1 lb Brussels sprout
10 ounces mushrooms
1 ounce cooked bacon (2-3 strips)
1 teaspoon granulated garlic
1/2 teaspoon salt and black pepper
3 tablespoons olive oil

Steps:

  • 1. Trim sprouts and halve length wise. Quarter mushrooms.
  • 2. Place cut sprouts and mushrooms in oven/microwave safe caserole dish. Add 3 TBSP water and microwave on high about 8 minutes (sprouts will start to get tender).
  • 3. Carefully drain water from dish. Add oil, garlic, bacon, salt and pepper, mix and roast at 400 degrees for 20-25 minutes.
  • 4. Serve immediately.

2 tbsp clarified butter
1 lb brussels sprouts, halved, with stems removed.
1 white onion, skin removed, halved, and diced finely.
8oz sliced cleaned cremini mushrooms
3 cloves garlic
1 tsp adobo seasoning
1 tsp fresh cracked pepper
1/4 cup chicken or beef stock

Steps:

  • In a large, heavy pan, melt butter until light and foamy.
  • Add diced onion to pan and let soften and become fragrant, about 5 minutes.
  • Add garlic and stir, let soften, about 1 minute.
  • Stir in brussels, fresh cracked pepper, and mushrooms.
  • Cook on medium high, stirring often, until brussels and mushrooms have browned and caramelized, about 10 minutes. Do not let burn.
  • Pour in chicken stock and adobo seasonings, mix well.
  • Turn heat to high and cook off stock, stirring to prevent burning, until stock has cooked off.
  • Serve and enjoy!

2 tablespoons olive oil, or as needed
1 pound bacon, cut into bite-size pieces
½ teaspoon dried rosemary
1 ½ pounds crimini mushrooms, sliced

1 ½ pounds Brussels sprouts, trimmed and chopped
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain pasta, reserving 1/2 cup pasta water. Return pasta to the pot and toss with olive oil to coat.
  • Place bacon in a large skillet and cook and stir until bacon begins to crisp, about 10 minutes. Drain and discard 1/2 the bacon fat, leaving bacon in the skillet; stir in rosemary.
  • Stir mushrooms, salt, and black pepper into bacon mixture. Add Brussels sprouts; cook and stir until mushrooms and sprouts are heated through, 1 to 2 minutes. 12 oz frozen brussel sprouts, thawed and sliced in half
3 pieces bacon, chopped
1/2 c onion, chopped
1 c sliced mushrooms
1 Tbsp butter
1/2 tsp house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)
salt to taste

Steps:

  • 1. In a skillet, fry up the chopped bacon until crispy and remove the bacon to a paper towel lined plate, retaining the bacon grease in the skillet. Add the onions and mushrooms to the pan and cook over med. high heat for 3-4 minutes, just enough to soften the veggies. Remove them to a plate and add the butter to the pan.
  • 2. Once melted add in the sliced brussel sprouts and reduce the heat to medium. Season with the house seasoning and salt to taste. 2 pounds Brussels sprouts, trimmed, kept whole if small; halved through the stem if large

2 tablespoons red wine vinegar
2 teaspoons whole-grain mustard

  • Preheat a grill for cooking over medium heat. Lightly oil the grill grates.

  • Remove the skewers from the grill and remove the sprouts and bacon from the skewers while still hot; add to the large bowl of vinaigrette. Add half of the chopped hazelnuts. Toss gently to coat. 10 Brussel Sprouts ((approx. 5 per person), cut in half (and stem removed))
1-2 slices thick cut bacon (, chopped into small pieces)
Olive oil ((only if necessary due to low bacon dripping residue in skillet))
salt & pepper (, to taste)
3 Tablespoons water
4-6 mushrooms (, sliced)
1 teaspoon finely chopped shallots
1/2 teaspoon minced garlic
1 teaspoon butter

Steps:

  • Add chopped bacon to medium skillet. Cook on medium heat until about 1/2 way done. (do not drain bacon drippings).
  • Add brussel sprouts that have been cut in half (and de-stemmed). Continue to pan-sear brussel sprouts in bacon drippings for a couple minutes (add a tiny bit of olive oil to skillet only if necessary). Lightly season brussel sprouts with salt and pepper.
  • Continue cooking until brussel sprouts begin to soften (3-4 minutes), flipping over half way through cooking. Add 3 Tablespoons water to skillet; cook until water has cooked away.
  • Add sliced mushrooms and shallots to skillet. Continue cooking until mushrooms are done and cooked through (approx. 3-4 minutes). Add minced garlic; cook for additional minute. At this point, brussel sprouts and mushrooms should be cooked through. Add butter, and stir until butter has melted and coated veggies. (Note: Butter is completely optional, but adds good flavor)
  • Remove pan from heat, season with additional salt and pepper (if needed), then serve.
