My mother-in-law has made this wonderful granola cereal recipe for years. It's so flexible, and so much cheaper (and better) than the store-bought granola.

7 cups quick cooking oats
1 cup wheat germ
1 cup wheat bran
½ cup brown sugar
½ cup vegetable oil
½ cup honey
½ cup water
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon salt
1 cup chopped dates
1 cup chopped pecans
1 cup flaked coconut

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • In a large bowl, mix oats, wheat germ, and wheat bran.
  • In a medium bowl, blend brown sugar, vegetable oil, honey, and water. Mix in vanilla extract, cinnamon, nutmeg, and salt. Stir the brown sugar mixture into the oat mixture until evenly moist, and transfer to a large, shallow baking dish.
  • Bake 45 minutes in the preheated oven, stirring every 15 minutes, until lightly brown. Mix dates, pecans, and coconut into the dish, and continue baking about 15 minutes. Allow to cool, and store in airtight containers.

With the ever increasing price of store-bought cereal, I decided it was time to come up with a homemade one. You may want to add nuts or dried fruits also. Store it in an airtight container. (I keep it in the cardboard oats canister in a zip-tied bag.)

4 cups old fashioned oats, uncooked
1 tablespoon canola oil
2 tablespoons maple syrup
1/4 cup honey
2 teaspoons vanilla
1/4 teaspoon cinnamon
3/8 teaspoon kosher salt (less if regular salt)
butter-flavor Pam cooking spray

Steps:

  • Heat oven to 350 degrees and spray 10x15 jelly roll pan with butter-flavor Pam. (I also spray both bowls and the spatula I use to mix the cereal, then nothing sticks and clean up is easy.).
  • In a small bowl, mix together oil, syrup, honey, vanilla, cinnamon and salt. Pour over oats in a large bowl and mix thoroughly.
  • Spread evenly in the pan, and bake for 10 minutes, stir and bake 9 more minutes. (If you use a dark pan, shorten cooking time by 1 or 2 minutes.).

  • Heat oven to 350 degrees, preferably convection. Grease a 11 x 15 shiny rimmed baking sheet. I spray the bowls, the spatulas and the measuring cup too. Then nothing sticks.
  • In a small bowl, mix together all ingredients except the oats, nuts and fruit. The lower amount of oil works, and that's what I use when I'm dieting. But the increased amount makes the cereal more crispy.
  • Spread evenly in the pan and bake for nine minutes. Stir and bake 7-8 more minutes. If making more than one batch, bake subsequent batches 1 minutes less.
