BROWN BUTTER MASHED POTATOES (MICHAEL SMITH)

Brown Butter Mashed Potatoes (Michael Smith) image

In the words of Michael Smith (one of my favourite Canadian chefs), "Everybody knows how good mashed potatoes are but if you really want to impress your friends and family try them with brown butter. You won't believe how much flavour is locked into a stick of butter but you will believe these are the best-mashed spuds you've ever had!". Enjoy!

Provided by Nif_H

Categories     Mashed Potatoes

Time 35m

Yield 4 serving(s)

Number Of Ingredients 4

2 lbs potatoes, unpeeled (about four large)
1/2 cup salted butter (four ounces)
nutmeg, freshly grated preferred
salt and pepper

Steps:

  • Cut the potatoes into large chunks then steam, boil or microwave them until they're tender. Drain well.
  • Meanwhile, toss the butter into a small saucepot and heat it until it melts over medium heat. Because butter contains as much as twenty percent water it will then begin to steam and foam. Once the water has evaporated the foam will subside and the butter's temperature will begin to rise. The milk fat solids that are one or two percent of the butter will then begin to brown.
  • Continue watching as it begins foaming a second time. Swirl it gently, watching the colour, until it turns golden brown and releases the aroma of toasting nuts.
  • Immediately pour the browned butter into a bowl to stop it from browning further.
  • When the potatoes are tender mash in the butter, nutmeg and seasonings. Taste and season a bit more if needed. Then watch the bowl empty!

SWEET POTATOES WITH BOURBON AND BROWN SUGAR

Sweet Potatoes With Bourbon and Brown Sugar image

These silky mashed sweet potatoes are spiced with cloves, nutmeg and a little black pepper, brightened with lemon zest, and spiked with bourbon (or orange juice, if you'd prefer). Puréeing them in a food processor yields the smoothest, airiest texture, but for something a little more rustic, you could mash them by hand. Whichever you choose, these reheat well, either in a microwave or in a pot over low heat.

Time 4h

Yield 10 to 12 servings

Number Of Ingredients 9

3 1/2 pounds sweet potatoes, pricked with a fork (10 to 12 sweet potatoes)
6 tablespoons unsalted butter
3 to 4 tablespoons dark brown sugar, or to taste
1 1/2 tablespoons bourbon or orange juice
3/4 teaspoon grated lemon zest
3/4 teaspoon kosher salt, plus more to taste
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon black pepper
Large pinch of ground cloves

Steps:

  • Heat oven to 350 degrees. Wrap potatoes in foil, place on a rimmed baking sheet, and bake until tender, about 1 hour. Let rest until cool enough to handle but still warm, then remove the foil and peel off the skins.
  • Add sweet potatoes to a food processor, along with butter, brown sugar, bourbon or juice, lemon zest, salt, nutmeg, pepper and cloves. Purée until smooth. (Or, for a chunkier texture, mash them by hand.) Taste and add salt, sugar or both if you like. Serve while still warm or reheat before serving.

Categories     side-dish

Time 40m

Yield 6 servings

Number Of Ingredients 5

4 tablespoons (1/2 stick) unsalted butter
2 1/2 pounds small white or Yukon gold potatoes, scrubbed but not peeled
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons chopped mixed fresh green herbs, such as parsley, chives, and dill

Steps:

  • Melt the butter in a Dutch oven or large heavy-bottomed pot. Add the whole potatoes, salt, and pepper and toss well. Cover the pot tightly and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a small knife. From time to time, shake the pot without removing the lid to prevent the bottom potatoes from burning. Turn off the heat and allow the potatoes to steam for another 5 minutes. Don't overcook! Toss with the herbs, and serve hot.

NORDIC SUGAR BROWNED POTATOES

Nordic Sugar Browned Potatoes image

Nordic sugar browned potatoes. These potatoes are often served during the Christmas time. Perfect together with a Nordic roasted duct.

Provided by NordicFoodLiving.com

Categories     Side Dish

Time 1h

Number Of Ingredients 4

1 kg small baby potatoes
1 dl sugar
25 g butter
1 dl duck grease ((optional))

Steps:

  • Clean the potatoes but leave the peel on. Boil the potatoes in lightly salted water for about 15 minutes. Don't boil them too soft.
  • Peel the potatoes using a knife. Let the potatoes cool off before you proceed. You can with advantage do this the day before you actually need the browned potatoes.
  • Pour the sugar in an even layer on a cold frying pan. Turn on the stove at medium heat and let the sugar melt without stirring in it. Try to avoid using a frying pan with Teflon coating.
  • When the sugar is melted add the butter to the pan and turn up to high heat. Add the potatoes to the sugar/butter mixture.
  • Fry the potatoes in the sugar/butter mixture for about 5-7 minutes. Turn the potatoes constantly. If you are making these potatoes for your Christmas dinner and you have some extra duck grease - then add 1 dl (1/2 cup) of the grease to the pan with the potatoes. This will give the potatoes a great taste and a nice look.
  • When the sugar is sticking evenly to the potatoes they are done.

BUTTER BROWN POTATOES

Butter Brown Potatoes image

My stepmom's recipe for delicious potatoes that are crunchy/chewy on the outside and soft and fluffy in the middle.

Provided by SuperSpike

Categories     Potato

Time 55m

Yield 4 serving(s)

Number Of Ingredients 4

3 tablespoons butter or 3 tablespoons margarine
4 -6 russet potatoes
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Peel potatoes and cut in half lengthwise (you only need enough that will fit in the bottom of your baking dish- so start with four and see if you need to peel more to fill the dish).
  • Place butter/margarine in a 9x13 baking dish and place in a preheated 350 F degree oven, and let it melt. Remove from oven and add potatoes in coating thoroughly (you may have to use a basting brush for this). Arrange potatoes cut side down, and season with the salt and pepper.
  • Return dish to oven and bake for 45 minutes to an hour (depending on thickness of potatoes), or until the potatoes are golden brown and cooked through. For best results baste the potatoes with the melted butter in the bottom of the dish halfway through the cooking time.
  • Note: this is a really easy side dish if you are cooking other items in the oven and can easily be made when you have to bake something between 325 and 375- just adjust the cooking time.
