Meet the Cook: Recently, we hosted a group of young people from Canada. Since we wanted to give them a true taste of the South, this was served. They raved about it. In addition to the catfish we raise, my husband and I grow soybeans and corn. We're the parents of four children - ages 16, 13, 7 and 3. -Pauletta Boese, Macon, Mississippi

Number Of Ingredients 11

6 catfish fillets (about 8 ounces each)
1 bottle (16 ounces) Italian salad dressing
1 can (10-3/4 ounces) condensed tomato soup, undiluted
3/4 cup vegetable oil
3/4 cup sugar
1/3 cup vinegar
3/4 teaspoon celery seed
3/4 teaspoon salt
3/4 teaspoon pepper
3/4 teaspoon ground mustard
1/2 teaspoon garlic powder

Steps:

  • Place fillets in a large resealable plastic bag or shallow glass container; cover with salad dressing. Seal bag or cover container; refrigerate for 1 hour, turning occasionally. Drain and discard marinade. , Combine remaining ingredients; mix well. Remove 1 cup for basting. (Refrigerate remaining sauce for another use.) , Grill fillets, covered, over medium-hot heat for 3 minutes on each side. Brush with the basting sauce. Continue grilling for 6-8 minutes or until fish flakes easily with a fork, turning once and basting several times.

2 tablespoons olive oil
1/4 cup lime juice
1 cup white wine
2 tablespoons dry mustard
2 tablespoons chili powder
2 teaspoons fresh ground black pepper
1/2 cup chopped fresh cilantro
1/2 teaspoon salt (optional)
1 lb catfish fillet

Steps:

  • Prepare a grill or preheat the broiler.
  • Mix olive oil, lime juice, wine, mustard, chili powder, pepper, cilantro and salt in a medium bowl.
  • Transfer half of the marinade mixture to another bowl and reserve for basting catfish.
  • Add catfish to the first bowl; marinate for 15 minutes.
  • Drain fillets and discard marinade.
  • Place fillets on an oiled grill rack or broiler pan rack.
  • Grill or broil 4 inches from the heat source, basting with reserved marinade, for about 3 minutes on each side, or until fish flakes easily when tested with a fork.

CORNMEAL-CRUSTED CATFISH

1/2 cup whole milk
2 heaping tablespoons Miss Brown's House Seasoning, recipe follows
10 catfish filets, about 4 ounces each
Vegetable oil, for frying
2 1/2 cups finely ground yellow cornmeal
1/2 cup all-purpose flour
Lemon wedges, for serving
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons sweet paprika
1 1/2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper

Steps:

  • Stir together the milk and 1 heaping tablespoon of the House Seasoning. Pour the milk mixture into a shallow baking dish large enough to hold the filets. Spread the filets in an even layer in the dish, turning to coat each side. Let marinate for about 1 hour in a cool place or the refrigerator.
  • Pour enough oil into a large Dutch oven to come 2 inches up the side. Clip a deep-fry thermometer to the pot and heat over medium-high heat until the thermometer reaches 370 degrees F.
  • Meanwhile, stir together the cornmeal, flour and remaining 1 heaping tablespoon House Seasoning in a paper bag. Working with a few filets at a time, remove them from the marinade, allowing any excess to drip off. Place them in the paper bag and gently turn the bag over several times until the filets are evenly coated with the cornmeal mixture. Remove the filets and place them on a baking sheet while you repeat the process with the remaining filets.
  • Working in batches, fry the filets until golden brown and crisp on the outside and moist and flaky inside, adjusting the heat to maintain temperature, about 5 minutes. Transfer to a clean wire rack set over a rimmed baking sheet to drain. Serve the filets with lemon wedges.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

2 cups soy sauce
2 cups sugar
2 cups chinese rice wine
1/2 cup minced garlic
1/2 cup minced ginger

Steps:

  • To marinade the catfish clean and make three cut into the meaty side of the catfish and place into marinade for 24 hours or more. Remove the catfish and cover with cornstarch inside and out side. Dip the catfish in cornstarch and pat off to remove extra cornstarch. Place into a deep fryer onto golden brown. Drain onto paper towel. Serve with Chinese black bean sauce. Top with diced tomatoes and green onion.

I found this recipe on the internet. It was originally for tuna steaks, but I've found that it is just as delicious for catfish and other white fish fillets, and for shrimp. Original recipe is for 1 pound of fish, but I think this makes enough to marinate a bit more than that. Preparation time includes 20 minutes marinating time.

2 teaspoons orange juice
1 tablespoon sesame oil, plus
1 teaspoon sesame oil

2 teaspoons fresh grated ginger or 1 1/4 teaspoons dried ginger
2 scallions, chopped
1 lb fish or 1 lb shrimp (your choice)

Steps:

  • Combine all ingredients in a shallow bowl or resealable plastic bag.
  • Add fish or shrimp and marinate in the refrigerator for 20 minutes.
  • Broil or grill fish till fish flakes easily with a fork (time required will depend on which fish you use), or shrimp is cooked through.
