- Place bulgur and broth in a small saucepan; bring to a boil. Reduce heat; simmer, covered, until tender, 12-15 minutes. Transfer to a large bowl; cool slightly., For dressing, whisk together citrus juices, minced jalapeno, oil and cumin. Add 1/3 cup dressing to bulgur; stir in carrots and cilantro., To serve, divide bulgur mixture among 4 bowls. Top with beans, corn, cheese and, if desired, sliced jalapeno. Drizzle with remaining dressing.

Wow is this good and so easy! You could easily add a can of drained and rinsed black beans to make a fabulous vegan meal. I left out the mint and loved it. The recipe says feel free to make this a day ahead of time, as it refrigerates well. Recipe originally from Cooking Light July 2009.

- Combine boiling water and bulgur in a large bowl; let stand 45 minutes or until water is absorbed.
- Combine juices and next 4 ingredients (through pepper), stirring well with a whisk.
- Add peach and jicama to bulgur; toss to combine. Also add mint or beans if you are using them.
- Drizzle dressing mixture over bulgur mixture; toss to coat. Chill 1 hour.
- Serve with a sprinkling of almonds and a sprig of mint.

- Bring 2 cups of water to boil along with the salt and pepper. Stir in the bulgur and return to a boil.
- Cover, reduce heat to low and simmer for 20 minutes. Let stand an additional 5 minutes before removing the lid.
- Heat the olive oil in a large skillet, then add the red onion, garlic and ginger. Cook for several minutes over a medium heat, stirring often.
- Add the tomato and stir until almost all of the liquid evaporates.
- Stir in the cumin, coriander, cayenne and turmeric. Cook about 2 minutes, stirring constantly, until the spices become aromatic.
- Add the garbanzo beans and ½ cup water. Cover and simmer over a low heat, stirring occasionally, until a thick sauce develops, about 15 minutes.
- Combine with the cooked bulgur, then stir in the green onions, parsley, cilantro and lime juice.
- Chill several hours or overnight.
- To serve, place 2 lettuce leaves on each serving plate and mound the salad on top. Garnish with lime wedges.
