2 Tbsp white vinegar
1 tsp garlic powder
1 tsp ground paprika
1 dash ground cayenne pepper (to taste (optional))
1 lb raw chicken breast tenders
¼ cup reduced-fat (2%) plain yogurt
1 Tbsp crumbled blue cheese
4 medium celery stalks, cut into sticks

Steps:

  • Combine 1 Tbsp. hot sauce, vinegar, garlic powder, paprika, and cayenne (if desired) in a small bowl; mix well.
  • Add chicken; toss to coat. Marinate, covered, in refrigerator for 30 minutes.
  • Preheat oven to 375° F.
  • Place chicken in a baking dish. Discard any remaining marinade. Bake for 12 to 15 minutes, or until chicken is no longer pink in the middle.
  • While chicken is baking, combine yogurt and cheese in a small bowl; mix well. Set aside.
  • Combine chicken and remaining 3 Tbsp. hot sauce in a large bowl; toss gently to blend.
  • Serve chicken with dip and celery.

Great, easy dip for tailgates and parties. Tastes like buffalo chicken wings with blue cheese dressing. Serve with thick chips and/or celery. A little different than the other buffalo chicken dips.

4 boneless skinless chicken breasts
16 ounces cream cheese (light is fine, but not fat free)
1 (12 ounce) bottle blue cheese dressing
1/2-3/4 cup hot sauce
8 ounces sharp cheddar cheese

Steps:

  • Boil in a large sauce pan enough water to cook the chicken breasts.
  • Then, boil the chicken until its cooked through, about 15 minutes.
  • Remove the chicken, pat dry, and shred with a fork.
  • Then place the shredded chicken in a large baking dish.
  • For a tailgate, I usually use 2 of those disposable 8 by 8 aluminum pans, or one large lasagna-size one.
  • Pour your desired amount of hot sauce over the chicken, and season with salt and pepper if desired.
  • Set this dish in the refrigerator to let the chicken absorb the flavor.
  • Preheat your oven to 350.
  • Next, over medium heat in a large pan, melt the cream cheese.
  • Pour in the blue cheese dressing and stir until they are completely combined.
  • Pour this mixture over the chicken.
  • Bake for 10 minutes.
  • Remove, but don't turn the oven off.
  • Sprinkle the cheddar cheese evenly over the top and return to the oven for another 10-15 minutes, until the cheese is melted and starting to brown just a little.
  • Serve hot or cold with chips!

Taken from the Heart Healthy cookbook. Note: prep time includes marinate/refrigeration time. Note: After making these many times, I have found that it is much easier to cook them on the George Foreman after marinading. I'm sure pan frying would work as well. Experiment and enjoy!

Steps:

  • Preheat the oven to 350 degrees F.

Toss the chicken and hot sauce mixture together in a bowl and spread with a spatula in the bottom of a glass 8-inch square baking dish. Cover the baking dish with foil and bake until warmed through, 25 to 30 minutes.

Steps:

  • In medium bowl, mix egg white and Buffalo wing sauce. Stir in chicken. Cover; refrigerate 30 minutes.
  • Line cookie sheet with waxed paper. In large resealable food-storage plastic bag, place Bisquick mix, cornmeal, salt and pepper. With slotted spoon, remove 1/4 of chicken pieces from bowl and add to bag; seal bag and shake to coat. Repeat with remaining chicken pieces. "Instead of the traditional and now rather expensive chicken wings, I use boneless, skinless chicken thighs in my version of this popular snack. It's best to use natural, high quality chicken. The Maytag dip can be made up to 4 days ahead of time, but definitely start this dish at least a day ahead of time to let the chicken marinate. Serves 4 as a main dish, 8-12 as an appetizer." I believe this recipe was given to my by a member of Cook's Talk, but I can't remember whom. It took me three weeks to find my precious paper copy, so I've transcribed it here for safekeeping. It's good stuff.

1/4 cup fresh lemon juice
1/4 cup soy sauce
2 lbs boneless skinless chicken thighs
1/4 lb maytag blue cheese, crumbled
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons cider vinegar
1/2 cup thinly sliced scallion
1 tablespoon finely chopped flat leaf parsley
1 tablespoon finely chopped fresh dill
1/2 teaspoon coarse salt
1/4 teaspoon fresh ground black pepper
1 pinch cayenne
1/4 cup Crystal hot sauce (or another brand of cayenne hot sauce such as Frank's or Durkee, but not a fiery sauce like Tabasco)
4 tablespoons melted unsalted butter
1/3 teaspoon coarse salt
1 tablespoon cornstarch, mixed with
1/4 cup water
vegetable oil, about 1 quart (for frying)
1/2 teaspoon fresh ground black pepper
3 cups unbleached all-purpose flour
2 coloured bell peppers, cored, seeded, and cut into 1/2 inch wide strips (orange, red or yellow)
1 seedless cucumber, unpeeled, cut into spears
1 celery heart, washed and drained, cut into sticks

Steps:

  • Marinate the chicken: In a large bowl, combine the bourbon, soy sauce and lemon juice.
  • Trim and discard any visible fat on the chicken thighs.
  • Cut each lengthwise into 5-6 strips.
  • Toss the strips in the bourbon mixture; cover and refrigerate for 24 hours.
  • Make the dip: Blend half the cheese with the mayonnaise in a food processor until smooth.
  • Add the sour cream and vinegar, and process until the mixture has the consistency of a creamy mayonnaise.
  • Add the scallions, parsley and dill and process again briefly.
  • Add the remaining cheese and process very briefly (the dip should be slightly chunky), remove from the food processor, and season to taste with salt, pepper, and cayenne.
  • Wrap well and refrigerate up to four days.
  • Make the sauce: In a small saucepan, whisk together all of the ingredients.
  • Heat while whisking constantly until the mixture comes to a boil.
  • The sauce should be smooth and slightly thickened.
  • Remove from the heat and keep warm.
  • Finish the dish: Heat the oven to 250 degrees.
  • Pour enough oil into a wok or deep, heavy pot to reach about 2 inches.
  • Heat the oil to 365 degrees or until the oil shimmers.
  • Meanwhile, drain the chicken well and pat it dry on paper towel.
  • s Season with the pepper, then dredge each piece in flour, shaking off any excess.
  • Carefully fry the chicken in batches until golden brown, about 7 minutes.
  • Remove from the oil and drain on paper towels while frying the remaining chicken.

These are simple, delicious and pefect for Super Bowl Sunday or any party! My family and friends always rave about them, sometimes I have to make an extra batch because they go so fast. You don't have to use a rotisserie chicken, but it sure cuts back on the time. If you don't like things too spicy, you can always cut back on the hot sauce and green onions.I like to use peanut oil for frying. They freeze well too. Making the dip ahead of time, then placing in fridge, allows the flavors to marry well. Bring it back to room temp to serve. This is adapted from a Food Network Show, Big Daddy's House. 1 store-bought rotisserie-cooked chicken
1/4 cup hot sauce (recommended Frank's Red Hot)
1 teaspoon ground black pepper

Steps:

  • Have oil heated to 350 degrees F.
  • Pick the meat from the chicken and discard the skin, then dice.Place the chicken in a large bowl and add the hot sauce, pepper, cheese, and green onions, and toss to combine. Roll the chicken into 2-ounce balls, about the size of a golf ball.
  • Place the flour, eggs, and Panko crumbs in 3 separate bowls. Roll each ball in the flour, then the egg and then the bread crumbs. Set aside.
  • When the oil is hot fry the chicken balls in batches. Cook for about 2 minutes per batch. Drain on paper towels.
  • To make the dip, combine all ingredients in a large bowl and adjust the seasoning if necessary. Serve the chicken alongside the dipping sauce.
