CLASSIC BUTTERED GREEN BEANS

Kosher salt
2 pounds green beans, trimmed
3 tablespoons unsalted butter
4 medium shallots, sliced
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Fill a large bowl with ice water; generously salt the water.
  • Add the green beans to the boiling water and cook until bright green and just tender, 4 to 6 minutes. Drain and transfer to the ice water to cool completely. Drain again and transfer to a paper towel-lined baking sheet; pat dry.
  • Meanwhile, melt 2 tablespoons butter in a large wide pot over medium-high heat. Add the shallots, season with salt and cook, stirring, until slightly softened, 3 to 4 minutes.
  • Add the green beans to the pot; season with salt and pepper. Cook, stirring, until hot, 4 to 6 minutes. Remove from the heat and add 1 tablespoon water and the remaining 1 tablespoon butter; stir to coat.

1 1/2 pounds string beans, stems trimmed
2 tablespoons butter, at room temperature
2 tablespoons freshly squeezed lemon juice
Salt and freshly ground pepper

Steps:

  • Fill a large pot with 2-inches of water and place a steamer inside. Bring water to a boil. Add string beans and cover for 5 minutes, or until beans are cooked throughout but still crisp to the bite. If you don't have a steamer, toss beans in a large pot of boiling water for 4 minutes.
  • Thoroughly drain water then return beans to the emptied pot. Let beans sit, uncovered, for 2 minutes so that any water coating them has evaporated. Pour out any accumulated water.
  • Melt butter in a saucepan over medium heat. Cook for 3 minutes, or until melted butter has turned golden brown (this adds a slightly nutty flavor). Remove from heat and add lemon juice and beans and toss thoroughly. Sprinkle with salt and pepper and toss again.

3 tablespoons butter
1 garlic clove, minced
1 lb fresh green beans, trimmed or 16 ounces frozen green beans
1/2 small sweet onion, sliced
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
crushed red pepper flakes (optional)

Steps:

  • Microwave butter in a 2-cup glass measuring cup at HIGH 1 1/2 to 2 minutes or until butter is brownish in color. (Watch it so as not to scorch it).
  • Remove from microwave, and immediately add minced garlic.
  • Place green beans, onion, and 3 T water in a microwave safe bowl.
  • Cover bowl tightly with plastic wrap, folding back a small edge to allow steam to escape.
  • Microwvae on HIGH 4 to 5 minutes or until vegetables are tender; drain.
  • Toss together hot beans and sliced onion, brown butter mixture and salt; sprinkle with freshly ground black pepper and for extra kick -- crushed red pepper flakes.

1/2 tablespoon garlic powder (or less if you are not a big garlic fan like me)
1 tablespoon grated parmesan cheese
1/4 cup breadcrumbs
1/2 tablespoon butter
1/4 cup pine nuts (optional, toasted)

Steps:

  • Place beans and garlic powder and 1/2 tbs of butter a microwave safe dish and nuke by package directions.
  • When done place 1/2 tbs butter in microwave and melt for about 30 seconds.
  • Mix butter and breadcumbs together and sprinkle on green beans.
  • Top with cheese and pine nuts if using.

1/3 cup slivered almonds
3 tablespoons margarine

Steps:

  • Wash and break the beans into 1 1/2 inch pieces into a 2 quart casserole dish.
  • Stir the hot water and salt until salt disolves.
  • Stir the water into the beans, cover and microwave on high 12-17 minutes, until tender crisp, stirring once halfway through.
  • Let stand 2-3 minutes, then drain.
  • Mix all the other ingredients into the beans, stirring until the margarine melts.
