Time 35m

Yield 10 serving(s)

Number Of Ingredients 7

2 lbs large shrimp, shell-on
12 garlic cloves, peeled
2 serrano chilies, stems and seeds removed, and minced
3 1/2 tablespoons fresh cilantro, minced
1 1/2 tablespoons freshly squeezed lime juice
8 tablespoons hot melted butter
salt & freshly ground black pepper

Steps:

  • To prepare the shrimp, with a very sharp paring knife, split each shrimp down the back through the shell.

  • Arrange the split shrimp in a single layer on a sheet pan.
  • Cover and refrigerate until ready.
  • Place the garlic in a small saucepot with enough water to cover them.
  • Bring the water to a boil, and then lower to a simmer until the garlic cloves are soft (about 20 minutes).
  • Drain the water and refresh the garlic cloves with cold water.

Time 28m

Yield 24 shrimp

Number Of Ingredients 13

24 medium uncooked shrimp, peeled and deveined (about 1 pound)
2 tablespoons vegetable oil
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
4 tablespoons white sesame seeds, toasted
1/2 cup mayonnaise
1 tablespoon soy sauce
1 tablespoon fresh lime juice
1/4 teaspoon powdered cayenne pepper
1 teaspoon light sesame oil
2 scallions, cleaned and chopped
2 tablespoons chopped cilantro
24 small metal skewers (if using toothpicks, soak them in water for 30 minutes before using so that they don't burn in the o) or 24 small wooden toothpicks (if using toothpicks, soak them in water for 30 minutes before using so that they don't burn in the o)

Steps:

  • Preheat oven to 400°F.
  • Toss the shrimp with the vegetable oil, salt, and pepper. Dip one side of each shrimp in the toasted sesame seeds. Skewer with a toothpick. I actually threaded several on a metal skewer and dipped one side of that group of shrimp in the toasted sesame seeds at the same time. Much easier and you don't lose seeds while threading since you're doing that part last.
  • When the oven is heated, place the skewered shrimp (sesame seeds on top) on a foil-lined baking sheet and bake 6 to 10 minutes (depending on your oven), until the shrimp are firm to the touch.
  • For the dipping sauce, put the remaining ingredients into bowl and mix until blended. Season to taste with salt and pepper. Serve with the warm shrimp.

HONEY SESAME SHRIMP "ON THE BARBIE"

Honey Sesame Shrimp

Another recipe posted for ZWT Australia from "The Barbecue! Bible" by Steven Raichlen and here is the description: "Shrimp "on the barbie," aka grill, is Australia's most famous culinary export. Even if you know nothing else about Down Under cooking, you're surely aware of how much Australians love grilling-especially seafood. If the truth be told, shrimp is something of a misnomer, as most Australians would say "prawns." The Chinese roots of this dish are obvious-a legacy of the huge influx of Asian immigrants to Australia in the 1970s and 80s. I love the way the sweetness of the honey and five-spice powder play off the nuttiness of the sesame seeds and sesame oil and the brininess of the shrimp and soy sauce."

Time 30m

Yield 4 serving(s)

Number Of Ingredients 11

1 1/2 lbs jumbo shrimp, peeled and deveined
5 tablespoons sesame oil (dark)
3 tablespoons rice wine, Sake or 3 tablespoons dry sherry
3 tablespoons soy sauce
1 1/2 tablespoons honey
1 1/2 tablespoons sesame seeds
1 tablespoon Thai sweet chili sauce (see note)
1/2 teaspoon Chinese five spice powder
2 garlic cloves, crushed with the side of a cleaver
2 slices fresh ginger (1/4 inch thick)
2 scallions, trimmed, white part flattened with the side of a cleaver, green part finely chopped and set aside fo

Steps:

  • Rinse the shrimp under cold running water, then drain and blot dry with paper towels. Set aside while you prepare the marinade.
  • Combine three tablespoons of the sesame oil, the rice wine, soy sauce, honey, sesame seeds, chile sauce (if using), and five-spice powder in a large bowl and whisk to blend. Stir in the garlic, ginger, scallions, and shrimp to coat, then cover and let marinate in the refrigerator, for 30 to 60 minutes.
  • Preheat the grill to high.
  • Using a slotted spoon, remove the shrimp from the marinade to a bowl and toss with the remaining 2 tablespoons sesame oil. Pour the marinade into a saucepan; remove and discard the garlic, ginger, and scallion whites, using the slotted spoon. Bring the marinade to a boil over medium-high heat and cook, uncovered, to a thick, syrupy glaze, about 3 minutes. Remove from heat and set aside.
  • When ready to cook, oil the grate. Arrange the shrimp on the hot grate and grill, turning with tongs, until nicely browned on the outside and firm and pink inside, about 2 minutes per side. Brush the shrimp with the glaze as they cook.
  • Transfer the shrimp to serving plates and or a platter and sprinkle with the scallion greens. Serve immediately.
  • Note: Sweet chile sauce is the Thai version of ketchup. One good brand to look for is Siriacha. If not available, simply omit.
