2 medium onions, sliced
2 cloves garlic, minced
1 tablespoon brown sugar
1/8 teaspoon salt
1 lb boneless beef top sirloin steak, trimmed of fat
1/4 teaspoon pepper
1 tablespoon balsamic vinegar
1 tablespoon snipped fresh parsley

Steps:

  • In a medium skillet melt butter over medium-low heat.
  • Add onions and garlic.
  • Cook, covered, for 13-15 minutes or until onions are tender.
  • Add brown sugar and salt.
  • Cook, uncovered, over medium-high heat 4-5 minutes or until onions are golden brown, stirring constantly.
  • Meanwhile, cut meat into 4 serving-size pieces.
  • Sprinkle pepper on both sides of each meat piece.
  • Place on the unheated rack of a boiler pan.
  • Broil 3 inches from the heat to desired doneness, turning once.
  • (Allow 10-12 minutes for medium rare.) Stir vinegar into onions.
  • Spoon onion mixture over steak.
  • Sprinkle with parsley.

1 1/2 teaspoons dried onion flakes
1 teaspoon garlic powder, divided
3/4 teaspoon dried rosemary, divided
3/4 teaspoon salt, divided
1/4 teaspoon pepper, plus
1/8 teaspoon pepper, divided
1 1/2 lbs boneless sirloin steaks, about 1 1/2 inches thick
2 tablespoons butter, divided
1 medium red onion, cut into 6 wedges
1 yellow onion, cut into 6 wedges
1 shallot, chopped
1/2 cup red wine
1/4 cup chicken broth
mashed potatoes, boxed or homemade

Steps:

  • Position broiler rack so that top of meat in pan will be 4" from the heat source; OR Cook on grill, preheat broiler or grill.
  • Combine oil, minced onion, 3/4 teaspoon Garlic, 1/2 teaspoon rosemary, 1/2 teaspoon salt and 1/4 teaspoon pepper, brush over one side of steak.
  • Place steak on grill seasoned side up, Broil 12 to 15 minutes with-out turning for medium-rare or cook on grill to your liking.
  • In large skillet melt 1 tablespoon butter over medium-high heat.
  • add onions and shallot.
  • Cover; cook, stirring occasionally, until softened 5 minutes.
  • Uncover; cook, stirring occasionally, until lightly browned, 5 minutes.
  • Stir in remaining garlic powder, rosemary, salt and pepper.
  • Add wine and broth; cook until liquid is reduced by half, 5 to 10 minutes.
  • Stir in remaining butter into onion sauce; serve over Steak and Mashed Potatoes.

3 pound roast cut of top sirloin steak, boneless
3 tablespoons olive oil, divided
1 teaspoon salt
1 teaspoon ground black pepper
4 large yellow onions, peeled and thinly sliced
3 large cloves garlic, finely chopped
1 small bunch flat parsley leaves, roughly chopped, about 1/4 cup
1 tablespoon extra virgin olive oil
2 tablespoons lemon juice
8 portobello mushroom caps
2 tablespoons flour
1/2 cup dry red wine
1 cup beef stock or broth

Steps:

  • Preheat oven to 425 degrees.
  • Rub steak with 1 tablespoon olive oil. Season beef with salt and pepper. In a large casserole on the stovetop, sear beef on both sides. To a heavy roasting pan add onions and 2 tablespoons olive oil and roast in oven for 20 minutes, to begin caramelizing onions. Place charred roast on top of onions and roast until internal temperature is 135 degrees (for medium rare), or higher, about 45 minutes. In final 15 minutes (internal temperature of beef should be approximately 120 degrees), mix garlic, parsley, extra virgin olive oil, and lemon juice. Brush mix on steak as roasting marinade and brush on mushroom caps. Add mushroom caps to roasting pan while the beef cooks for final 15 minutes.
  • Remove roast, place on carving board, and allow to rest. Place onions and mushroom caps on platter.
  • Pour excess fat from roasting pan, leaving 1 tablespoon. Add flour and cook on stovetop for 2 minutes. Add wine and reduce by half. Add broth and cook for 2 minutes.
  • Carve roast. Serve with onions, mushrooms and gravy.

1 1-pound boneless sirloin steak, all visible fat discarded
Cooking spray

Steps:

  • In a shallow glass dish, stir together the wine, 1 tablespoon brown sugar, and 1 teaspoon chili garlic sauce or paste until the sugar is dissolved. Add the beef, turning to coat. Cover and refrigerate for 8 hours, turning occasionally.
  • Preheat the oven to 400°F. Lightly spray a large shallow metal baking pan with cooking spray.
  • Spread the onions in the pan. Drizzle with the oil. Stir to coat. Spread the onions in a single layer.
  • Roast for 30 minutes, or until the onions begin to brown on the edges, stirring halfway through. Transfer to a small bowl.
  • Preheat the broiler. Lightly spray the broiler pan with cooking spray.
  • Stir 1/8 teaspoon salt, remaining 1 teaspoon chili garlic sauce or paste, and remaining 1 tablespoon brown sugar into the onions. Cover to keep warm.
  • Drain the beef, discarding the marinade. Sprinkle with the remaining 1/4 teaspoon salt. Transfer to the broiler pan.
  • Broil the beef about 6 inches from the heat for 3 minutes on each side, or to the desired doneness. Transfer to a cutting board and let stand for 5 minutes. Slice the beef. Serve topped with the onion mixture.

The inspiration for these ultra-macho nachos comes from a diner in Sante Fe, New Mexico, where I was served an enormous platter of charcoal grilled steak blanketed with fire-roasted green chiles and sharp cheese. Now I make the same dish at home, cooking up enough steak for leftovers to enjoy as nachos the next day.

4 to 5 ounces corn tortilla chips
8 ounces shredded Monterey Jack (about 3 cups)
1/2 cup canned roasted green chilies, or 2 roasted and peeled green chiles, diced
1 recipe Chile-Rubbed Sirloin, diced, recipe follows
3 ounces shredded 4 or 6 Italian blend cheese (about 1 cup)
Avocado Crema, recipe follows
Finely sliced lettuce and chopped onion, for garnish
1/2 teaspoon salt
1/4 teaspoon ground red chile
1/4 teaspoon ground cumin
1/4 teaspoon granulated garlic
1/4 teaspoon ground cinnamon
1/4 teaspoon finely ground black pepper
3/4 pound sirloin steak
1 teaspoon olive oil
1 teaspoon soy sauce (recommended: Kikkoman)
1 ripe avocado, peeled and pit removed
1/2 cup buttermilk
3 tablespoons lime juice (from about 1 1/2 limes)
1/4 cup sour cream
1/2 teaspoon salt

Steps:

  • Preheat the oven to 475 degrees F or preheat the broiler, with the rack positioned about 7 inches from the top of the oven or the heat source.
  • Assemble the nachos: Arrange the chips on a 12 by 18-inch baking sheet or ovenproof platter. Top each chip with a layer of Monterey Jack, followed in order by the chiles, sirloin, and cheese blend.
  • Bake the nachos for 5 to 7 minutes, or broil, until the cheese is soft and bubbly.
  • Before serving, squeeze streaks of Avocado Crema and Chipotle Mayonnaise, to taste, over the nachos, if using, and garnish with lettuce and onions.
  • In a small bowl, combine the salt, chile, cumin, garlic, cinnamon, and pepper. Rub the steak all over with the mix. Set aside at room temperature for 15 minutes.
  • Heat a grill or the broiler until very hot. Rub the steak all over with the olive oil and soy sauce. Grill or broil the steak very close to the heat, about 3 minutes per side, until medium rare. Set aside for 10 minutes before slicing or dicing.
  • Puree all the ingredients in a food processor or blender. Funnel into a squeeze bottle. The mixture should be thin enough to streak easily. If not, add a few drips more lime juice or buttermilk. Plug the top of the nozzle with a toothpick and chill until read to use. The mixture will keep for 2 days refrigerated.

4 red onions
2 tablespoons olive oil
4 tablespoons chopped fresh parsley
1 tablespoon chopped fresh thyme

2 tablespoons horseradish sauce (or mustard sauce)
1 tablespoon plain flour
150 ml port wine
300 ml stock
1 teaspoon Worcestershire sauce

  • Preheat oven to 180°C.
  • Wipe the meat and season all over witrh salt and pepper.

  • Heat the oil in a roasting pan, addd the onions, turning them until they glisten.

  • Mix the herbs together and set aside.
  • Roast the beef for 45minutes then remove from the oven and spread the horseradish over the fat of the meat, sprinkle 3/4 of the herbs over the meat and the rest over the onions.
  • Roast a further 40-45 minutes for medium.This depends on how plump the meat is. The plumper it is the more time it wil require.
  • Transfer the cooked meat and onions to a plate and cover with foil to keep warm.
  • Reheat the pan juices in the tin( do this on the hob), stir in the flour and cook 1 minute.Stir in the port, then stock.
  • Bring to the boil, stirring until thickened, add the worchertershire sauce.Simmer 5 minutes.
  • Serve with roast potatoes.

4 sirloin steaks, 1/4 inch thick, 6-7 oz each
2 large onions
1 cup flour
2 cups oil, plus 2 tsp oil
2 teaspoons butter
1 teaspoon Hungarian paprika
1 teaspoon Dijon mustard
1 cup whipping cream, or
1 cup light cream
1 cup beef broth
salt
pepper

Steps:

  • In a heavy sauce pan heat 2 cups of vegetable oil to @ 350°F Cut the onions in thin slices, separate into rings.
  • On a plate mix the flour with paprika, dip the lightly moistened onion rings into the flour mixture, coat well and quickly fry them in batches. Remove to a paper towel lined plate, season with salt, set aside.
  • Lightly pound the steaks between 2 sheets of parchment paper, using the flat side of the mallet only. Nick the edges 3-4 times to prevent them from curling up.
  • Season with salt and pepper and coat them on both side with the flour - paprika mixture.
  • In another large frying pan heat 2 tsp of oil and 2 tsp of Butter und quickly fry the steaks, ca. 1 - 2 minutes on each side, add more oil if needed. Remove them from the pan, cover and keep them warm.
  • Add 1/3 of the previously fried onions to the pan, add the mustard and deglaze with some of the beef stock, correct seasonings. Reduce the pan juices to half, scraping off the browned bits at the bottom, add the cream and simmer for a minute or two.
  • At the very end, add the beef steaks to the sauce to heat through, don't let the sauce boil anymore. Add more broth if the gravy gets too thick.
  • Serve with spaetzle or potatoes and top with the remaining onion rings.

2 lbs sirloin steaks
2 teaspoons fresh coarse ground black pepper
salt
3 tablespoons olive oil
2 onions, cut into wedges
1 green bell pepper, seeded and sliced
1 red bell pepper, seeded and sliced
1 yellow bell pepper, seeded and sliced
2 cloves garlic, chopped
1 teaspoon dried basil
1 tablespoon balsamic vinegar

Steps:

  • Rub steak with ground pepper and season with 1/4 teaspoon salt.
  • Heat a large, heavy skillet (I use my old cast iron skillet) over medium-high heat; when hot, add 1 tablespoon of the oil, then add the steak.
  • Cook about 7 minutes per side for medium-rare; remove from skillet and place on a serving platter, cover loosely with foil and keep warm.
  • Pour off any fat from skillet and add remaining 2 tablespoons of the oil; add onions to the skillet, saute about 4 minutes, or until soft and slightly browned; add sliced peppers, garlic and basil; saute about 10 minutes, or until the peppers are soft.
  • Add balsamic vinegar and give it a few stirs.
  • Slice the steak into 1/2-inch thick, diagonal slices; dump the onion/pepper mixture on top of the steak slices and dig in.

Steps:

  • In a shallow dish, whisk together the vinegar, garlic, Parmesan, lemon juice, paprika, sugar, House Seasoning, and oregano. Add the beef cubes and marinate, covered, for 1 hour.
  • Light the grill or preheat the broiler. In a bowl, add the melted butter and bouillon and stir until the bouillon is completely dissolved.
  • Skewer the beef and onion cubes separately. Brush the onions with the butter mixture. Put the skewers on the grill, or if broiling, transfer the skewers to a foil-lined baking sheet and broil. Turn once, until the onion is tender and the beef is cooked to the desired doneness, 3 to 5 minutes per side. Arrange on a serving platter and serve.
  • Note: House seasoning is 1/4 cup salt (I use sea salt), 1 tbsp black pepper and 1 tbsp garlic powder.
