3 INGREDIENT PEANUT BUTTER BROWNIE COOKIES
Steps:
- Preheat oven to 350°F. Line a large cookie sheet with parchment paper or silicone baking mat.
- Add dates to food processor and pulse until paste forms. You may need to stop a few times and scrape down the sides of your food processor to help it mix. If you are using older dates that are dry and no longer soft and moist, you will need to rehydrate them before using. See notes for more details.
- Add in cocoa powder and peanut butter. Pulse until they are evenly incorporated and blended in. Your dough should look something like crushed and crumbled oreos. See post for photo for reference. When you pinch it together, it should stick.
- Using a 1.5 tbsp cookie scoop, scoop out dough. Once measured, use your hand to mash it into the cookie scoop so that the dough will stick together. Release onto prepared cookie sheet. Repeat with remaining dough.
- Squeeze and roll dough ball between your hands to compress it further and make a smooth round ball. Place back onto cookie sheet. Repeat with remaining dough balls, spacing them two inches apart when you put them back onto the cookie sheet. Press down on each dough ball so that it forms a thick round disk (about 1/3 inch thick).
- Bake cookies for about 10 minutes. The cookies should puff up slightly and may crack a little on the surface. They will not change too much from their original shape but the tops should look dry.
- Let cookies cool on cookie sheet before removing them. If adding frosting or icing, add it after the cookies have cooled.

FUDGY SALTY PEANUT BUTTER BROWNIES

Steps:
- Preheat your oven to 325 degrees F.
- For your brownie batter: Melt your butter in a medium (or large) heatproof bowl over a pot of simmering water.
- While the butter is melting, whisk the cocoa powder, sea salt and sugar in a separate bowl. (The sugar and salt will work as abrasive agents to get any lumps out of the cocoa.) Whisk the cocoa/sugar/salt combo into the melted butter until the sugar has dissolved fully. The mixture should look like fudge and pull away from the bowl into a ball. Take off the stove and set the pan on a dishtowel on your counter. Allow the fudgy mixture to cool down until it's warm, but not hot anymore.
- While that is cooling, line the bottom and sides of your 9 by 13-inch baking pan with parchment paper or foil. You want to leave about 4 inches of overhang on the 2 opposite sides. These serve as your handles to remove the brownies from the pan in 1 piece, so make sure that there is enough of the overhang for you to have a solid grip. Grease the parchment or foil well.
- Stir in the vanilla into the cooled fudge mixture to loosen it up. Add the eggs into the mixture 1 at a time, adding the second egg after the first egg is fully incorporated. The batter should look shiny and well blended. Add in your flour and stir it until it's fully incorporated. Once it looks fully blended, beat the batter vigorously for at least 45 strokes. This'll not only get out any pent up stress, but it will make the brownies chewy. Fold in your chocolate chips. Spread the very thick and fudgy brownie batter evenly in the lined pan with an offset spatula or your greased hands.
- Pop the brownies in the oven and bake until they get a nice crust and your house smells like brownies, 30 to 35 minutes. Let them cool completely on a rack or a dishtowel on your counter.
- While the brownies are cooling make the buttercream and ganache.
- For the buttercream: Mix your peanut butter and butter together in a stand mixer until they are totally blended. Turn your mixer down and slowly add your powdered sugar and fine sea salt. Stop the mixer and scrape the sides and bottom of the bowl. Turn your mixer back to medium, add your milk and vanilla and keep mixing until it's fully blended. Dollop the peanut butter buttercream in heaping spoonfuls on top of the cooled brownies. Evenly spread it with the back of a butter knife the over the surface. Scatter the peanuts evenly over the buttercream, pressing into the buttercream so that the ganache has something to hold on to and the peanuts are all covered.
- For the ganache: Melt the chocolate chips and butter together in a small saucepan over low heat, stirring constantly. Allow the ganache to cool down slightly for 10 minutes or so, then pour it evenly over the peanut butter buttercream layer. Smooth the ganache out with the back of a butter knife, making sure to cover the buttercream and peanuts completely. Chill the brownies in the refrigerator until the toppings are set, 1 1/2 hours or so.
- Remove these delicious guys from the refrigerator. Lift up the ends of the foil liner and place the Fudgy Salty Chocolate Peanut Butter Brownies on a cutting board. Cut into squares.

- Melt the butter and chopped chocolate in a medium saucepan on medium heat, stirring constantly, about 5 minutes. Or melt in a medium microwave safe bowl in 20 second increments, stirring after each, in the microwave. Remove from the heat, pour into a large mixing bowl, and allow to slightly cool for 10 minutes.
- While the chocolate mixture is cooling, make the peanut butter filling. In a medium bowl using a handheld or stand mixer fitted with a paddle attachment, beat the peanut butter, confectioners’ sugar, vanilla, and milk together on medium-high speed until combined. The mixture will be very thick – like a crumbly cookie dough. Set aside.
- Adjust the oven rack to the lower third position and preheat oven to 350°F (177°C). Line the bottom and sides of a 9×9 inch square baking pan with aluminum foil, leaving an overhand on all sides. Set aside.
- Whisk the granulated and brown sugars into the cooled chocolate/butter mixture. Add the eggs, one at a time, whisking until smooth after each addition. Whisk in the vanilla. Gently fold in the flour, cocoa powder, and salt.

- Fudgy Gluten-Free Cream Cheese Brownies. We believe in brownie recipes for everyone! Including folks who can't eat gluten. These fudgy brownies feature chopped semisweet chocolate, unsweetened cocoa powder, and a touch of instant coffee to deepen the chocolate flavor.
- Molten Chocolate Chunk Brownies. If you believe that the best brownies are luscious, gooey, and molten, this recipe from Donna Hay is for you. The batter combines all-purpose flour, cocoa, brown sugar, and superfine sugar with butter, vanilla, eggs—the chopped dark chocolate is added last, just before you transfer it all to the baking pan, so that you're left with pockets of intense chocolate flavor after baking.
- Malted “Forever” Brownies. The secret to these chewy and fudgy brownies? Chilling them in the fridge for the ideal texture. These homemade brownies from Claire Saffitz use Dutch process cocoa powder, semisweet chocolate, milk chocolate, and malted milk powder for that nostalgic flavor.
- Sourdough Rye Brownies. Epi editor Joe Sevier declared these brownies his favorite recipe of the year a few years back. They're ideal for anyone who is dealing with excess sourdough starter.
- Double-Decker Peanut Butter Brownies. These two-layer brownies are endlessly flexible. You can use either almond butter or peanut butter in the bottom layer, then add any crunchy toppings you have in the pantry.
- Sheet-Pan Brownie Thins. You've never met a brownie like this. The batter, made with cocoa instead of melted chocolate, gets spread into a thin layer yielding rich, chewy (not cakey!)
- Fudgy Brownies. Moist and fudgy on the inside with a delicate, thin, crackly top. Sounds like the perfect brownie, right? We agree. These definitely don't need to be served with ice cream, but we won't stop you if that's your move.
- Cocoa Brownies. These super-simple, chocolaty brownies are a favorite of our digital director, and the easy recipe is so simple that you can memorize it.
- Fudgy Double-Chocolate Brownies. Brownies can go two ways—fudgy or cakey—and these rich squares decidedly fall into the fudgy category. Be sure not to overbake them: you're looking for the sides are visibly baked and center to be just set, which will take about 50 minutes.
- Gluten-Free Chocolate-Tahini Brownies. These boldly chocolatey (and completely flourless) brownies get topped with a savory swirl of tahini. Dragging a toothpick through them to make pretty designs is part of the fun.
