½ cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
¾ teaspoon baking powder
½ teaspoon salt
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat brown sugar, butter, eggs, and vanilla extract together in a bowl using an electric mixer until smooth and creamy.
  • Whisk flour, baking powder, and salt together in a separate bowl. Stir flour mixture into butter mixture until dough is fully combined.
  • Pour confectioners' sugar onto a large plate. Spoon dough, 1 1/2 teaspoons per cookie, onto confectioners' sugar and roll to coat. Arrange coated dough on a baking sheet.
  • Bake in the preheated oven until edges are lightly browned, 12 to 14 minutes. Cool cookies on baking pan for 2 minutes before transferring to a wire rack to cool completely.

I found this recipe at www.fooddownunder.com and made these cookies for my family's annual Oktoberfest 2008. They were a big hit. They turned out soft and moist and tasted like a spice cookie with a hint of orange flavor.

1 1/2 cups brown sugar, firmly packed
2/3 cup shortening
2 eggs
2 tablespoons milk
1 tablespoon orange rind, grated
2 teaspoons baking powder
1 teaspoon cinnamon, ground
1/2 teaspoon clove, ground
1/4 teaspoon salt
2 cups flour
1 cup raisins
1/2 cup walnuts, chopped (optional)

Steps:

  • Preheat oven to 350°F.
  • In a medium mixing bowl, cream together sugar and shortening until light and fluffy.
  • Beat in eggs, milk and orange rind.
  • Stir together baking powder, spices, salt and flour; mix into sugar mixture.
  • Stir in raisins and nuts (optional).

They satisfy the craving for deep, dark pools of warm chocolate, sweet pecans and fragrant coconut with only a fraction of the work. To toast the coconut, spread it out on a baking sheet and bake at 350 degrees for 5 to 10 minutes. Take it out of the oven when the edges and some of the coconut in the center are deep golden brown. It's fine if some of the coconut is still pale.

Steps:

  • Heat oven to 350 degrees. In a medium bowl, whisk together the flour, cocoa powder, baking soda and salt. In a large bowl, beat butter, granulated sugar and brown sugar together with an electric mixer on medium speed until fluffy, about 2 minutes. Beat in the egg and vanilla until smooth.
  • Reduce the speed to low and beat in the flour mixture. Add coconut, chocolate and pecans and mix to just combine.

3/4 cup slivered almonds

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and extracts. In another bowl, whisk flour, baking powder, spices and salt; gradually beat into creamed mixture., Divide dough in half. Shape each into a disk; wrap in plastic. 1/3 cup butter, softened
1/3 cup molasses
1/4 cup packed dark brown sugar

Steps:

  • In a medium bowl stir together flour, ginger, apple pie spice, cloves, cardamom, and red pepper; set aside.
  • In a large bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add molasses and brown sugar. Beat until combined. Beat in flour mixture just until combined.
  • Divide dough in half; cover and chill for 1 hour or until easy to handle.
  • Preheat oven to 375°F
  • On a lightly floured surface roll half of the dough at a time to a 1/16 inch thickness. Using a 2-inch round scalloped cutter, cut out dough. Place cutouts 1 inch apart on an ungreased cookie sheet.
