I was looking for something different to do with tuna and I came across this in one of my pillsbury cookbooks. These are easy to prepare and taste so good.

Number Of Ingredients 8

1 (6 1/8 ounce) can tuna, drained
1/4 cup finely chopped onion
1/4 cup mayonnaise or 1/4 cup salad dressing
2 tablespoons chopped seeded cucumbers
1/4 teaspoon dried dill weed
2 English muffins, split toasted
4 slices tomatoes
4 slices American cheese or 4 slices cheddar cheese

Steps:

  • In medium bowl combine tuna, onion, mayo, cuke and dill; mix well.
  • Spread each muffin half with 1/4 mixture; top with tomato slice Place in broiler pan or ungreased cookie sheet.
  • Broil 4 to 6 inches from heat 4 to 5 minutes or until tomato is hot; top each with cheese slice; broil for an additional 1 to 2 minutes or until cheese is melted.

STUFFED CUCUMBERS

1 seedless European cucumber, chilled & peeled
1/2 cup crumbled feta cheese
2 tablespoons mayonnaise
8 drops Worcestershire sauce
1 tablespoon minced parsley

Steps:

  • Cut the cucumber in half lengthwise and with a teaspoon scrape out the centers containing the seeds.
  • In a small bowl, blend the feta, mayonnaise and Worcestershire sauce into a smooth mixture. Fill the centers of cucumbers with the cheese mixture. Sprinkle the cucumbers with parsley and chill them for at least 20 minutes. Before serving, slice the cucumbers crosswise into bite-sized pieces.

BROILED ROAST BEEF SANDWICHES ON GARLIC BUNS



Broiled Roast Beef Sandwiches on Garlic Buns image

This may be made using sliced turkey or chicken in place of roast beef, I prefer the beef better --- leftover roast beef, thinly sliced steak or deli roast beef will work for this, if you don't have a toaster oven to toast the sliced buns you can just toast them under the broiler firstly.

2 large crusty sandwich buns (sliced in half)
soft butter (use a much as desired)
garlic powder (to taste)
8 tablespoons mayonnaise
1 lb thinly sliced cooked beef, divided
deli mustard (to taste)
thinly sliced red onion
2 firm plum tomatoes
salt and black pepper
8 slices mozzarella cheese (can use more)

Steps:

  • Set oven to broiler heat (set oven rack to second-highest position).
  • Spread the softened butter on each slice of bread, then sprinkle liberally with garlic powder and a little salt.
  • Place in a toaster oven until toasted.
  • After the bread has been toasted spread liberally with mayonnaise.
  • Divide the roast beef over each bun then spread mustard over the beef.
  • Top beef with onion slices, then with tomato slices, sprinkle the tomato with salt and black pepper.
  • Top each sandwich with slices of mozzeralla cheese.
  • Place under the broil for about 3 minutes or until the is bubbly (watch closely these brown quickly!).

This is a very unusual combination but it is delicious. I've been making this for at least 35 years. Even several of my grandkids love it. Be sure to butter the buns.

2 cups sauerkraut (drained)
6 1/2 ounces canned tuna, drained
1/2 cup mayonnaise
1/4 cup green pepper, diced
2 tablespoons onions, chopped
3 tablespoons sweet pickle relish
1/4 teaspoon celery salt
6 hamburger buns, split and buttered

Steps:

  • Combine kraut, tuna, mayonnaise green pepper, onion, relish and celery salt. Mix well and chill. Fill hamberger buns with kraut-tuna salad.

Found on the Robert's Food Center website -- this wonderfully simple recipe gives a fabulous flavor to Ahi. Broil, or use your bbq grill. Ahi is easy to prepare, and use all the various grades with this marinade for a quick and tasty main dish. Prep time does not include 1/2 hour chill time.

1 1/3 lbs tuna steaks
1/4 cup soy sauce
1 tablespoon honey
1 tablespoon peeled finely chopped fresh ginger (or grated)
2 tablespoons vegetable oil

Steps:

  • Using a zip-lock plastic bag, combine all ingredients except fish; shake to combine.
  • Place tuna steaks in bag with marinade; chill for at least 30 minutes.
  • Broil or grill until done-- brushing with marinade (medium-well done is 4 minutes per side for 3/4 to 1 inch steaks).
