One 16-ounce bag stuffing cubes
6 tablespoons unsalted butter, plus more for greasing the pan and topping
1 pound fresh sage sausage, casings removed
1 medium onion, chopped
2 cooking apples, such as Gravenstein, Rome, or Golden Delicious, peeled, cored, and chopped
1 to 2 ribs celery with leaves, chopped
Kosher salt
3 cups chicken broth, homemade or low-sodium canned
1/4 cup chopped fresh flat-leaf parsley
1/2 cup walnut pieces, toasted (see Cook's Note)
2 large eggs, beaten

Steps:

  • Preheat the oven to 325 degrees F.
  • Put the stuffing cubes in a large bowl and set aside. Butter a 3-quart casserole dish.
  • Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the sausage and break it up with a wooden spoon. Cook until it loses most of its pink color, but not so much that it's dry, about 5 minutes. Add the sausage and pan drippings to the stuffing cubes. Melt the remaining butter in the pan. Add the onion, apple, celery, and 1/2 teaspoon salt. Cook until the vegetables get soft, about 5 minutes. Add the broth and parsley and bring to a boil.
  • Pour the vegetable mixture over the stuffing cubes and toss until evenly moistened. Mix in the walnuts and eggs. Loosely pack the dressing in the prepared pan and cook uncovered until the top forms a crust, about 40 minutes. Drizzle about 2 tablespoons of turkey pan drippings or melted butter over the top. Cook until the top is crisp and golden, about 20 minutes more.

A nice alternative to a traditional bread-based stuffing. This stuffing requires no baking and can be on your table in 30 minutes. The original recipe comes from a 1991 issue of Eating Well magazine and has been modified to suit my own personal preferences. For example, I prefer a full teaspoon of sage. You should feel free to do the same by adding or subtracting spices to suit you. (WW Core)

2 teaspoons olive oil
1 cup medium grain Bulgar wheat
1 small onion, chopped
2 stalks celery, chopped
1 tart apple, chopped (I use Granny Smiths)
2 garlic cloves, minced
1/2-1 teaspoon dried sage
1/2 teaspoon dried thyme
1/2 teaspoon marjoram
1 3/4 cups vegetable broth or 1 3/4 cups water
1 bay leaf
1 tablespoon fresh parsley, chopped
1 -2 tablespoon fresh sage, chopped (optional)
salt and pepper, to taste

Steps:

  • Heat oil in a medium sized sauce pan, adding the bulgur, onions, celery, and apples.
  • Cook 2 -3 minutes stirring so that the produce begins to soften and the bulgur begins to toast.
  • Add the herbs (sage, thyme, and marjoram) along with the minced garlic and continue to cook 3-5 minutes until the vegetables are softened.
  • Stir in the stock or water along with the bay leaf and bring to a boil.
  • Reduce heat to lowest possible flame, cover and simmer for 15 minutes, until all of the liquid is absorbed.
  • The bulgur will be tender but chewy.
  • Take the bay leaf out.
  • Mix in the chopped fresh parsley and season to taste.

1 stick butter (divided)
6 ribs of celery (diced)
1 large onion (diced)
2 large apples ((I used Honeycrisp), unpeeled and diced)
2 bay leaves
6 cups Pepperidge Farm Herb Seasoned Stuffing
salt and pepper, to taste
2 teaspoons poultry seasoning
4 cups chicken stock

Steps:

  • Preheat oven to 375 degrees F.
  • Melt 6 Tablespoons butter in a large saucepan over medium heat.
  • Add celery, onion, apples, bay leaves and salt and pepper and cook until softened (about 10 minutes). Remove bay leaves.
  • Add dry stuffing, poultry seasoning and chicken stock. Stir until stuffing absorbs the liquid.
  • Spray a casserole dish with nonstick cooking spray and fill with stuffing.
  • Use the rest of the butter to dot the top of the stuffing.
  • Bake for 30-40 minutes, or until golden brown and crispy at the edges.

1/2 teaspoon ground cumin
1 1/2 cups slivered, blanched almonds
1 1/2 cups dried apricots, coarsely chopped
1 1/2 cups raisins
4 cups cooked bulgur
2 teaspoons cinnamon
1/2 teaspoon ground cloves
Salt and freshly ground black pepper to taste

Steps:

  • Melt butter in large skillet. Add onions, coriander and cumin. Cover and cook, stirring occasionally, until onion is translucent, about 10 minutes.
  • Add almonds, apricots and raisins. Cook uncovered, stirring occasionally, until almonds are golden. Transfer to a large bowl.
  • Add bulgur, cinnamon, cloves, salt and pepper, and mix well. Refrigerate stuffing before using.

3 2/3 tablespoons bulgur
2/3 teaspoon extra virgin olive oil
1/4 cup chopped fresh mushrooms
3 tablespoons chopped celery

Steps:

  • In small saucepan, bring chicken broth and salt to boil; add bulgur.
  • Reduce heat; cover and simmer for 20-25 minutes, or until broth is absorbed and bulgur is tender.
  • In small skillet, heat olive oil.
  • Add vegetables and saute until onion is tender but not brown.
  • Add garlic at the last minute or two.

½ pound ground pork breakfast sausage
2 tablespoons butter
½ cup chopped celery
¼ cup chopped onion
1 (4 ounce) can water chestnuts, drained and chopped
1 (12 ounce) package herb-seasoned dry bread stuffing mix
3 apples - peeled, cored and cubed
1 tablespoon chicken broth

Steps:

  • Place ground pork breakfast sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
  • Melt butter in a medium saucepan over medium heat. Stir in celery, onion and water chestnuts. Cook and stir until tender. Remove from heat.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Prepare herb-seasoned dry bread stuffing mix according to package directions. Mix in sausage, celery mixture, apples and chicken broth.
  • Transfer mixture to a medium baking dish. Bake in the preheated oven 30 minutes, or until lightly browned.
