These slightly spicy burgers have a great Buffalo flavor!

1/4 cup hot chili sauce (like Frank's Redhot)
1 teaspoon garlic powder
1 teaspoon kosher salt
2 tablespoons milk
1 1/4 pounds ground turkey
1/2 cups bread crumbs
2 tablespoon blue cheese crumbles (or more to taste)
6 cheese slices
6 hamburger buns
your choice of condiments (mayo, lettuce, tomato, pickles, etc.)

Steps:

  • In a large bowl, stir together hot sauce, garlic powder, salt, and milk. Add ground turkey and bread crumbs and stir well to combine. Gently stir in blue cheese.
  • Divide meat into six balls, and shape into patties.
  • Heat a skillet over medium-high heat, and spray with cooking spray. Add burger patties to skillet and cook for approximately 7 minutes on each side, until brown and cooked through.
  • Melt a slice of cheese over the tops of the burgers in the last couple minutes of cooking if desired.
  • Dress buns with condiments of your choice, add a burger patty to each bun, and enjoy!

1 1/2 cups broccoli slaw
1/4 cup skinny blue cheese dressing
1.25 lbs 93% lean ground turkey
2/3 cup grated carrots (grate in food processor)
1/4 cup seasoned whole wheat breadcrumbs
1 clove garlic (grated)
1 tbsp red onion (grated)
1/4 cup Franks Hot Sauce
salt and fresh pepper
oil spray
5 slices reduced fat cheddar
5 whole wheat burger buns (I used Martin's 100 calorie Potato Whole Wheat Buns)

Steps:

  • In a medium bowl combine broccoli slaw and skinny blue cheese dressing. Set aside.
  • In a large bowl, combine ground turkey, carrots, breadcrumbs, garlic, onion, hot sauce, salt and pepper. Makes 5 equal patties, 5.5 oz each.
  • Heat a large skillet on high heat. When hot, lightly spray the oil. Add burgers to the pan and reduce the heat to medium-low.
  • Cook on one side until browned 4-5 minutes, then flip.
  • Cook another 4 minutes or until burgers are cooked all the way through (keep heat medium-low to prevent burning); top with cheese and place on a toasted burger buns topped with broccoli slaw.
  • If grilling, clean grill well before cooking and spray with oil spray to prevent sticking.

2 pounds 99%-lean ground turkey
1 small onion, minced
½ cup panko bread crumbs
¼ cup Buffalo wing sauce
¼ cup chopped fresh parsley
1 egg
3 cloves garlic, minced
½ teaspoon celery seed
¼ teaspoon ground black pepper
1 pinch cayenne pepper
1 pinch paprika
1 teaspoon salt
12 slices Monterey Jack cheese
12 hamburger buns, split
6 tablespoons ranch dressing, or to taste
6 tablespoons Buffalo wing sauce, or to taste

Steps:

  • Preheat a George Foreman® Grill or an outdoor grill for medium-high heat.
  • Mix ground turkey, onion, panko, 1/4 cup Buffalo wing sauce, parsley, egg, garlic, celery seed, black pepper, cayenne pepper, paprika, and salt together in a large bowl; form into 12 patties.
  • Grill patties on the grill for 3 minutes, flip and continue grilling until cooked through, about 2 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Top each burger with a slice of Monterey Jack cheese and place each inside a bun.
  • Mix ranch dressing and 6 tablespoons Buffalo wing sauce together in a bowl; spread onto each burger.

1 lb lean ground turkey
1/2 cup dry breadcrumbs
1 egg
3 tablespoons hot sauce (a buffalo-style sauce like Frank's RedHot)
1 teaspoon salt
1/4 teaspoon black pepper
3 ounces blue cheese, crumbled
2 tablespoons butter (if frying)
4 hamburger buns, sliced

Steps:

  • Combine meat with breadcrumbs, egg, hot sauce, salt & pepper. Mix well, and form into eight patties of the same size.
  • Divide the blue cheese into four equal portions. Place a portion of the cheese atop one patty, then top with another patty. Fold the patty's edges together so the cheese is hidden in the center. Seal well so nothing leaks out when cooking. Repeat three more times to make four burgers in total.
  • Heat the butter in a skillet of medium-high heat. Cook patties, flipping once, for about 15 minutes.
  • Serve inside buns and top with more hot sauce, if desired. Maybe some sliced red onions, tomato and lettuce as well. I served mine in pitas and topped with baby arugula and hot sauce.

1 small yellow onion, finely chopped
1 tablespoon butter
1 1/2 lbs ground turkey
1 stalk celery, finely chopped
2 tablespoons fresh garlic, minced
1 (1 5/8 ounce) package buffalo, wing seasoning mix
1/2 cup blue cheese, crumbled
4 large kaiser rolls or 4 large potato buns, split and lightly toasted
lettuce
tomatoes, slices
crisp dill pickle
4 tablespoons butter, melted (optional)
1/2 cup bottled hot sauce (optional)

Steps:

  • Prepare your outdoor grill for direct grilling over medium heat.
  • Saute' the chopped onion with butter in a skillet over medium to low heat. Cook until onion begins to brown, approximately 5-7 minutes.
  • In a medium bowl, using your hands, mix together the ground turkey, celery, garlic and buffalo wing seasoning mix, just until blended. Next, mix in the cooked onion. Shape into 6 very flat patties.
  • Brush the grill rack liberally with vegetable or canola oil prior to cooking. Place burgers on hot grill; cook 5 minutes, or just until the meat loses its pink color throughout, turning over once. (Burgers should reach an internal temperature of 170 degrees F.).
  • OPTIONAL: To turn up the flavor and the heat a notch, in a medium bowl, whisk together the hot sauce and melted butter. While the burgers are cooking, baste them liberally with this mixture.
  • On the grill or in a toaster, lighlty toast the rolls/buns. During the last minute of cooking, add the crumbled blue cheese to each burger and cover to melt.
  • To serve, place the lettuce, tomato slices and pickles on the roll/bun bottom; if desired, drizzle the hot sauce and butter mixture over the burger before serving, Cover with roll/bun tops.
  • Cook's Tip: In small bowl, stir mayonnaise (1/4 cup), sour cream (1/4 cup), crumbled blue cheese (1/2 cup), vinegar (2 teaspoons), and Worcestershire (1/2 teaspoon) until blended. This blue cheese sauce makes about 3/4 cup and is a delicious accompaniment to carrot and celery sticks when serving this spicy turkey burger.
  • Cook's Tip: For an added treat when toasting your rolls and buns, combine melted butter with garlic and brush on the insides prior to setting them on the hot grill.

I saw these on Rachael Ray's episode with Kristin Davis. She recommends serving them on kimmelwick (also spelled kummelweck) rolls, Kaiser rolls topped with lots of pretzel salt and caraway seeds. I reduced the amount of grill seasoning and increased from 4 to 6 burgers based on the reviews.

2 lbs lean ground turkey breast
2 -4 tablespoons grill seasoning
1/4 cup buffalo wing sauce
1/4 cup chives, plus extra chopped (to garnish)
1/4 cup parsley, chopped
2 garlic cloves, grated
2 tablespoons olive oil
3 tablespoons butter
3 tablespoons flour
3 cups milk
1 cup blue cheese
salt, to taste
fresh ground pepper, to taste
3 carrots, peeled and cut into sticks
3 stalks celery, cut into sticks
4 kaiser rolls (kimmelwick rolls) or 4 slices rye bread (thick slices)

Steps:

  • In a large bowl, mix the turkey, grill seasoning, hot sauce, chives, parsley and garlic. Form six patties.
  • Heat a large skillet over medium-high heat with two tablespoons olive oil, two turns around the pan. Sauté the burgers about five minutes on each side, until cooked through.
  • In a medium skillet over medium-high heat, melt the butter. Sprinkle the flour over the butter and cook it for about 1 minute. Whisk the milk into the roux and season with salt and freshly ground black pepper. When the milk comes up to a bubble and has thickened, take the pan off the heat and stir the blue cheese into the sauce in a figure-eight motion.
  • To serve, place the top of the roll or a slice of rye bread on a plate, top with the burger. Serve with celery and carrot sticks and a cup of warm, blue cheese dip garnished with some chopped chives alongside. You can also drizzle some buffalo sauce over the top.
