JACK'S BRUNSWICK STEW

Jack's Brunswick Stew image

Provided by Trisha Yearwood

Categories     main-dish

Time 3h45m

Yield 16 (1 cup) servings

Number Of Ingredients 12

1 pound Boston butt pork roast
1 pound fresh chicken or hen, bone in
1 pound boneless beef chuck roast
1 pound red potatoes, peeled and quartered
2 1/2 teaspoons ground black pepper
1/8 teaspoon ground cayenne pepper
1 small sweet onion, such as Vidalia, chopped
6 cups canned whole peeled tomatoes
3/4 cup ketchup
2 tablespoons Worcestershire sauce
2 1/2 teaspoons salt
32 ounces (4 cups) cream-style white corn

Steps:

  • Place the pork and chicken in a 1 1/2 gallon stock pot with enough water to cover. Cook at a medium simmer for 2 hours, or until the meat is very tender, skimming occasionally. Remove the meat to a bowl and reserve the stock. Meanwhile, in a separate large stockpot, do the same to the beef. Remove the beef and discard the broth.
  • Place the potatoes in a medium saucepan, cover with water and simmer until tender.
  • Remove and discard the bones and skin from all of the cooked meat, pull apart or cut into chunks and process in a food processor or meat grinder until ground. Put 2 pints of the reserved pork and chicken stock into a 1 1/2 gallon stock pot, reserve the rest for another use. Add the ground meats to the stock. Dissolve the black pepper and the cayenne pepper in 1 tablespoon water, and add to the stew.
  • Add to the onion and tomato to the food processor, process well and add it to the meat mixture with the ketchup and Worcestershire sauce. Process in the food processor the cooked potatoes, then add to the stew, stirring until any lumps are removed. Stir in the salt. At this point, the stew should be soupy not watery. If the stew is too thick to stir easily with a flat spatula or pancake turner, thin it slightly with more reserved pork and chicken stock. Cook for 30 minutes, stirring constantly.
  • Puree and add the corn, then continue to cook the stew over very low heat for 1 hour, stirring often and scraping the bottom of the stock pot with a flat spatula or pancake turner to avoid scorching.

TENDER PORK STEW WITH BEANS

Tender Pork Stew with Beans image

Edamame adds a unique twist (and a great nutrition boost) to this delicious, tender pork stew. It makes a great supper on a cold evening. My family absolutely loves this stew and has insisted on having weekly since I first made it. It's just as tasty when served as leftovers. It's also a very adaptable recipe, so it is easy to adjust to suit your family's tastes. I hope you enjoy as much as my family does! Serve with rice!

BAECKEOFFE / LAUNDRY DAY STEW OF BEEF, PORK, AND LAMB

Baeckeoffe / Laundry Day Stew of Beef, Pork, and Lamb image

Provided by Hubert Keller

Categories     Soup/Stew     Christmas     Winter     Christmas Eve     Mandoline

Yield Serves 10

Number Of Ingredients 15

2 medium yellow onions, finely chopped
2 small leeks, white and pale green parts, finely chopped
1 large carrot, peeled and finely chopped
2 or 3 cloves garlic, very finely chopped
2 bay leaves
1 teaspoon whole juniper berries
1 1/2 teaspoons finely chopped fresh thyme
3 tablespoons finely chopped fresh flatleaf parsley
3 cups (one 750-milliliter bottle) dry white wine, such as an Alsatian pinot gris, plus more, if needed, for the pot
1 pound boneless beef chuck roast, cut into 1¼-inch chunks
1 pound boneless pork butt, trimmed and cut into 1¼-inch chunks
1 pound boneless lamb shoulder, trimmed and cut into 1¼ inch cubes
Sea salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil
4 pounds Russet potatoes, peeled

Steps:

  • In a large bowl or very large plastic bag with a secure seal, mix together the onions, leeks, carrot, garlic, bay leaves, juniper berries, thyme, parsley, wine, beef, pork, lamb, 1 1/2 teaspoons salt, and 1 teaspoon pepper. Mix well, seal, and refrigerate for at least 12 hours and up to 24 hours. Mix the meats and marinade occasionally; if they are in a bag, just turn it over once or twice.
  • When ready to cook, preheat the oven to 350°. Smear the olive oil all over the bottom of a 6- or 8-quart Dutch oven.
  • Peel the potatoes if you like; using a mandoline, slice them thinly and season well with salt and pepper. Do not wash the potatoes after slicing. The potato starch thickens the broth. Cover the bottom of the pot with half of them. Strain the solids and meat from the marinade, reserving both separately. Spread the meats and vegetables on top of the potatoes and then top with the remaining potatoes. Carefully pour the reserved marinade over the potatoes. If the liquid does not cover the top of the potatoes, add more wine or water until they are just covered.
  • Cover the pot and bring the stew to a gentle simmer on top of the stove. Place the pot in the oven and bake until the meats are very tender, about 3 1/2 hours. Serve, directly from the casserole, in warm, generously sized soup plates.

BUNKHOUSE CHILI

Bunkhouse Chili image

I found this recipe in a book called "Great American Favorite Brand Name Cookbook" and my husband said it might be the best chili that he has ever eaten. I changed up the recipe by adding tomato paste and chili seasoning mix to give it some flavor that I thought the original was lacking then served it with corn bread for some added sweetness. It's not really a spicy chili because my daughter wouldn't eat it, so we add hot sauce after it's cooked to spice it up a bit. Add enough to fit your individual tastes.

Categories     Winter

Time 2h20m

Yield 8 cups

Number Of Ingredients 19

2 lbs lean stewing beef, cut into 1/2-inch cubes
2 tablespoons vegetable oil
1 medium green bell pepper, chopped
1 medium onion, chopped
1 cup chopped celery
2 garlic cloves, minced
1 (16 ounce) can whole canned tomatoes, cut into bite-size pieces (or used petite diced tomatoes, lightly drained)
1 (12 ounce) can beer
1 cup thick barbecue sauce (I used Kansas City style but I would recommend something that's not very sweet)
1 (6 ounce) can tomato paste
1 (1 1/4 ounce) packet chili seasoning mix
1 -2 tablespoon chili powder (I used 3 and it didn't get very spicy)
1 teaspoon dried oregano leaves, crushed
1 teaspoon salt
1/4 teaspoon pepper
2 (15 ounce) cans red kidney beans (I used one of each) or 2 (15 ounce) cans pinto beans, drained (I used one of each)
shredded cheddar cheese
sliced green onion
hot sauce (add to taste to spice it up a bit)

Steps:

  • In Dutch oven or large saucepot, brown beef, on layer at a time, in oil. I set the heat at Medium-High. Remove to a plate when finished.
  • Add green pepper, onion, celery and garlic to skillet; saute until tender-crisp. Add beef back to the skillet.
  • Stir in tomatoes, beer, BBQ sauce, chili powder, oregano, salt and pepper.
  • Reduce heat to Medium-Low. Cover; simmer 1 hour, stirring occasionally.
  • Add kidney beans; simmer, uncovered, 45 minutes, stirring occasionally.
  • Sprinkle with cheese and green onions just before serving.
