ONE-POT BROCCOLI CHEESE BROWN RICE



One-pot broccoli cheese brown rice image

This warm and cheesy one-pot broccoli cheese brown rice is an easy, healthy, delicious side dish with both veggies and whole grains! Kids love it too!

1 tablespoon unsalted butter (or you can sub olive oil)
1/2 cup onion, finely diced
1 clove garlic, minced
1 cup brown rice
1/2 teaspoon salt
2 cups water
1 medium head of broccoli, florets only, finely chopped
2 cups shredded cheddar cheese, plus extra for serving
Salt and black pepper, to taste

Steps:

  • Melt the butter in a medium sauce pan over medium heat. Add onion and saute for 2-3 minutes, until translucent. Add garlic and saute an additional 30 seconds.
  • Add brown rice and stir to coat the rice in the butter and onions for about 1 minute.
  • Add 1/2 teaspoon salt and the water and bring to a simmer. Cover the pan, reduce the heat to low and cook the brown rice for 25 minutes.
  • After 25 minutes, add the chopped broccoli to the pot (right on top of the rice; no need to stir it in yet).
  • Cover and cook for an additional 5 minutes. Then turn off heat and let it sit, covered, for 5-10 minutes.
  • Remove lid and stir broccoli into the rice. Add the cheddar cheese and stir to get everything well mixed and let the cheese melt.
  • Season to taste with salt and pepper and serve with extra cheddar cheese sprinkled on top.

Butter, for greasing the baking dish
6 large Swiss chard leaves (about 1 1/4 pounds)
Salt
2 cups cooked short grain brown rice
1 packed cup baby arugula leaves, chopped
1 cup goat cheese, at room temperature (8 ounces)
1 cup cooked green lentils
1/2 cup chopped fresh mint leaves
1/4 cup extra-virgin olive oil
1 teaspoon kosher salt, plus extra for seasoning
1/2 teaspoon freshly ground black pepper, plus extra for seasoning
2 cloves garlic, minced
One 26-ounce jar marinara or tomato-basil sauce
1/2 cup grated Parmesan (2 ounces)
2 tablespoons olive oil, or unsalted butter diced into 1/4-inch pieces

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Butter a 9 by 13-inch glass baking dish. Set aside. Remove the thick stem from the center of each chard leaf. Cut each leaf in half lengthwise. Trim the ends from the leaves to make each leaf-half about 7 inches long and 5 inches wide. Bring a large pot of salted water to a boil over high heat. Add the chard leaves and cook for 10 seconds. Remove the leaves and rinse with cold water. Drain on paper towels and set aside. For the filling: In a medium bowl, mix together the brown rice, arugula, goat cheese, lentils, mint, olive oil, 1 teaspoon salt, 1/2 teaspoon pepper and garlic. Season with additional salt and pepper. Spoon 1/3 cup of the filling onto the end of each chard leaf and roll up like a jellyroll. Spoon 1 cup marinara sauce on the bottom of the prepared pan. Arrange the rolls, seam-side down, in a single layer on top of the sauce. Spoon the remaining sauce on top and sprinkle with the Parmesan. Drizzle with olive oil or dot the top with butter, if using, and bake until the cheese begins to brown and the rolls are heated through, about 25 minutes. Cool for 5 minutes and serve.

3/4 cup medium-grain brown rice
1 1/2 cups water
4 teaspoons extra virgin olive oil, divided
6 medium shallots, chopped
2 medium carrots, shredded using the large holes of a box grater
1/2 cup toasted pecans
3 ounces goat cheese
1 large egg white
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Bring rice and water to boil in medium saucepan. Reduce heat to low, cover, and simmer undil water is absorbed and the rice is tender, 30 - 50 minute Remove from heat and let stand covered for 10 minutes.
  • Meanwhile, heat 2 teaspoons of olive oil in a large skillet over medium heat. Add shallots and cook until soft, stirring often. Add carrots, reduce heat to low, and cook stirring often until carrots have softened and shallots are lightly browned. Remove from heat.
  • Preheat oven to 400 degrees F.
  • Transfer the cooked vegetables and rice to a large food processor. Add remaining ingredients. Pulse until well blended but still a little coarse. Scrape into a bowl, and with wet hands form the mixture into six 3 inch patties (about 1/2 cup each).
  • Heat remaining 2 teaspoons of oil in large skillet over medium heat. Add patties and cook until well browned, 3 to 4 min per side. Transfer to a baking sheet and bake until an instant read thermometer inserted into the middle registers at least 160 degrees, 10 to 15 minutes.
  • My family likes them best topped with a bit of fruit sauce made from jam (raspberry, apricot, cherry) thinned with a bit of balsamic vinegar and maybe a hint of dijon mustard depending on your tastes. Sounds a bit odd but it is good. But they are also good on their own.

Beets give a dramatic hue to a brown-rice salad, which is sprinkled with goat cheese, pine nuts, and parsley.

1 cup brown basmati, or other brown rice
1 bay leaf
Coarse salt
1/4 cup pine nuts
2 teaspoons olive oil
2 small onions, finely chopped
1 tablespoon minced garlic
4 medium red beets (about 1 pound), without greens, peeled and cut into 1/2-inch cubes
Freshly ground pepper
2 teaspoons freshly grated lemon zest
1/4 cup chopped fresh flat-leaf parsley, plus more for garnish
2 ounces (about 3/4 cup) soft goat cheese, crumbled

Steps:

  • Bring 1 1/2 cups water to a boil in a small saucepan. Stir in rice, bay leaf, and 1/2 teaspoon salt; cover. Reduce heat to low; simmer 30 minutes. Remove from heat; let stand, covered.
  • Meanwhile, toast pine nuts in oil in a 10-inch skillet over medium heat. Cook, stirring, until nuts are just browned, about 5 minutes. Transfer nuts with a slotted spoon to a small bowl.
  • Reduce heat to medium-low; add onions and garlic to skillet. Cook, stirring occasionally, until onions are translucent, about 8 minutes. Add beets and 1 teaspoon salt; season with pepper. Cover; cook, stirring occasionally, until beets are tender, about 25 minutes (if beets stick to skillet, add up to 1/4 cup water).
  • Remove bay leaf from rice. Stir rice, half of pine nuts, the lemon zest, and parsley into beet mixture. Transfer to a platter. Top with remaining pine nuts and the goat cheese. Garnish with parsley. Serve warm or at room temperature.

SQUASH WITH RICE, SAGE & GOAT'S CHEESE



Squash with rice, sage & goat's cheese image

Slow-roasted for maximum flavour this vegetarian main will thrill family and friends

2 large butternut squash
2 tbsp olive oil
1 onion , finely chopped
2 garlic cloves , crushed
100g basmati rice
600ml vegetable stock
25g sundried tomato in oil, drained and chopped
100g firm goat's cheese , roughly chopped
handful fresh sage leaves, chopped

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Cut squash in half lengthways, then scoop out seeds and membranes. Brush insides with a little oil and place in a roasting tin filled to 1cm with water. Roast for 20-30 mins until almost tender when tested with a sharp knife. Scoop out some of the flesh and roughly chop.
  • Meanwhile, heat remaining oil in a pan, then cook onion and garlic for 5 mins until the onion is tender. Stir in the rice and fry for 1 min. Add the vegetable stock and cook for a further 10-12 mins until the rice is tender and the liquid has all been absorbed.
  • Stir in chopped squash flesh, sun-dried tomatoes, goat's cheese, half the sage leaves and seasoning.
  • Stuff the squash with the filling, top with remaining sage leaves and cover with foil.
  • Return to the oven and cook for a further 15 mins until the cheese is melted and all is heated through. Stand for 5 mins before serving with a green salad.

1 teaspoon olive oil
1 large onion, finely chopped
1 cup brown rice
2 cups water or 2 cups broth
1 (10 ounce) box frozen spinach, thawed and drained
4 ounces feta cheese, crumbled
8 kalamata olives, pitted and finely chopped
4 eggs, lightly beaten (or 1 cup egg substitute)

Steps:

  • In a large saucepan, heat the oil over medium heat.
  • Add the onion and sautee for about 5 minutes or until just golden.
  • Stir in the rice and water.
  • Bring to a boil.
  • Cover and reduce the heat to a simmer.
  • Simmer, covered for about 45 minutes, or until all the water is absorbed.
  • Remove from the heat.
  • Preheat oven to 350°F Oil a 8x8 baking dish (ceramic or glass would probably be best).
  • Stir in the spinach, feta and olives into the rice.
  • Stir in the eggs.
  • Pour into the prepared baking dish.
  • Bake, uncovered for 25-30 minutes, or until a knife incerted into the center comes out clean.
  • Let stand for 5 minutes before serving.

From Cook's Illustrated, July 1, 2013 My husband said after I gave him a taste (before the cheese even went in), "I could eat that for a month". The brown rice cooks much faster and stays firm when it's cooked like pasta in a large amount of water so each grain absorbs the water evenly on all sides. " Boiling the rice (versus simmering it) also speeds up cooking because boiling water contains more energy than simmering water. " Water is precious here, so I plan to try making this with leftover cooked rice in the future, just to compare. I recommend their method for the first time you try this recipe.

1 tablespoon vegetable oil
1 lb asparagus, trimmed
salt and pepper
2 1/2 tablespoons extra-virgin olive oil
1 shallot, minced
1 teaspoon grated lemon zest plus 2 tablespoons juice
1 1/2 cups brown rice, cooked according to Brown Rice for Salad
4 ounces goat cheese, crumbled (1 cup)
1/2 cup slivered almonds, toasted
1/4 cup chopped fresh parsley

Steps:

  • Heat vegetable oil in 12-inch skillet over medium-high heat until shimmering. Add half of asparagus with tips pointed in 1 direction and remaining asparagus with tips pointed in opposite direction. Using tongs, arrange spears in even layer (they will not quite fit into single layer); cover and cook until bright green and still crisp, 2 to 5 minutes. Uncover, increase heat to high, season with salt and pepper to taste, and continue to cook until tender and well browned on 1 side, 5 to 7 minutes, using tongs to occasionally move spears from center to edge of pan to ensure all are browned. Transfer to plate and let cool completely. Cut into 1-inch pieces.
  • Whisk olive oil, shallot, lemon zest and juice, 1/2 teaspoon salt, and 1/2 teaspoon pepper together in a large bowl. Transfer cooled rice to the bowl. Add asparagus, all but 2 tablespoons goat cheese, and dressing; toss to combine. Let stand for 10 minutes.
  • Add 1/3 cup almonds and 3 tablespoons parsley; toss to combine. Season with salt and pepper to taste. Sprinkle with remaining almonds, reserved 2 tablespoons goat cheese, and remaining 1 tablespoon parsley; serve.

1 cup brown rice
1 bay leaf
1 1/2 teaspoons salt

4 medium red beets, peeled and cubed
ground pepper
2 teaspoons lemon zest
1/4 cup fresh parsley

Steps:

  • Saute onions and garlic in olive oil until transluscent. Add beets, 1/2 teaspoon salt (or to taste) and pepper (to taste), and cover. Cook until beets are tender.
  • Remove bay leaf from rice. Add the rice, pine nuts, parsley, and zest to the beets. Toss and transfer to serving plate. Top with crumbled goat cheese. Serve warm or at room temperature.
