This is a quick brownie recipe for when you need something good and chocolaty. Cutting them into wedges and topping them with fudge sauce dresses them up. My family loves these brownies. 1/2 cup sugar
2 tablespoons butter
2 tablespoons water
1-1/2 cups semisweet chocolate chips
2 large eggs
1 teaspoon vanilla extract
2/3 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup chopped walnuts
FUDGE SAUCE:
1 cup semisweet chocolate chips
1/2 cup evaporated milk
1/4 cup sugar
1 tablespoon butter
Vanilla ice cream

Steps:

  • In a small saucepan, bring the sugar, butter and water to a boil over medium heat. Remove from the heat; stir in chips until melted. Set aside to cool., In a large bowl, beat eggs and vanilla. Beat in chocolate mixture until blended. Combine the flour, baking soda and salt; add to chocolate mixture. Stir in walnuts. , Pour into a greased 9-in. pie plate. Bake at 350° for 28-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. , For fudge sauce, in a microwave, heat the chips, milk, sugar and butter until chocolate and butter are melted; stir until smooth. Drizzle some over pie. Cut into wedges; serve with ice cream and additional fudge sauce.

1 cup butter, softened
2 cups sugar
4 large eggs
2 tablespoons canola oil
2 teaspoons vanilla extract
1 cup all-purpose flour
1/3 cup baking cocoa
FUDGE SAUCE:
1/2 cup butter, cubed
2 cups sugar
1/2 cup baking cocoa
1/2 cup water
1/2 cup light corn syrup
1 teaspoon vanilla extract
1/2 teaspoon salt
Vanilla ice cream and maraschino cherries

Steps:

  • Preheat oven to 325°. Line a 13x9-in. baking pan with foil, letting ends extend up sides; grease foil. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in oil and vanilla. In another bowl, whisk flour and cocoa; gradually beat into creamed mixture., Spread into prepared pan. Bake 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., For fudge sauce, in a large saucepan, melt butter over medium heat. Stir in sugar, cocoa, water, corn syrup, vanilla and salt until blended. Bring to a boil. Cook, uncovered, 3-5 minutes or until sugar is dissolved and sauce is smooth, stirring frequently., Lifting with foil, remove brownies from pan. Cut into eighteen 3x2-in. rectangles. Top each brownie with ice cream, fudge sauce and a cherry. Freeze option: Securely wrap and freeze cooled brownies in plastic wrap and foil. To use, thaw at room temperature.

3/4 cup butter, softened
2 cups packed brown sugar
4 large eggs, room temperature
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder

1-1/2 cups chopped pecans
MAPLE CREAM SAUCE:
1 cup maple syrup
2 tablespoons butter
1/4 cup evaporated milk
Vanilla ice cream and chopped pecans

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture. Stir in pecans. , Spread into a greased 13x9-in. baking pan. Bake until a toothpick inserted in the center comes out clean, 25-30 minutes. Cool on a wire rack., For the sauce, combine syrup and butter in a saucepan. Bring to a boil; cook and stir for 3 minutes. Remove from the heat; stir in milk. Cut brownies into squares; cut in half if desired. , Place on dessert plates with a scoop of ice cream. Top with sauce; sprinkle with pecans.

This is my favorite pie and I love it. I make them for desserts for our home. It is so easy and simple to make it. They are so delicious and creamy and sweet.

FOR THE BROWNIES
1/2 c sugar
2 Tbsp butter
2 Tbsp water
1 1/2 c semi-sweet chocolate chips
2 whole eggs
1 tsp vanilla
2/3 c flour
1/4 tsp baking soda
1/4 tsp salt
3/4 c chopped walnuts
FOR THE FUDGE SAUCE
1 c semi-sweet chocolate chips
1/4 c sugar
1 Tbsp butter
1/2 c evaporated milk

Steps:

  • 1. To make the brownies, in a small saucepan over medium heat, bring the sugar, butter, and water to a boil. Remove from heat; stir in the chocolate chips until melted. Set aside. In a mixing bowl beat eggs and vanilla with a wire whisk. Add chocolate mixture and mix well with a spoon. Set aside. Combine flour, baking soda, and salt and then add to the chocolate mixture. Stir in the walnuts. Pour into a greased 9inch pie plate. Bake at 350F for 28-30 minutes or until a toothpick inserted near center comes out clean. Place the dish on a wire rack to cool. Hot Fudge Sauce: Put chocolate chips, sugar, butter and milk into a microwave safe bowl (I used my pyrex measuring cup) and microwave just until butter and chocolate are melted. Whisk until sauce is smooth and hot fudge saucy. Cut pie into wedges, drizzle hot fudge sauce on top and then top with ice cream and more hot fudge.

Steps:

  • Preheat oven to 350°.
  • Grease a 9" pie plate.
  • In medium saucepan, combine sugar, butter and water.
  • Cook over medium heat, stirring occasionally until mixture comes to a boil.
  • Remove from heat and immediately add chocolate chips and stir until melted.
  • Add eggs and beat with a spoon until well mixed, then stir in vanilla.
  • Combine flour, baking soda and salt and add; mix well, fold in nuts and pour into prepared pie plate.
  • Bake for 25 to 30 minutes or until almost set.
  • Cool completely.
  • Cut in wedges and top with vanilla ice cream and hot fudge sauce.

1 1/4 sticks (5 ounces) unsalted butter, softened and cut into pieces
1/4 cup unsweetened cocoa powder
3 ounces unsweetened chocolate, finely chopped
2/3 cup boiling water
1 1/4 cups sugar
1 teaspoon vanilla extract
2 large eggs
1 cup all-purpose flour
1/2 teaspoon fine salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup finely chopped toasted walnuts
1/3 cup semisweet chocolate chips
1 pint vanilla ice cream
1/4 cup prepared hot fudge sauce
2 tablespoons rainbow colored sprinkles
12 jarred maraschino cherries with stems, drained and patted dry

Steps:

  • Preheat the oven to 350 degrees F and line one 12-cup standard muffin tin with paper cupcake liners.
  • In a large bowl, combine the butter, cocoa powder and chocolate. Pour the boiling water over and let stand 5 minutes. Whisk until smooth, and then whisk in the sugar, vanilla and eggs. Whisk in the flour, salt, baking powder and baking soda until just combined. Fold in the walnuts and chocolate chips. Divide the batter among the prepared liners so they are about three-quarters full.
  • Bake until a toothpick inserted into the center comes out with moist crumbs, 22 to 24 minutes. Cool in the tins 5 minutes, and then cool completely on a wire rack.
  • While the cupcakes bake and cool, scoop 12 small scoops of ice cream onto a large plate or baking sheet and place in the freezer until hard.
  • To assemble, scoop off a small piece of the cupcake to make a concave top, and then top each cupcake with a scoop of ice cream. Drizzle the ice cream with hot fudge, and top with some sprinkles and a cherry.

FRUIT FILLED WON TONS ALA MODE

Fill won ton wrappers with your favorite canned pie filling and serve over ice cream. It doesn't get any better than this!

1 (16 ounce) can pumpkin pie filling or 1 (16 ounce) can peach pie filling
32 wonton wrappers
1 scoop vanilla ice cream (your favorite brand)
cinnamon (for dusting)
nutmeg (perhaps)
vegetable oil, for deep frying

Steps:

  • Open can of pie filling and mince fruit well.
  • Place one teaspoon of filling on the center of a wonton wrapper. Place another won ton wrapper on top and seal the edges with water. Don't let any filling spill over or won ton will not seal. Press edges with a fork to ensure a tight seal and to create a decorative edge.
  • Deep fry in a fryer till golden brown at 400* about 3 minutes.
  • Remove from oil and drain on paper towels.
  • Place 1 scoop of vanilla ice cream into 4 pretty little bowls and microwave them all at the same time for 20 seconds to soften the ice cream.
  • Add 4 won ton fruit crisps on top of each and serve to guests who think you are brilliant.
  • If using peach or apple, dust lightly with cinnamon.
  • If using pumpkin, dust lightly with nutmeg.
  • If using cherry, get out of the way or the sparks from the spoon hitting the bowl will put your eyes out.
  • They are good. Really.
  • There will be a lot of filling left over from your can, unfortunately. A shame to waste it- but- you can always have cherry, peach, or apple pie filling with cottage cheese for a protein rich breakfast the next day. Or pour the filling over pancakes. The point is -- well there really is no point -- does there always have to be one?

1 cup heavy cream, chilled

Steps:

  • Position rack in center of oven; preheat to 350°.
  • In a medium bowl, mix together cracker crumbs and butter. Press into a 9-inch pie plate.
  • Bake until crust begins to puff, about 8 minutes.
