Steps:
- Brown ground meat in skillet and drain.
- Combine spinach, ground meat, ricotta cheese, egg, parmesan cheese and garlic powder.
- Spoon this mixture into manicotti shells and place in 13 x 9 inch dish (sprayed with Pam).
- Pour Emeril's sauce over the stuffed manicotti shells and sprinkle with mozzarella cheese.
- Bake uncovered in preheated 350 oven for 30 minute or until heated through.
SPINACH RICOTTA GRILLED CHEESE

Steps:
- Heat a large skillet over medium-high heat. Add the olive oil, spinach and scant 1/2 teaspoon salt. Saute until the spinach has completely wilted. Transfer the spinach to a strainer set over a bowl. Cool to room temperature. When the spinach is cool enough to handle, squeeze out as much liquid as possible.
- Roughly chop the spinach and add it to a medium bowl. Add the ricotta, mozzarella, Parmigiano-Reggiano, 1/4 teaspoon salt and 1/4 teaspoon pepper. Stir to combine and set aside.
- Lay the sliced bread on a clean work surface. Coat the top of each slice with butter. Heat a large skillet over medium heat. Lay 4 of the slices in the skillet, butter-side down. Scoop about 1/3 cup of the ricotta mixture onto each slice. Spread the mixture evenly to cover the whole slice, then top with the other slices of bread, butter-side up. Cook until the first side is golden and toasted, 2 to 3 minutes. Carefully flip the sandwiches and cook until the bread is toasted and the cheese is melty, an additional 2 to 3 minutes.
- Transfer the sandwiches to a clean work surface and let them cool for 1 minute before slicing.
SPINACH AND CHEESE MANICOTTI
Oh, how I love Italian food! I especially love those dishes like this one, made with delicious cheeses! I use a slightly sweet marinara sauce, but use whatever recipe you like. Delizioso!

- Bring a large pot of water to a boil over high heat, and season generously with salt. Cook according to package directions. Drain and squeeze the excess water from the spinach.
- Cook the pasta shells until al dente, tender but still slightly firm. Drain and pat dry.
- Preheat the oven to 350 degrees F.
- Cover the bottom of a 9- x 13-inch ovenproof baking dish with 1 cup of the marinara sauce.
- In a medium mixing bowl, evenly combine the ricotta, mozzarella, and 1/3 cup of the Parmesan, the eggs, garlic and the spinach. Season with the 1/2 teaspoon salt and pepper to taste.
- Spoon the cheese mixture into the manicotti shell and line them up in the baking dish.
- Cover with the remaining sauce. Scatter the remaining cheese on top. Bake for 30 minutes. Garnish with fresh parsley. Serve immediately.

Steps:
- Preheat oven to 350°F.
- Spray large nonstick skillet with cooking spray.
- Add mushrooms and garlic; cook 5 minute on medium heat, stirring frequently.
- Remove from heat.
- Beat egg whites lightly in medium bowl.
- Add mushroom mixture, spinach, ricotta cheese and half each of the mozzarella and Parmesan cheeses; mix well.
- Check for seasoning.
- Spoon evenly into manicotti shells.
- Place in 13x9-inch baking dish sprayed with cooking spray.
- Cover with spaghetti sauce.
- BAKE 40 minutes or until heated through.
- Top with the remaining mozzarella and Parmesan cheeses; continue baking 5 minute or until mozzarella cheese is melted.

- .In a skillet, saute onion and garlicin oil and set aside.
- In a large mixing bowl, combine ricotta, cream cheese, half the mozzarella, half the parmesan, italian seasoning, salt, and pepper and beat until well mixed.
- Drain spinach with several paper towels and squeeze until spinach is well drained.
- Add spinach and onion to cheese mixture and mix well.
- Spoon this mixture into manicotti shells, using 1 teaspoon at a time.
- Be careful not to tear shells.
- Pour half of spaghetti sauce in bottom of 9x13 inch baking dish.
- Arrange shells over the sauce and top with remaining sauce.
- Cover and bake at 350 degrees for 30 minutes.
- Remove from oven , uncover and sprinkle remaining cheeses over top.
- Return to oven until cheese melts.

- In a small skillet, saute onion in oil for 3 minutes. Add garlic; cook 1 minute longer. CHEESY BEEF AND SPINACH MANICOTTI
The filling amount should be plenty to stuff 14 shells with maybe a small amount left over --- to remove the bitterness from the spinach, cook firstly according to package directions --- to save time you may cook the ground beef/spinach mixture up to step #4 and refrigerate for up to 2 days. For easier stuffing, warm the mixture in the microwave to just room temperature before adding in the mozzarella cheese and eggs, then proceed with recipe as stated --- ground beef or bulk Italian sausage may be used successfully. This recipe was developed and tested using both on different occasions. I prefer the Italian sausage meat, you could use half of each if desired --- also see my recipe #72308.

- Grease two 9-inch baking pans.
- In a large skillet over medium-high heat stirring with wooden spoon cook the ground beef or bulk sausage meat with the onion until browned breaking up the meat while cooking (about 10-12 minutes the meat should be lightly browned) drain fat.
- Add in garlic and cook, stirring for 2 minutes.
- Transfer to a bowl then mix in the drained spinach, Parmesan cheese and ricotta cheese; set aside to cool (about 10-15 minutes).
- When the ground beef is cool add in mozzarella cheese, eggs, seasoned salt and black pepper mix well to combine, at this point you may season with more salt and pepper if desired and if you want more garlic flavor add in some garlic powder to the mixture.
- Spread about 1/4 to 1/3 cup marinara sauce onto the bottom of each baking pan.
- Carefully stuff each noodle with the beef mixture then place in one layer in the baking dish (you should have 7 in each dish).
- FOR ONE PAN; drizzle about 1-1/2 cups (or more) marinara sauce over shells, sprinkle about 3/4 cup or more of mozzarella cheese over sauce, then sprinkle with 1/3 cup Parmesan cheese on top; repeat with remaining pan.
- Preheat oven to 350 degrees F (oven rack to to lowest position).
- Cover each pan with foil and bake 25 minutes, uncover and continue baking for another 8 minutes (allow to sit for about 15 minutes before serving).

- Thaw Spinach.
- Preheat oven to 350° F.
- Grease a 13X9 baking dish; set aside.
- Cook manicotti according to package directions, drain & set aside.
- Cook meat & mix it in with marinara sauce; set aside.
- Grate mozzarella cheese (if not pre-shredded).
- In large bowl mix ricotta, 2 cups mozzarella, ½ cup parmesan, egg, prepared spinach,salt & pepper.
- Carefully split a manicotti shell open.
- Shape a ball of cheese mixture to fit the shell; close shell and lay seam-side down into prepared baking dish. Repeat procedure with remaining shells & cheese mixture.
