CRISPY PORK CHOPS WITH SRIRACHA BRUSSELS SPROUTS

Crispy Pork Chops with Sriracha Brussels Sprouts image

Provided by Food Network Kitchen

Time 40m

Yield 4 servings

Number Of Ingredients 11

1 pound Brussels sprouts, trimmed and halved (or quartered if large)
1 small red onion, halved and sliced 1/2 inch thick
2 tablespoons vegetable oil
Kosher salt and freshly ground pepper
1 tablespoon apple cider vinegar
4 teaspoons honey
1 teaspoon Sriracha
4 boneless center-cut pork chops (3/4 inch thick; about 1 1/4 pounds)
2 tablespoons dijon mustard
6 tablespoons panko breadcrumbs
2 tablespoons finely chopped fresh parsley

Steps:

  • Put a baking sheet on the middle oven rack and preheat to 450 degrees F. Toss the Brussels sprouts and red onion in a large bowl with 1 tablespoon vegetable oil, 1/2 teaspoon salt and a few grinds of pepper. Spread on the hot baking sheet in a single layer and roast, without stirring, until tender and charred in spots, 20 to 25 minutes.
  • Meanwhile, whisk the vinegar, honey, Sriracha and a pinch of salt in a large bowl. Set aside.
  • Season the pork chops with salt and pepper and brush the mustard on both sides. Toss the panko with 1 tablespoon parsley, a pinch of salt and a few grinds of pepper on a plate. Press both sides of the pork chops in the mixture to evenly coat. Heat the remaining 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add the pork chops and cook until browned and cooked through, 4 to 5 minutes per side. (Reduce the heat to medium if the crust gets too dark.)
  • Add the roasted vegetables to the honey-Sriracha sauce and toss to coat. Serve with the pork chops. Sprinkle with the remaining 1 tablespoon parsley.

PORK CHOPS WITH MASHED POTATOES, BRUSSELS SPROUTS AND A MUSHROOM MADEIRA SAUCE

Pork Chops with Mashed Potatoes, Brussels Sprouts and a Mushroom Madeira Sauce image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 23

3 cups Brussels sprouts, quartered
2 tablespoons grapeseed oil
1/2 cup chopped onions
2 cloves garlic
1/2 cup chicken stock
2 tablespoons unsalted butter
3 to 5 Yukon gold potatoes, peeled and cut in large cubes
1 cup heavy cream, warmed
1 stick (4 ounces) unsalted butter
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
4 tablespoons (2 ounces) unsalted butter
1/2 cup minced onions
8 cups cremini mushrooms, quartered
1/2 bunch fresh thyme, chopped
1 cup Madeira wine
1/2 cup heavy cream
4 cups prepared demi-glace
Kosher salt and freshly ground black pepper
4 center-cut boneless pork chops (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
Grapeseed oil, for sauteing
1/2 cup Madeira wine

Steps:

  • For the Brussels sprouts: Bring a large pot of water to a boil. Add the Brussels sprouts and blanch until tender-crisp. Drain and rinse with cold water to stop the cooking; set aside.
  • Heat a saute pan to medium-high heat and add the oil followed by the onions and garlic. Sweat the onions and garlic for a few minutes. Add the Brussels sprouts and sear until golden brown, about 2 minutes. Deglaze with the chicken stock and then swirl in the butter. Reserve.
  • For the mashed potatoes: In a large pot filled with water, add the potatoes and bring to a boil over medium-high heat. Lower to a simmer and cook until the potatoes are fork-tender. Drain the potatoes in a colander and transfer them back to the pot. Add the cream, butter and salt and pepper to taste and mash until smooth. Reserve.
  • For the mushroom madeira sauce: Heat a saucepan over medium heat and add the butter. Add the onions and sweat for a few minutes. Add the mushrooms and thyme and cook over medium-high heat until slightly caramelized. Deglaze the pan with the Madeira and cook out the alcohol for about 1 minute. Add the heavy cream and reduce by a third. Lower the heat, add the demi-glace and simmer until the sauce coats the back of a spoon. Season with salt and pepper.
  • For the pork chops: Sprinkle the pork chops with salt and pepper. Add some oil to a hot saute pan and sear the chops for about 4 minutes. Flip and cook on the other side until the internal temperature reaches 155 degrees F, another 4 minutes. Remove the pan from the heat, drain off any excess oil and deglaze with the Madeira, leaving the pork in the pan. Return to the heat and cook off the alcohol for about 2 minutes. Reserve.
  • To create the plate: Place some mashed potatoes on the center of each plate. Follow with some Brussels sprouts. Place a pork chop on top and spoon sauce all over.

SHEET-PAN CUMIN PORK CHOPS AND BRUSSELS SPROUTS

Sheet-Pan Cumin Pork Chops and Brussels Sprouts image

In this convenient sheet-pan supper, bone-in pork chops are coated in a spicy, garlicky cumin rub before being cooked alongside brussels sprouts and sage leaves. Roasted at high heat, the sprouts get golden at their edges and tender at their cores while the sage leaves turn brown and crisp all over, almost as if you'd fried them. Feel free to double this recipe. Just use large rimmed sheet pans instead of smaller ones.

Time 45m

Yield 3 to 4 servings

Number Of Ingredients 12

1/2 tablespoon dark brown sugar
1 teaspoon kosher salt, more as needed
1 teaspoon whole cumin seeds
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper, more as needed
1/4 teaspoon crushed red-pepper flakes, or to taste
2 cloves garlic, grated or minced
2 large bone-in pork chops, about 1 1/2 inches thick (about 1 3/4 pounds total)
1 pound brussels sprouts, trimmed and halved through the stem
1/4 cup whole sage leaves
2 tablespoons extra-virgin olive oil
Lemon wedges, for serving

Steps:

  • In a large bowl, combine brown sugar, salt, cumin seeds, ground cumin, black pepper, red-pepper flakes and garlic until mixture resembles wet sand.
  • Smear mixture all over pork and let sit at room temperature for at least 20 minutes, refrigerate, covered, up to 24 hours.
  • Heat oven to 450 degrees. In a bowl, toss brussels sprouts and sage leaves with oil and a large pinch of salt and pepper. Spread out on a quarter-size rimmed baking sheet (or in a 9-by-13-inch baking dish) and place in the oven. Place the pork on a second quarter-size rimmed baking sheet (or use a regular rimmed baking sheet) and place in the oven along with the sprouts.
  • Roast pork and sprouts for 15 minutes. Flip the chops over and give the sprouts a stir, and continue roasting until the pork is cooked through (135 degrees for medium-rare) and the sprouts are browned and tender, 5 to 10 minutes more. Let pork rest 5 minutes before slicing off the bone as you would a steak. Serve together, with lemon wedges.
