ZA'ATAR TOFU
Steps:
- Use the tofu press to press the tofu for 30 minutes to an hour.
- Preheat the oven to 350 F.
- When the tofu is pressing, make the marinade. To a baking dish or pan, add the olive oil, lemon juice, garlic, za'atar, salt and pepper to taste. Whisk to combine.
- After the tofu is done pressing, slice into 8 equal pieces.
- Coat both sides of the tofu in the marinade. Marinate the tofu for at least an hour.
- After the tofu is done marinating, transfer tofu slices to a cookie sheet lined with parchment paper.
- Place the marinated tofu slices on the cookie sheet. Bake for 45 minutes, flipping the tofu halfway through the cooking time.
- Serve and enjoy!

got this from fatfree.com. Pretty healthy. NOTE: I added brown sugar (to taste) because i think they're pretty salty even if i use Low sodium soy sauce. I also add a pinch of garlic powder. I baked 350 around 40min instead of broiling.

I'm such a fan of 'sammiches.' This one is really easy and my uber-picky roommmate even said it smelled good. I made it on regular bread 'cause there wasn't anything else on hand, but it would be great on a baguette.

- Lay both slices of bread on baking sheet.
- Sprinkle one slice of bread with some of the cheese, lay tofu over it, sprinkle with more cheese.

- Salt and pepper if desired.

This is a very simple yet tasty side dish. It is a Semi-cooked hot vegetable that gives a totally different taste and texture to cooked zucchini. I created this dish years ago because I did not care for the taste and texture of soft cooked zucchini. This has been a family favorite ever since. I am giving the ingredients for one serving and you can simply multiply it for the number you wish to make.

- Wash off zucchini, cut off ends and split lengthwise.
- Lay the split pieces of zucchini cut side up in a lightly greased baking dish.
- Pour over the butter or oil.
- Sprinkle the cheese evenly over the cut edge.
- Sprinkle with spices.
- Broil just until the zucchini slices get a lovely light brown on the top.
- Remove from the broiler, it will be cooked ala-dente' with about half of the crunch still in it.
- It is easiest to eat with a sharp knife handy to cut into small chunks for each bite -- but make sure you get some of the spices and cheese with each bite -- hm-m-m-m.

- Cut the tofu or tempeh into small bite size pieces and put in the pie plate.
