This black bean brownie is the perfect, easy-to-make treat for the gluten-free chocolate lover. Nonstick cooking spray
One 15.5-ounce can low-sodium black beans, drained and rinsed
1 1/4 cups cocoa powder
3/4 cup granulated sugar
3 tablespoons canola oil
1 teaspoon vanilla extract
1/4 teaspoon salt
3 large eggs
1 1/2 cups bittersweet chocolate chips
1/4 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F and move a rack to the middle of the oven. Coat an 8-inch square baking pan with cooking spray.
  • Combine 1/2 cup water and the beans in a blender or food processor and blend until the mixture resembles the consistency of a grainy chocolate pudding. Add the cocoa powder, sugar, oil, vanilla, salt and eggs, and blend until smooth. Scrape out the batter into a large mixing bowl.
  • Use a double boiler to melt 3/4 cup of the chocolate chips or place the chocolate in a small microwave-safe bowl and microwave for 1 minute, stirring halfway through. Stir the melted chocolate into the black bean mixture and add the remaining chocolate chips. Mix until well combined. Pour the batter into the prepared pan and bake until the edges separate from the pan slightly, 35 to 40 minutes.
  • Cool for 10 minutes, then sift the confectioners' sugar over the top and cut into sixteen 2-inch squares to serve.

Steps:

  • Prehear oven to 350 degrees.
  • Lightly grease 8x8 square baking dish.
  • Combine the black beans, eggs, oil, cocoa powder, baking powder, salt, vanilla, and sugar in a blender. Blend until smooth. Pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the mixture or mix into the batter.
  • Bake in a preheated oven until the top is dry and edges start to pull away from the sides of the pan, about 30 minutes.
  • I frost them by putting the remaining bag of chocolate chips on top of the brownies when they come out of the oven. When melted, I spread them around.

1 standard can black beans (drained and rinsed well)
2 eggs (at room temperature)
1/4 cup neutral oil ((like grapeseed, canola or vegetable))
2 teaspoons pure vanilla extract
2 tablespoons strong brewed coffee ((decaf is fine))
3/4 cup unsweetened cocoa powder ((natural or Dutch-processed, your choice))
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
3/4 cup packed light brown sugar
3 ounces semi-sweet or dark chocolate chips (optional)

Steps:

  • Preheat your oven to 325°F. Line an 8-inch square baking pan with parchment paper. Grease the paper with cooking oil spray, and set the pan aside.
  • In a blender or food processor, place the drained and rinsed beans, eggs, oil, vanilla and coffee, and blend or process until smooth.
  • In a large bowl, place the cocoa powder, baking soda, salt and brown sugar, and whisk to combine well, breaking up any lumps in the brown sugar.
  • Create a well in the center of the cocoa powder mixture and add the pureed bean mixture. Mix until well-combined.
  • Add about half of the (optional) chocolate chips to the batter and mix to combine. The mixture will be thickly pourable.
  • Pour the mixture into the prepared baking pan and spread into an even layer. Sprinkle the remaining (optional) chocolate chips even on top of the batter, and press down gently to help the chips adhere.
  • Place the baking pan in the center of the preheated oven. Bake until the top springs back when pressed gently with a finger (about 25 minutes).
  • Continue to bake your brownies until the top is set, and it springs back when pressed gently in the center with your forefinger. And when you shake the pan gently from side to side, it doesn't jiggle at all.
  • For cakier brownies, lower the oven temperature to 300°F and continue to bake for another 3 to 5 minutes or until the center is really stable.
  • Remove the pan from the oven, place it on a wire rack (still in the pan) and allow to cool until no longer hot to the touch.
  • Remove from the pan and slice into squares with a sharp knife. For cleaner slicing, place the bars still in the cooled pan in the freezer for 10 minutes before removing from the pan and slicing.

1/3 cup coconut oil or 1/3 cup shortening
2 cups black beans, rinsed well (canned)
1 cup agave nectar or 1 cup honey
1 tablespoon vanilla extract
2 tablespoons instant espresso powder (if avoiding coffee, sub in 1 teaspoon almond extract)
1/4 teaspoon salt
2/3 cup coconut flour (found in health food section of grocery store) or 2/3 cup almond flour (found in health food section of grocery store)
3 tablespoons flax seed meal
1 1/2 teaspoons baking soda
1 cup walnut pieces (optional) or 1 cup chopped almonds (optional)
1/2 cup unsweetened chocolate chips (optional)

Steps:

  • Preheat the oven to 325*F, and grease a small (8x8 or 9x9) pan. Break up the unsweetened chocolate, and combine it with the fat (butter, coconut oil or shortening). Heat the mixture on low power in the microwave or in a double boiler, stirring often, until it's melted and combined.
  • Meanwhile, put the black beans, agave, vanilla, espresso powder, and salt in a food processor. Add the chocolate mixture, and process 2-3 minutes - until the black beans are obliterated and the mixture is well-combined. Add almond flour (or coconut flour), flax meal, and baking soda. Process two minutes more. Fold in nuts & chocolate chips, if using.
  • Pour the mixture into the greased baking pan. Bake for 40-50 minutes - until the top is set, but be careful about burning the edges. Allow to cool for at least an hour; otherwise, the brownies may be too gooey to slice.
  • Store covered on the counter, or for a firmer brownie, in the refrigerator.

  • Preheat oven to 350°F (180°C). Spray or brush an 8-inch (20 cm) square baking pan with vegetable oil and line bottom and sides with parchment paper, leaving overhang; set aside. Melt butter and chocolate in double boiler, stirring until smooth. Remove from heat. Mix in sugar completely then stir in eggs, one at a time. Set aside.
  • Using a food processor, purée beans until smooth. Stir beans into chocolate mixture until well blended. Sift together flour, cocoa and salt. Stir flour mixture into chocolate mixture; beat vigorously until batter is no longer grainy, about 1 minute.
  • Stir 1/2 cup (125 mL) nuts into batter and transfer to prepared pan. Sprinkle remaining nuts over top. Bake until a toothpick inserted in centre comes out clean but brownies are still slightly fudgy in centre, about 45 minutes. Transfer pan to a wire rack; let cool completely. Transfer brownies to a cutting board using parchment paper. Cut into 12 portions. Store in airtight container.
