Steps:
- Preheat oven to 400°F (200˚C).
- Slice the jalapeños in half, then remove the seeds by scraping out the insides.
- Spread the cream cheese evenly among the jalapeño shells.
- Wrap each jalapeño in bacon.
- Place the bacon-wrapped jalapeños on a baking sheet lined with parchment paper. Bake for 20 minutes, until bacon is browned and peppers are tender.
- Enjoy!

LOADED BUFFALO CHICKEN JALAPEñO POPPERS

- Preheat oven to 400°F (200°C). Line large sheet pan with foil. Place baking rack on top. Spray with no-stick cooking spray; set aside. Mix cream cheese and Wings Sauce in large bowl until smooth. Stir in chicken, 1/2 cup (125ml) of the Cheddar cheese and half of the bacon.
- Stuff 2 tablespoons (30ml) of the chicken filling into each jalapeño half. Place stuffed jalapenos on prepared baking rack on pan. Sprinkle remaining bacon and cheese evenly over top of filling.
- Bake 20 minutes until heated through and cheese is bubbly and golden brown. Drizzle with additional Wings Sauce to serve, if desired.
- Test Kitchen Tip: •Serve with Ranch or Blue Cheese Dressing for dipping. •Grill poppers instead of baking! Preheat grill to 400°F (200°C). Place peppers directly on grill, close lid. Grill 20 minutes, rotating occasionally to heat evenly.

Steps:
- Slice chicken breasts into bite-sized chunks.
- Combine the chicken with the salt, pepper, garlic powder, and chili powder, mixing until evenly seasoned.
- Place the flour and eggs into separate bowls.
- Dip a piece of chicken into the flour, then the egg, then back into the flour. Repeat with the rest of the chicken.
- Heat oil in a large pot over medium-high heat.
- Fry the chicken pieces until deep-golden brown and crispy.
- Set aside on a paper towel to drain.
- In a pan over medium heat, cook the butter and the hot sauce until bubbly.
- Toss the chicken in the sauce until evenly glazed.
- Enjoy!

BUFFALO CHICKEN JALAPENO POPPERS
This recipe was featured on the Rachel Ray show in October, 2009 as a quick and healthier version of the traditional popper. It's a very spicy, yet savory version of the appetizer. The original recipe calls for 18-20 jalapeno peppers, but I just used 10 and cut them in half to use both halves to fill. It also called for rotisserie chicken, but I substituted with chicken breast to cut down on cost and time.

- Preheat oven to 425ºF.
- Working lengthwise, slice each jalapeno in half. Scrape the seeds and ribs out of each jalapeño.
- Place a small saucepot over low heat. Add hot sauce and whisk in the butter until melted. In a medium size bowl, combine the pulled chicken, celery, Monterey Jack cheese and half of the blue cheese.
- Scoop some of the chicken mixture into each half of the peppers, filling them all up. Lightly mound the chicken into each pepper. Place the peppers in a baking dish and top with the remaining blue cheese.
- Bake the peppers until tender and heated through, about 15 minutes. Serve warm.
JALAPENO POPPER CHICKEN CASSEROLE

- Preheat oven to 425°. Arrange Tater tots in an ungreased 13x9-in. baking dish. Bake, uncovered 15 minutes. , Meanwhile, in a large bowl, combine cream cheese, sour cream, jalapeno peppers, garlic salt and pepper. Stir in half each of the chicken, Mexican cheese blend, bacon and green onions. Arrange chicken over Tater tots. Top with cream cheese mixture. Sprinkle with remaining Mexican cheese blend, green onions and bacon. Cover and bake until heated through, 20-25 minutes. If desired, top with additional sour cream and jalapeno slices.
