BRUSCHETTA WITH FRESH BASIL
Delicious and flavorful with fresh tomatoes, basil, onions and garlic! One of my most popular appetizers.

Steps:
- After the tomatoes have been chopped, let them sit for about 5 minutes and drain the liquid.
- Mix in onion, basil, garlic and olive oil.
- Just before serving, add some of the Bruschetta mixture onto sliced bread.
- If Bruschetta mixture is cold, broil bruschetta on the bread for a minute or two to warm it up.
FRESH TOMATO AND BASIL BRUSCHETTA
Steps:
- Gather the ingredients.
- To begin with, combine the chopped tomatoes, basil, garlic, and salt in a small bowl and lightly toss together. Set aside.
- Set the oven to the broil setting. Place the bread slices in a single layer on a large baking sheet coated with a small amount of cooking spray or olive oil. Using a basting brush, brush a small amount of the olive oil on the top of each slice of bread.
- Place the bread in the oven and broil for about 1 minute, or just until the bread becomes lightly toasted.
- Remove the bread from the oven, and spoon about 2 tablespoons of the tomato mixture on each slice. Top each with a couple of shaves of the mozzarella cheese. Return the bread to the oven and broil the bruschetta for another 30 seconds. Watch the bruschetta carefully during this time to make sure it does not burn. Remove the bruschetta when the cheese becomes melted, and the edges of the bread are lightly browned and toasted.
- Remove the bruschetta to a plate or a wire rack to cool just for a few minutes, and then serve immediately.

- Stir tomatoes, basil, 3 tablespoons olive oil, red onion, garlic, red wine vinegar, and pepper together in a bowl; let tomato mixture stand at room temperature for 15 minutes, then place in the refrigerator to marinate for 45 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Brush one side of each slice of bread with remaining olive oil. Place bread slices, oiled-side-up, onto a baking sheet.
- Broil until golden brown, about 2 minutes; remove from oven. Spoon tomato mixture evenly over the top of toasted bread slices; drizzle balsamic vinegar evenly over tomato mixture. Serve immediately.

- Preheat broiler to high, (if you prefer you can also grill the bread). Place bread slices on a broiler pan. Char bread on each side under hot broiler, keep an eye on it! Rub toasts with cracked garlic and drizzle with oil. Chop seeded tomatoes and place in a small bowl. Pile basil leaves on top of one another and roll into a log. Thinly slice basil into green confetti and loosely combine with tomatoes. Add a drizzle of oil and a little coarse salt to the bowl and gently toss tomatoes and basil to coat. Pile toasts around the bowl of topping. Place a spoon to scoop topping in bowl and serve.

BRUSCHETTA WITH FRESH TOMATO AND BASIL

- In a bowl, mix together the tomatoes, basil, olive oil and vinegar. Add 1/4 teaspoon of the garlic paste, and blend well. Season to taste with salt and pepper. Let stand at room temperature for 2 hours, if possible.
- Place the bruschetta on a large platter in a single layer. When ready to serve, drizzle each one with about 1 tablespoon of juice from the bottom of the bowl containing the tomato mixture. With a slotted spoon, strew the tomato mixture over the bruschetta. Serve immediately.
BRUSCHETTA WITH CARAMELIZED ONION AND FRESH BASIL
I might as well jump on the Bruschetta Bandwagon! Experiment using local onions in your area! Also, try other similar hard cheeses in place of the Parmesan: asiago, fontina, pecorino romano, etc. From the cookinglight.com website with some changes.

Steps:
- Preheat oven on BROIL.
- Heat the butter and olive oil in a small skillet over medium heat. Add the onion and sugar; cook 15-20 minutes or until very soft and golden brown; stirring frequently. Remove from heat.
- Cool mixture slightly then stir in the fresh basil.
- Cut baguette into 1/2" slices. Place bread slices on a baking sheet.
- Broil the bread for 2 minutes or until toasted. Watch oven carefully!
- Divide and spread caramelized onion mixture over each bread slice. Sprinkle with Parmesan cheese and season with fresh cracked black pepper.

- Preheat oven to 425 degreesF.
- Slice French bread or baguette into 1/2-inch slices.
- Brush both sides lightly with 2 T olive oil.
