1 1/2 cups bulgur wheat
1/2 teaspoon grated lemon zest, plus 2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 tablespoon chopped fresh oregano
Pinch of sugar
Kosher salt and freshly ground pepper
1/3 cup extra-virgin olive oil
2 Persian cucumbers, thinly sliced
1 cup halved grape tomatoes
1/2 small red onion, thinly sliced
1/2 cup halved pitted kalamata olives
4 ounces herb-marinated feta, crumbled
1/4 cup torn fresh mint
1/4 cup torn fresh parsley
4 to 6 pepperoncini

Steps:

  • Pour 3 cups boiling water over the bulgur in a large bowl. Cover tightly with plastic wrap and let sit until tender, about 20 minutes. Drain and let cool.
  • Meanwhile, make the dressing: Whisk the lemon zest and juice, vinegar, oregano, sugar and a pinch each of salt and pepper in a large bowl until smooth. Slowly whisk in the olive oil. Add the cucumbers, tomatoes, red onion and olives; season with salt and pepper and toss. Let sit 20 minutes.
  • Add the bulgur, feta, mint and parsley to the vegetables. Season with salt and pepper and toss. Top each serving with the pepperoncini.

1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
2 cups halved cherry tomatoes
1 cup chopped cucumber
8 green onions, sliced
1 package (4 ounces) crumbled feta cheese
1/2 cup pine nuts, toasted

Steps:

  • In a large saucepan, bring broth and bulgur to a boil over high heat. Reduce heat; cover and simmer for 20 minutes or until tender and broth is almost absorbed. Remove from the heat; let stand at room temperature, uncovered, until broth is absorbed. , In a small bowl, whisk the oil, lemon juice, parsley, salt and pepper. , In a large serving bowl, combine the bulgur, beans, tomatoes, cucumber and onions. Drizzle with dressing; toss to coat. Sprinkle with cheese and pine nuts.

Olive oil, for drizzling
1 cup bulgur wheat
1 cup chopped sour cherries
2/3 cup finely chopped fresh parsley
2/3 cup finely chopped toasted walnuts
1/2 cup finely chopped red onion
1/2 cup finely chopped fresh dill
1/4 cup extra-virgin olive oil
2 tablespoons lemon juice
2 cloves grated garlic
1/2 cup crumbled feta

Steps:

  • Add 2 cups water to a medium saucepot. Season with salt and drizzle in some olive oil, then stir in the bulgur. Bring a boil over high heat, then cover, lower to a simmer and cook until the grains are tender, about 1 hour. Allow bulgur to come to room temperature.
  • Combine the bulgur wheat with the cherries, parsley, walnuts, red onion and dill in a large bowl, reserving about 1 tablespoon of each herb for garnish. Gently mix to combine. Add the extra-virgin olive oil, lemon juice and grated garlic and season to taste. Transfer to a serving bowl and garnish with feta, reserved herbs and a drizzle of olive oil.

1 cucumber, peeled, seeded, and finely chopped
1 small red onion, finely diced
1 cup (packed) chopped fresh flat-leaf parsley
1 clove garlic, minced
3 tablespoons fresh lemon juice
1 tablespoon olive oil
Coarse salt and ground pepper

Steps:

  • In a large bowl, pour 1 cup boiling water over the bulgur. Cover with plastic wrap; let stand until water is absorbed, about 30 minutes.
  • Add cucumber, onion, parsley, garlic, lemon juice, oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper; toss to combine. Serve warm, cold, or at room temperature. (To chill, cool, then refrigerate in an airtight container for up to 1 day.)

This is a nice light salad for hot days. This salad is very similar to couscous, but the main ingredient is bulgur and here the sour taste is given by pomegranate molasses.

160 g bulgur
250 ml boiling water (salted)
2 green onions, chopped
1 garlic clove, minced
1/2 red onion, minced
1 tablespoon tomato paste
1 red bell pepper, minced
2 tablespoons pomegranate molasses
1 -2 teaspoon of fresh mint, chopped
1/2 cup parsley, chopped
1 teaspoon paprika
4 tablespoons olive oil

Steps:

  • Poor boiling water over bulgur, cover and let soak for 15 minutes.
  • In the meanwhile prepare all the other ingredients.
  • Transfer bulgur in a cold bowl and add tomato paste to bulgur and mix well with the fork until incorporated.
  • Add red peppers and let cool down at least 10 minutes.
  • Add all remaining ingredients mix with the fork.
  • Taste the bulgur and add more pepper, salt or molasses if you want some more.
  • Serve cold or chilled.
  • Note: Feel free to add more ingredients like olives, tomato cubes, cucumber, and/or what your like.

  • Cook 3/4 cup bulgur as the label directs.   • In a medium bowl cover bulghur with 6 cups boiling water. Let stand until wheat is expanded and fluffy, about 2 hours. Drain well in a fine sieve; return to bowl.
  • Add carrot, onion, parsley, lemon juice, oil, salt and pepper. Toss to combine. Taste and adjust for seasoning. Serve immediately.

1 cup French lentils
3 1/2 cups water
1 cup Bulgar wheat, finely cracked variety
3/4 cup walnut pieces, toasted
1/3 cup extra virgin olive oil
2 tablespoons lemon juice, freshly-squeezed
2 tablespoons garlic-flavored red wine vinegar
1 garlic clove, crushed
1 teaspoon salt
1/4 teaspoon black pepper
1 small red bell pepper, seeded and finely chopped
1 small green bell pepper, seeded and finely chopped
1 small red onion, finely chopped
2 stalks celery, finely chopped
10 radishes, finely chopped
1/2 cucumber, seeded and finely chopped
10 sprigs parsley, stems removed, finely chopped

Steps:

  • Place lentils in a sieve, and rinse thoroughly.
  • Transfer lentils to sauce pan with 2 1/2 cups water and bring to a boil.
  • Reduce heat to low and simmer for 30-45 minutes, until lentils are tender but not mushy.
  • Lentils should hold their shape. While lentils are simmering, place the bulghur wheat in a bowl.
  • Boil the remaining cup of water and pour over the bulghur wheat. Cover and let stand until all water has been absorbed, about 15 minutes.
  • Fluff bulghur wheat with a fork.
  • When the lentils are done, pour off any remaining liquid and let the lentils cool.
  • Heat an iron-cast skillet over high heat. Add walnut pieces and stir them constantly with a wooden spoon until they begin to brown.
  • Turn off the heat and set aside. In a small bowl, mix olive oil, lemon juice, vinegar, garlic, and salt and pepper with a fork to make a dressing.
  • Place lentils in a large bowl, preferably glass.
  • With a wooden spoon, carefully mix in the bulghur wheat, followed by the chopped vegetables and the toasted walnuts.
  • Pour dressing evenly over the salad, and mix in with a fork.
  • Refrigerate salad at least one hour to allow the flavors to blend.
  • Suggestions French lentils are small, dark-green lentils that can be found in most health food stores.
  • If they are unavailable, substitute brown lentils.
  • Bulghur wheat can also be found in health food stores and ethnic groceries.
  • It comes in several different degrees of coarseness.
  • For this recipe, the finely cracked variety is preferred.

200g bulgur wheat
150g frozen edamame (podded)
2 Romano peppers , sliced into rounds, seeds removed
150g radishes , finely sliced
75g whole blanched almonds
small bunch mint , finely chopped
small bunch parsley , finely chopped
2 oranges
3 tbsp olive oil

Steps:

  • Cook the bulgur following pack instructions, then drain and tip into a large serving bowl to cool. Meanwhile, put the edamame beans in a small bowl, pour over boiling water, leave for 1 min, then drain. Put in a serving bowl with the peppers, radishes, almonds, mint and parsley.
  • Peel one orange, carefully cut away the segments and add to the bowl. Squeeze the juice of the other into a jam jar with the oil. Season well and shake to emulsify. If you're following our Healthy Diet Plan - separate the salad into four bowls or lunchboxes, pour half of the dressing onto the two portions being eaten today and store the remainder in the fridge for a later day. The salad will keep in the fridge for 2 days.
