- Bake at 350F for 14 to 16 minutes or until thoroughly cooked.
- Cut into 48 rectangles (8 strips crosswise and 6 strips lengthwise).
- Fill buns with miniature burgers.
- Place ketchup in small bowl for dipping sauce.
- Serve immediately.

- To make the patties:
- Add into your mixing bowl all the burger ingredients except for the oil.
- Stir thoroughly to combine, then take equal spoonfuls of your mixture and form into a 2 1/2" inch patty. Repeat with remaining meat mixture.
- Heat your oil in a large skillet or griddle over medium heat.
- Cook the patties for 5-6 minutes per side, or until done to your liking.
- Remove from heat and top each patty with cheese and allow it to slightly melt.
- To assemble your burger bites:
- Lay the burger patties onto a board and top each with lettuce and a couple of pickle slices.
- Thread a cherry tomato to a cocktail skewers then insert into the burger bite to hold everything together.
- Repeat with remaining bites.
- Serve immediately and enjoy!

- HEAT grill to medium-high heat.
- MIX first 3 ingredients just until blended; shape into 8 (3-inch) patties.
- GRILL 3 to 5 min. on each side or until done (165 degrees F). Top with cheese; grill 1 min. or until melted. Meanwhile, grill buns, cut-sides down, until toasted.
- FILL buns with burgers.
- How to Portion Meat: Use a 1/4-cup (2-oz.) ice cream scoop to portion meat for each patty.

BACON CHEESEBURGER BITES

- Heat a skillet with a lid over medium heat. Add the bacon and cook, turning occasionally, until crisp, about 12 minutes.
- Meanwhile, mix together the ground beef, salt and pepper, Worcestershire sauce and garlic in a small bowl until well combined. Divide the mixture into 6 equal mini patties. Set aside.
- Remove the bacon from the skillet and set aside. Add the burger bites and cook until well browned all over and cooked through, 4 to 5 minutes per side. Add 2 of the quartered pieces of cheese to the top of each bite and cover the skillet with the lid. Allow the cheese to melt, 1 minute. Remove the bites to a plate.
- Tear each bacon piece into bite-size pieces. Start building up the bites by placing a piece of bacon on top of each patty, then a couple of folded leaves of spinach, a couple of pickles, a dollop of your favorite burger condiment, and a half a tomato, securing it all with a toothpick or small skewer. Repeat with the remaining ingredients until all the bites are built, and serve.

Steps:
- Melt white chocolate as directed on package; let stand 30 min., stirring occasionally. Stir in 2 Tbsp. corn syrup until blended. (Mixture will resemble consistency of dry mashed potatoes.) Cover; let stand at least 4 hours or overnight. (It is normal for some cocoa butter to separate out upon standing.)
- Knead white chocolate mixture 3 min. or until smooth and pliable (Mixture will be stiff.) Divide chocolate mixture in half. Knead yellow food coloring and 1 drop red food coloring into one half. Roll out to 9x6-inch rectangle; cut into 24 (1-1/2-inch) squares for the cheese slices, re-rolling scraps as needed.
- Knead remaining red food coloring into remaining white chocolate mixture. Roll out to 7-1/2x5-inch rectangle; cut into 24 (1-1/4-inch) rounds for the tomato slices, re-rolling scraps as needed. Cover "cheese" and "tomato slices" with plastic wrap; let stand at room temperature until ready to assemble "sandwiches."
- Mix cream cheese and cookie crumbs until blended; shape into 24 (1-inch) balls. Flatten to 1-1/2-inch rounds for the burgers. Freeze 10 min. Meanwhile, melt semi-sweet chocolate as directed on package.
- Dip "burgers" in chocolate; place in single layer in shallow waxed paper-lined pan. Refrigerate 1 hour or until firm. Meanwhile, mix water and remaining corn syrup; brush onto tops of 24 wafers for the tops of "buns." Sprinkle with sesame seed. Place coconut in large resealable plastic bag. Add green food coloring; seal bag. Shake to evenly tint coconut to resemble shredded lettuce.
- Place plain wafers, flat-sides up, on serving plate. Cover with remaining ingredients to resemble burgers as shown in photo.
