QUICK CANDIED YAMS
We've perfected this 4-ingredient holiday side dish! After all, its just not Thanksgiving without the Candied Yams.

Steps:
- Heat oven to 350°F.
- Place Bruce's Yams Cut Sweet Potatoes in a shallow baking dish; set aside.
- Combine butter, sugar and syrup in a small saucepan. Bring to a boil, reduce heat and simmer until thicken, stirring occasionally.
- Pour sauce over sweet potatoes, and bake for 20-30 minutes. Sweet potatoes may be sprinkled with nutmeg and/or ground cinnamon before serving.
SWEET POTATO (YAM) CASSEROLE WITH MARSHMALLOWS
This is a compilation of a couple of different recipes I found on the web. My husband loves sweet potatoes with LOTS of marshmallows and wanted a casserole like one of his aunts used to make. After a few trials, this was the final incarnation. It is now a Thanksgiving staple for both his and my family's dinners.

Steps:
- Spray 1 quart baking dish with Pam.
- Heat oven to 350 degrees.
- Mash yams in a large bowl and add brown sugar, salt, cinnamon, egg, and melted butter.
- Mix well.
- Place 1/2 mixture in baking dish.
- Top with a layer of marshmallows, then add remaining mixture.
- Bake for 30 minutes.
- Remove from oven and top with remaining marshmallows.
- Turn oven to broil and move casserole to the upper middle rack. Broil for approximately 5 minutes or until marshmallows are lightly browned.

CANDIED SWEET POTATOES
A classic Candied Sweet Potatoes recipe

Steps:
- Preheat oven to 375°F.
- Cut each potato half lengthwise into fourths. Steam potatoes on a steamer rack set over boiling water, covered, until just tender, 10 to 15 minutes, then cool, uncovered. Transfer to a buttered 3-quart shallow baking dish.
- Simmer brown sugar, butter, water, and salt, stirring occasionally, until sugar is dissolved and syrup is thickened, about 5 minutes. Stir in bourbon to taste. Drizzle syrup over potatoes and bake in middle of oven, basting occasionally, until syrup is thickened, about 1 1/4 hours.

- Bake at 350* for 25-30 minutes.
- Stovetop directions:.
- Place all ingredients in a small saucepan.
- Bring just to boil on medium heat for about 5 minutes.
- Remove from heat, stir, and serve.
- Microwave directions:.
- Combine all ingrediens in a microwave safe dish.
- Cover and mocrowave on high for 2 1/2 to 3 1/2 minutes. Stir and serve.
