30 -40 chicken wings, cut up two pieces from each wing with the tips discarded
1 -2 bottle Crystal hot sauce (NOT Tabasco!)
1/2-2 cup butter
1/2-1 cup oil (to fry with)
flour (to dust wings before frying)
blue cheese dressing (Ken's Steak House)
celery
carrot

Steps:

  • Cut up wings, rinse and pat wing pieces dry.
  • Dust wing pieces in flour.
  • Heat oil in a large pot or skillet about 1"-2" deep to 375F degrees (Medium to medium high heat).
  • Take wing pieces shake off excess flour put in pot and fry in oil until crispy, about 5 minutes per side (Turn often to keep from burning).
  • Fry in"batches" to keep from over crowding.
  • Drain wings on paper towels on a broiler rack.
  • Keep warm in a 200 degree oven until all wing pieces are done.
  • Make sauce by melting 1 part butter to 2 parts Crystal hot sauce (1 stick butter= 1/2 cup, 1 cup Crystal hot sauce).
  • You can add a dash of vinegar and some cayenne pepper or a dash of Tabasco to make it hotter if you wish!
  • Dip the wing pieces in the sauce and serve with the Celery and Carrot sticks with LOTS of the Blue Cheese Dressing.

½ cup all-purpose flour
¼ teaspoon paprika
¼ teaspoon cayenne pepper
¼ teaspoon salt
10 chicken wings
oil for deep frying
¼ cup butter
¼ cup hot sauce
1 dash ground black pepper
1 dash garlic powder

Steps:

  • In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.
  • Heat oil in a deep fryer to 375 degrees F (190 degrees C). The oil should be just enough to cover wings entirely, an inch or so deep. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving.
  • Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. Serve.

2 pounds chicken wings, split at the joint and tips removed
Kosher salt
4 tablespoons unsalted butter
1/2 cup hot sauce, such as Frank's RedHot
Ranch or blue cheese dressing, for serving

Steps:

  • Spray the basket of a 3.5-quart air fryer with cooking spray and set aside. Pat the chicken wings dry and sprinkle generously with salt. Place the wings in the fryer basket so they are not touching (if necessary to fit, line up the drumettes standing upright along the sides). Set the air fryer to 360 degrees F and cook for 12 minutes, then flip the wings with tongs and cook for 12 minutes more. Flip the wings again, increase the heat to 390 degrees F and cook until the outsides are extra-crispy, about 6 minutes more.
  • Meanwhile, warm the butter in a microwave-safe bowl in the microwave until melted, about 1 minute. Whisk in the hot sauce.
  • Toss the wings with the butter mixture to coat in a large bowl and serve with dressing on the side.

5 tablespoons butter
3 tablespoons red hot sauce
salt, to taste

jack daniel's sizzling smokehouse blend grilling sauce, for basting (I also use Heinz Original #7 Jack Daniel's Grilling Sauce)
1 cup mayonnaise
1/2 cup light sour cream
1 tablespoon heinz spicy brown mustard
3 chipotle chiles in adobo, drained and chopped
1 tablespoon reserved adobo sauce

Steps:

  • Cut the wings in half at the joint.
  • Discard the tips.
  • Place the wings in a bowl.
  • Melt the butter in a saucepan.
  • Add the hot sauce, stirring until well blended.
  • Pour the hot sauce over the wings.
  • Stir thoroughly to make sure that the wings are evenly coated.
  • Let sit for 30 minutes, stirring occasionally.
  • Preheat your grill to medium high heat.
  • Grill the wings, basting with Heinz Original #7 Jack Daniel's Grilling Sauce.
  • Turn the wings occasionally and continue grilling until cooked through and golden brown.
  • Serve with chipotle mayonnaise:.

1 ½kg chicken thighs and drumsticks
180g sea salt flakes
90g soft dark brown sugar
2 tbsp chilli flakes
2 tbsp sweet smoked paprika
1 tbsp ground cumin
1 tbsp sea salt flakes
1 tbsp dark brown sugar
75g butter
125ml hot chilli sauce
1 tbsp maple syrup

Steps:

  • Put the chicken in a big bowl. In a pan, heat 1 litre of water with the salt, brown sugar and chilli flakes. When it's dissolved, add 2 litres of cold water and pour over the chicken. Put in the fridge and leave for at least 2 hrs, but ideally a day or two. When you're ready to cook, take the chicken out of the water and pat dry all over with kitchen paper.
  • Heat oven to 180C/160C fan/gas 4. Put the smoked paprika, ground cumin, sea salt and dark brown sugar on a baking tray. Mix them together, then roll the dried chicken pieces in the spices, making sure everything is covered. Roast the chicken for 1 hr or until crispy and caramelised.
  • Meanwhile, for the sauce, gently melt the butter in a small pan with the hot sauce and maple syrup. When the chicken pieces come out of the oven, drizzle this sauce all over them and give them a shake. Serve with a side of creamed corn.

2 1/2 lbs chicken wings (about 12)
1/4 cup all-purpose flour
1 teaspoon garlic salt
1/2 teaspoon seasoning salt

1/2 teaspoon garlic, crushed
1/4 teaspoon onion powder
2 -3 teaspoons red pepper sauce (to taste)

  • Heat oil in fry daddy or fryer.
  • Cut each chicken wing at joints to make 3 pieces and discard the tip.

1/2 cup Frank's red hot sauce (or 3/4 cup Frank's RedHot Buffalo Wings Sauce)
1/3 cup butter, melted (if NOT using Frank's RedHot Buffalo Wings Sauce)
3 celery ribs, sliced in lengths as for dipping (optional)
1/2 cucumber, sliced (optional)
1/2 cup blue cheese, dip (optional)

Steps:

  • If Frank's RedHot Buffalo Wings Sauce is not available, mix together the Frank's Red Hot Sauce with the butter.
  • Bake wings in foil-lined pan at 500°F on lowest oven rack for 20 to 25 minutes until crispy, turning once. ALTERNATIVELY: Deep-fry at 375°F for 10 minutes; OR broil 6-inches from heat 15 to 20 minutes, turning once; OR grill over medium heat 20 to 25 minutes turning often.

  • Make dressing:
  • In a bowl whisk together mayonnaise and yogurt and stir in blue cheese (dressing will not be smooth). Dressing may be made 8 hours ahead and chilled, covered Cut celery into thin sticks. Soak celery in a bowl of ice and cold water at least 30 minutes and up to 1 hour.
  • Cut off chicken wing tips, reserving for another use, and halve chicken wings at joint.
  • To grill wings:
  • Preheat grill.

  • To deep-fry wings:
  • In a large (5- to 6-quart) deep heavy kettle heat 6 cups oil until a deep-fat thermometer registers 380° F. Just before oil reaches 380°F, pat dry 6 or 7 wings. Carefully lower wings into oil and fry, stirring occasionally, until cooked through, golden, and crisp, 5 to 8 minutes. With a slotted spoon transfer wings to paper towels to drain. Pat dry and fry remaining wings in same manner, returning oil to 380°F between batches.
  • In a large skillet melt butter over moderately low heat and stir in hot sauce, vinegar, and salt to taste. Add grilled or fried wings and toss to coat.
  • Serve chicken wings warm or at room temperature with dressing and celery sticks.

6 ounces blue cheese, crumbled
1 cup sour cream

3/4 cup mayonnaise
1 tablespoon lemon juice

2-3 shakes of hot sauce (recommended: Frank's Red Hot)

Steps:

  • Fill a large 5 to 6-quart heavy pot with 2-inches of oil. Heat over medium heat until a deep fry thermometer registers 375 degrees Fahrenheit. Working in batches, pat 5 to 6 wings dry with VIVA® towels. Gently drop wings into the hot oil. Move them gently in the oil with a spider or slotted spoon so the wings don't stick together. Fry until crispy and golden, about 7 minutes. Remove to a VIVA® towel lined plate and season with salt immediately. Continue with remaining batches. Melt butter over medium heat in a small sauce pan with the hot sauce and lemon juice and a pinch of salt. Pour into a large bowl and add wings. Toss to coat well. Remove celery sticks from water and drain on Viva® towels. Serve chicken wings on a platter with celery sticks and blue cheese dip. 3 garlic cloves, crushed
2 tbsp olive oil
3 tbsp cider vinegar
1 tbsp paprika
1 tbsp Worcestershire sauce
2 tsp celery salt
4 tbsp pepper sauce (we used Frank's hot sauce)
3 tbsp honey
1 ½kg chicken wings, halved at the joint

Steps:

  • In a large bowl, mix together the garlic, olive oil, cider vinegar, paprika, Worcestershire sauce, celery salt, hot sauce, honey and a couple of cracks of black pepper. Add the chicken wings and toss around to make sure they're fully covered in the marinade. If you have time, leave the wings to marinate for a couple of hrs in the fridge or ideally overnight.
  • Heat oven to 180C/160C fan/gas 4. Drain and reserve the marinade, then spread the wings out on a very large baking tray. Bake for 30 mins, then pour off the excess oil, add the reserved marinade and toss well. Increase oven to 200C/180C fan/ gas 6. Return to the oven and cook for a further 30 mins, tossing a few times to coat in the glaze as they cook. They should be sticky and glazed with most of the marinade evaporated. Serve on a large platter alongside other party snacks.

1 pound chicken wings
½ teaspoon salt
½ teaspoon ground white pepper
½ cup butter
½ teaspoon hot pepper sauce
1 cup mayonnaise
4 tablespoons minced onion
3 cloves garlic, minced
⅓ cup chopped fresh parsley
½ cup sour cream
1 tablespoon lemon juice
1 tablespoon distilled white vinegar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large frying pan or deep fryer, heat oil to 375 degrees F (190 degrees C). Fry wings for approximately 8 minutes. Transfer wings to a paper towel and let drain. Season with salt and white pepper. After the wings have drained, place them in a large mixing bowl.
  • In a small saucepan, melt butter or margarine. Stir in hot pepper sauce. Pour mixture over chicken wings, toss to coat the wings. Place wings in a baking dish.
  • Bake 15 to 20 minutes.
  • While the chicken wings are baking, make the blue cheese dressing: In a medium size mixing bowl, combine mayonnaise, onion, garlic, parsley, sour cream, lemon juice, vinegar and blue cheese. 1 small clove garlic, minced
1/4 cup hot sauce

Steps:

  • Place a 6-quart saucepan with a steamer basket and 1-inch of water in the bottom, over high heat, cover and bring to a boil.
  • Remove the tips of the wings and discard or save for making stock. Using kitchen shears, or a knife, separate the wings at the joint. Place the wings into the steamer basket, cover, reduce the heat to medium and steam for 10 minutes. Remove the wings from the basket and carefully pat dry. Lay the wings out on a cooling rack set in a half sheet pan lined with paper towels and place in the refrigerator for 1 hour.

  • Replace the paper towels with parchment paper. Roast on the middle rack of the oven for 20 minutes. Turn the wings over and cook another 20 minutes or until meat is cooked through and the skin is golden brown.
  • While the chicken is roasting, melt the butter in a small bowl along with the garlic. Pour this along with hot sauce and salt into a bowl large enough to hold all of the chicken and stir to combine.
  • Remove the wings from the oven and transfer to the bowl and toss with the sauce. Serve warm.
