ROASTED BRUSSELS SPROUTS WITH HAZELNUT BROWN BUTTER
Roasting brings the best out of many vegetables, and Brussels sprouts are no exception. The browned butter and hazelnuts are wonderful with the roasted sprouts in this recipe, adapted from Eating Well (October/November 2006).

Steps:
- Position rack in bottom third of oven and preheat to 450°F.
- Put butter on a large rimmed baking sheet and roast until the butter is melted, browned and fragrant (4-5 minutes).
- Remove baking sheet from oven and toss Brussels sprouts and hazelnuts with the browned butter; sprinkle with salt and pepper.
- Return to oven and roast for 7 minutes; sprinkle with water, toss, and continue roasting until the sprouts are tender and lightly browned (another 7-9 minutes).
- Note: I used quite a bit more butter and added extra hazelnuts.
ROASTED BRUSSELS SPROUTS WITH LEMON, PANCETTA AND PARMESAN
Steps:
- Preheat the oven to 400 degrees F.
- In a large mixing bowl, toss together the Brussels sprouts, pancetta, olive oil, garlic, and some salt and pepper. Spread the sprouts in an even layer on a sheet tray or roasting pan.
- Place in the oven and roast, stirring once halfway through, until the sprouts are tender and slightly browned, 18 to 20 minutes.
- Remove from the oven and transfer to a serving dish. Toss with the lemon juice and zest. Garnish with shaved Parmesan.
HASHED BRUSSELS SPROUTS WITH LEMON
A shower of lemon zest and black mustard seeds on a fast sauté of hashed brussels sprouts makes a traditional side dish with unexpected, bright flavors. Slice the sprouts a day or so before (a food processor makes it easy) and refrigerate until it's time to prepare them.

- Place lemon juice in a large bowl. Cut bottoms off sprouts, and discard. Working in batches, use a food processor fitted with the slicing blade to cut sprouts into thin slices. (If cutting by hand, halve sprouts lengthwise, and thinly slice them crosswise. The slices toward the stem end should be thinner, to help pieces cook evenly.) As you work, transfer slices into bowl with lemon juice. When all sprouts are sliced, toss them in juice and use your fingers to separate leaves. (Recipe can be prepared to this point and refrigerated, covered, for up to 3 hours.)
- When ready to serve, heat oil and butter over high heat in a skillet large enough to hold all sprouts. When very hot, add sprouts, garlic and seeds, and cook, stirring often, until sprouts are wilted and lightly cooked, but still bright green and crisp, about 4 minutes. Some leaves may brown slightly.
- Add wine and sprinkle with salt and pepper. Cook, stirring, 1 minute more. Turn off heat, add salt and pepper to taste, and more lemon juice if desired. Stir in the lemon zest, reserving a little for top of dish. Transfer to a serving bowl, sprinkle with remaining zest and serve.

LEMON-DIJON ROASTED BRUSSELS SPROUTS
A zesty, quick way to prepare brussels sprouts. Use the juice of a ripe lemon - Meyer lemons are preferable if you can get them. You can add some honey to the sauce if you want a sweeter taste.

- Cut the bottom of each brussel sprout off (less than 1/4") and then slice in half lengthwise.
- Combine all other ingredients in a bowl. Then toss brussels sprouts with sauce in a baking dish - Spread sprouts in a single layer.
- Roast for 25 minutes or until brussel sprouts are slightly browned and tender throughout.
- Serve hot or cold.

- Toast the walnuts in a dry pan (I always use cast iron to toast nuts) until lightly browned and fragrant. Set aside.
- Trim the Brussels sprouts and discard any damaged outside leaves. Use a food processor fitted with the thin slicing blade to shred the sprouts.
- In a large skillet over medium, heat the oil.
- Add the sprouts to the pan.
- Cook, stirring, until crisp tender, about 5 minutes. The pan will seem very crowded in the beginning, but the Brussels sprouts will shrink down quickly.
- Transfer the brussels sprouts to a serving platter and season with salt and pepper, 1 to 2 tablespoons of the lemon juice, the lemon zest and the walnuts.
- Serve immediately.

Steps:
- Trim the hard edge of the stem from the Brussels sprouts, then cut each one into thin slices or shreds; you can do this on a mandoline, with the blade side of a box grater, or with a knife.
- Put half the oil or butter in a large skillet over med-high heat.
- When the oil is hot or the butter is melted, add the sprouts and 1/4 cup water; sprinkle with salt and pepper, turn the heat to medium, and cover.
- Cook, undisturbed, for about 5 minutes, or until nearly tender.
- Meanwhile, heat the remaining oil or melt the remaining butter in a small skillet over medium heat.
- Add the nuts and cook, stirring almost constantly, until fragrant but just barely browned, about 5 minutes.
- When the sprouts are ready, uncover and increase the heat back to med-high.
- Cook, stirring occasionally, until any remaining water evaporates and the sprouts are fully tender, another 5-10 minutes.
- Stir in the vinegar; garnish with the nuts and their butter or oil and the herb; serve.

- Cut brussels sprouts in half. In a large skillet, heat oil over medium heat. Add Brussels sprouts and garlic; cook and stir 5 minutes or until sprouts begin to brown. , Add wine, stirring to loosen browned bits from pan. Stir in broth, lemon juice, thyme, salt and pepper. - In a medium pot with tight-fitting lid, set a steamer basket over 1 1/2 inches water.
- Add Brussels sprouts and steam over high heat until tender, about 10 minutes.
- Melt butter in a large skillet over medium-high heat.
- Add salt& cook, watching carefully, until butter sizzles, browns slightly, and gives off a nutty aroma.
- Squeeze the juice from the lemon halves into the pan and add the zest.
- Stir in the Brussels sprouts and cook, shaking the pan occasionally until warmed through.
