3 halibut fillets, 1/2 pound each
2 tablespoons grapeseed oil
1 meyer lemon, juiced
3 cloves garlic, minced
Sea salt, to taste
1 mango, peeled, pitted and diced
1/2 ripe avocado, diced
3 stalks green onion, sliced
1 head cauliflower, grated
1/2 teaspoon ground cumin

Steps:

  • Prepare the mango and avocado relish by adding all ingredients to a bowl. Mix to combine and set aside. Prepare the halibut by sprinkling each fillet with coarse sea salt. Whisk together the grapeseed oil, lemon juice and garlic. Pour the mixture over the three fillets, allowing them to marinate at least 10 minutes. Put your oven on the high broil setting. Place the fish in an oiled or foil-lined baking dish or pan. Put the fish in the oven on the rack second to the top (be careful not to get the fish too close to the top of the oven, as there's fire danger in doing so!). Broil for 10 to 12 minutes (if you like your fish slightly raw in the center, broil for 8 minutes). While the fish is baking, grate the head of cauliflower (not including the green stems) using a box grater. In a large skillet, heat the oil over medium and sauté the garlic about 2 minutes. Add the grated cauliflower, ground cumin and salt. Stir constantly with a wooden spoon until cauliflower bits are softened, about 8 to 10 minutes. Serve the halibut with a generous portion of the mango relish with cauliflower rice on the side!

This sweet and spicy salsa goes beautifully with a firm, white fish like halibut. Make sure your mango is very ripe. Mangos are a good source of potassium, vitamin A and beta-carotene. You would think that such a sweet fruit would be high in calories, but because of all the water in a juicy mango, the caloric content is relatively low - about 135 calories in a whole mango, according to nutritionist and author Jonny Bowden.

1 large, ripe mango
2 serrano chiles, minced
1 tablespoon finely chopped cilantro
1 tablespoon finely chopped fresh mint
1/4 cup finely diced jicama
2 tablespoons freshly squeezed lime juice
Salt
freshly ground pepper to taste
4 6-ounce Pacific halibut fillets or steaks
2 tablespoons extra virgin olive oil
2 limes, cut in wedges, for serving

Steps:

  • Finely dice the mango. Cut down the broad side of the mango, slightly off center, from the stem end to the tip end. The knife should scrape against the side of the pit. Repeat on the other side, cutting as close to the pit as possible. Cut the flesh from the sides of the pit, following the curve of the pit. Lay each half on your cutting surface, and score with the tip of your knife in a cross-hatch pattern, down to the skin but not through it. Turn the mango half inside out, and slice the cubes away from the skin. Then cut the cubes into very small dice.
  • Toss the mango in a bowl with the chiles, cilantro, mint, jicama and lime juice. Season with salt if desired. Cover the bowl, and allow to sit for an hour while you prepare your grill.
  • Heat a medium-hot grill (or heat an indoor griddle or grill pan). Season the halibut fillets or steaks with salt and pepper, and toss with the olive oil in a bowl. Place the fish directly over the coals, and grill for four to five minutes per side, depending on the thickness. The fish should be opaque all the way through, and you should be able to pull it apart with a fork.
  • Remove the fish to a plate or a platter. Serve with the salsa spooned partially over the fish and partially on the side. Alternately, spoon the salsa onto plates and set the fish on top. Garnish with lime wedges and serve.

1/4 cup butter, softened
1 tablespoon finely chopped shallot
1 tablespoon finely chopped fresh dill
1 tablespoon finely chopped fresh parsley
1 teaspoon Dijon mustard
1 teaspoon lemon juice, freshly squeezed
2 large garlic cloves, finely minced
1/2 teaspoon salt
16 ounces fresh halibut steaks, 3/4 inch thick
1 tablespoon butter
1 tablespoon extra virgin olive oil

Steps:

  • In a small mixing bowl, combine 1/4 cup butter, shallots, dill weed, parsley, mustard, lemon juice, garlic and salt; mix well.
  • Rinse halibut steaks in cold water and pat dry on paper towels.
  • In a 8 inch x 8 inch oven proof casserole dish, add 1 tablespoon of butter and 1 tablespoon of olive oil. Place under the broiler on HIGH heat for about 2 minutes or until the butter has melted.
  • Place the halibut steaks in the casserole dish.
  • Spread one half the lemon/herb mixture equally over each steak.
  • Place under the broiler on HIGH heat and broil for 6 minutes.
  • Turn halibut steaks over and spread the remaining lemon/herb mixture evenly over the steaks.
  • Continue to broil on HIGH heat for another 5 to 6 minutes or until fish flakes easily with a fork. Do not overcook the fish.
  • Serve with cooked basmati brown rice.
  • You may also use finely chopped chives or green onions instead of the shallots.

2 lbs halibut fillets
1 (4 ounce) can chipotle peppers
1/4 cup honey
salt and pepper
3 cups diced fresh mango
2 teaspoons minced ginger
3 teaspoons minced garlic
1 pinch salt
2 teaspoons of fresh mint
1/4 cup white wine vinegar
3/4 cup sugar
3/4 cup diced sweet onion
2 small diced fresh chili peppers
2 teaspoons honey

Steps:

  • Make mango chutney.
  • Sprinkle the ginger, garlic, mint and salt over the mango; set aside.
  • Combine the vinegar and sugar in a saucepan and bring to boil.
  • Add the mango, onion, chili peppers, and honey and simmer for 30 minutes.
  • Serve directly on the halibut or on the side.
  • Season halibut fillet with salt and pepper:.
  • Puree chipotle peppers with honey.
  • Place the halibut on a hot grill.
  • Brush the chipotle glaze on the halibut after five minutes grill time.
  • Total grill time should be about 10 to 12 minutes.

This is a halibut, mango, and papaya salad recipe that is fresh and light, especially for the spring season which will soon be upon us. Doesn't take a lot of prep time with exception of marinating the fish. Can be done ahead and kept in the fridge for at least 2 days. Salad dressing as you will see is very easy and is so delicious and light. Add fresh garlic bread or breadsticks and a glass of wine (Chardonnay, Sauvignon Blanc). The combination of the citrus dressing and the fruit and dill proves to be a delicious marriage of fruit and herbs. Enjoy.

½ cup extra-virgin olive oil
1 cup orange juice
½ medium lemon, juiced

Steps:

  • Pat halibut dry and season with salt and pepper. Combine oil, orange juice, lemon juice, honey, Italian seasoning, garlic, and red pepper flakes in a glass or ceramic bowl for marinade with a whisk to make sure it is well blended. Add halibut and let marinate for 45 minutes to 1 hour.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove fish from marinade and shake off excess. Discard the remaining marinade.
  • Cook halibut on the preheated grill horizontally for 5 to 7 minutes. Flip and cook vertically for perfect grill marks until it springs back with a mild resistance and flakes easily with a fork, 5 to 7 minutes more; be careful not to overcook. Remove from grill and sprinkle with fresh dill.
  • Combine salad greens, mushrooms, mango, papaya, onion, bacon, and feta cheese in a bowl.
  • Whisk salad dressing, orange juice, and honey for dressing together in another bowl. Pour over salad and toss to coat. Serve with grilled halibut.

fresh lemon juice for rubbing the avocado

1/8 teaspoon ground cumin
a pinch of cayenne, or to taste
2 tablespoons sour cream
two 1/2-pound halibut steaks, seasoned with salt and pepper
olive oil for brushing the fish

Steps:

  • Halve the avocado and reserve one half, rubbed with the lemon juice. In a blender puree the remaining avocado half, peeled, the lime juice, 2 tablespoons of the water, the scallion, the cumin, the cayenne, the sour cream, and salt and pepper to taste, scraping down the sides of the blender, until the sauce is smooth. Transfer the sauce to a small bowl and stir in enough additional water to thin the sauce to the desired consistency.
  • Grill the halibut, brushed generously on both sides with the oil, in an oiled ridged grill pan or on an oiled rack set about 6 inches over glowing coals for 4 to 5 minutes on each side, or until it just flakes. Arrange the steaks on 2 plates, nap them with the sauce, and garnish each serving with the reserved avocado, peeled and sliced thin, fanning the slices, and the lime slices. Sprinkle the plates with the tomato.

4 halibut steaks
1/2 cup soy sauce
4 -5 tablespoons sherry wine
1 large garlic clove
1/2 teaspoon ground ginger
2 teaspoons honey

Steps:

  • Combine the above marinade ingredients in a non metallic container.
  • Marinate halibut steaks in this mixture for an hour, turning the halibut steaks after 30 minutes to ensure they are marinated equally on both sides.
  • Remove from the marinade and let excess marinade drain off of steaks.
  • Place the halibut steaks on a broiler pan, making sure they are not touching each other.
  • Place the pan about 4 inches underneath the broiler element.
  • Broil about 10 minutes per inch of thickness measured at the thickest part, or until the fish flakes when tested with a fork.
  • This dish may be garnished with lemon wedges and a small parsley sprig.
