SAUTEED COLLARD GREENS

Sauteed Collard Greens image

This recipe can be prepared in 45 minutes or less. Some people favor sauteed collard greens boiled until they are meltingly tender, while others prefer them to retain some bite.

Yield Serves 4

Number Of Ingredients 5

2 1/2 pounds collard greens
2 garlic cloves
1 tablespoon unsalted butter
1 tablespoon olive oil
1 teaspoon fresh lemon juice, or to taste

Steps:

  • Remove and discard stems and center ribs of collard greens. Cut leaves into 1-inch pieces. In a kettle of boiling water cook collards 15 minutes and drain in a colander, pressing out excess liquid with back of a wooden spoon.
  • Mince garlic. In a 12-inch heavy skillet heat butter and oil over moderately high heat until foam subsides and stir in garlic, collards, and salt and pepper to taste. Sauté collard mixture, stirring, until heated through, about 5 minutes.
  • Drizzle collards with lemon juice and toss well.

SIMPLE AND FRESH COLLARD GREENS

Simple and Fresh Collard Greens image

A lot of people are averse to trying dark leafy greens, believe me, I was too, as they were always described as "bitter". Now that I have had them though I love them, and only eat them like this (not fully cooked to sogginess or in soups). You get a lot of the flavor of the greens themselves and they make a great side dish to a "meat and potatoes" meal. You can substitute any mix of braising/dark leafy greens for the collards.

Provided by The Easy Vegan

Categories     Collard Greens

Time 13m

Yield 1-3 serving(s)

Number Of Ingredients 4

1 cup collard greens, chopped
1/2 garlic clove, minced (optional)
nonstick cooking spray or 1 teaspoon oil
salt and pepper

Steps:

  • Chop your greens into 1 inch strips that are no longer than 4 or 5 inches long (or you'll be getting a mouthful of stringy greens!). (I like to cut down the middle of the leaf and then put one half on top of the other and chop into strips).
  • Rinse your greens (This is an important step! The water that stays on helps these cook to perfection).
  • Heat your skillet to medium and spray or add oil, and garlic if wanted. Then just add your greens (these will shrink down a lot so you can do it in a small pan) and stir just until all greens have just turned bright green, usually not more than 3~ minutes.
  • Turn up to medium-hot and fry for 30 more seconds or until greens are just tender.
  • Toss with salt and pepper to taste (for this amount I usually use about 1/4 teaspoon salt and 1/8 teaspoon pepper). Serve with your favorite entree :)!

COLLARD GREENS

Collard Greens image

How to cook the best Southern Collard Greens with a simple mix of spices, smoked ham hock, brown sugar, and butter! First, make the broth, then add the greens and slowly simmer until the greens are rich with flavor, buttery soft and silky in texture.

Provided by Kelly Anthony

Categories     Side Dish

Time 2h40m

Number Of Ingredients 9

1 pound (1-2) ham hocks
2 teaspoons kosher salt
1 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1 large bunch collard greens (washed thoroughly, )
2 tablespoons light brown sugar
1 tablespoon unsalted butter
2 dashes hot sauce

Steps:

  • Add the ham hocks and spices to a large pot with about 3 quarts of water and bring to a boil. Reduce the heat to maintain a simmer, with the lid slightly ajar, for 1 1/2 hour.
  • Rinse the collard greens clean of any dirt or grit, and use a knife to remove the stems that run down the center. Stack about 6 leaves on top of one another, roll, and slice into 1" strips. Continue until all of the greens are chopped.
  • Add the greens, brown sugar, butter, and hot sauce to the pot and stir until the butter is melted. Allow to simmer for 1 hour, stirring occasionally.
  • Remove the ham hocks with a slotted spoon and set aside until cool enough to handle. Remove and shred any meat still clinging to the bone and return to the pot. Discard of the bone or save for another use. Serve and enjoy!

BROOKLYN-STYLE COLLARD GREENS

Brooklyn-Style Collard Greens image

Provided by Kim Severson

Categories     easy, side dish

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 8

1 smoked turkey wing or 2 medium ham hocks
3 to 4 bunches collard greens (about four pounds)
Salt
1/4 cup apple cider vinegar
3 garlic cloves, smashed
1/4 teaspoon sugar
1 medium onion, sliced
1/2 teaspoon crushed red pepper, more to taste

Steps:

  • Place turkey wing or hocks in a very large pot and add just enough water to cover. Bring to a boil, turn heat to medium and simmer until water is reduced by about half.
  • Meanwhile, plunge greens into a sink full of lightly salted cold water, drain and then rinse well with cold fresh water. Trim or remove biggest stems. Place five or six leaves on top of one another and roll like a cigar, lengthwise. Cut collards into inch-wide ribbons, then, keeping collards rolled, cut ribbons in half.
  • Turn heat under pot to high. Add vinegar, one teaspoon salt and the garlic, then add as many greens as pot will hold. Wait until greens cook down, then add remaining greens. Turn heat to a simmer, cover and cook until greens for 30 minutes, stirring occasionally.
  • Add sugar, onion and crushed red pepper, cover again and continue to simmer until tender, another 15 to 30 minutes; time will vary depending on toughness of greens. Serve.

COLLARD GREENS - IT'S GOOD FOR YOU!

Collard Greens - It's Good for You! image

Collards are among the oldest members of the cabbage family! Vegetarians can skip the bacon and use smoke flavoring and use a veggie broth in place of the chicken broth. I find this is one green that you do have to cook a while. The flavor is between cabbage and kale. They are low in calories. A rich source of fiber, vitamin C and calcium, and protects you against cancer.
